I got this from a friend that was on Atkins. I have diabetic family members and decided to take it to a family dinner! Wow, those that weren't diabetic couldn't tell.

3 (8 ounce) boxes cream cheese, room temp
1 cup sour cream
2 teaspoons vanilla
3 eggs
20 (1 g) packets Splenda sugar substitute or 1 1/4 cups Splenda granular

Steps:

  • Mix cream cheese in mixer until smooth.
  • Add sour cream.
  • Add 1 egg at a time.
  • Add remaining ingredients and mix until smooth.
  • Spray a pie pan with PAM and pour in cheesecake mixture. Place cheesecake in a larger pan with enough water so that the water goes up 1/3 to 1/2 up the side of your cheesecake.
  • Bake 38-45 minutes at 375 degrees.
  • If you are concerned about fat and calories you may use lite cream cheese or a combination of regular and lite.
  • Note though that doing so will add carbs to the recipe and it may effect the texture.

¾ cup graham cracker crumbs
3 tablespoons butter, melted
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 (8 ounce) package cream cheese, softened
1 ½ cups milk
1 (1 ounce) package cheesecake flavor sugar-free instant pudding mix
2 pints fresh strawberries, sliced

Steps:

  • Mix together graham cracker crumbs, melted butter, cinnamon, and nutmeg in a bowl.
  • Press the mixture into an 8-inch pie dish. Refrigerate while making filling.
  • Beat cream cheese in a mixing bowl with an electric mixer on medium speed until softened. reduce the speed to low, and gradually beat in milk, a little at a time (mixture will be watery). Use a rubber spatula to scrape cream cheese from the sides of the bowl, if necessary.
  • Beat in pudding mix until the filling is thick and smooth.
  • Spoon half of the cream cheese filling into the bottom of the graham cracker crust.
  • Spread half the strawberries over the filling.
  • Repeat cheesecake layer and strawberry layer.
  • Chill pie in refrigerator until set and cold, at least 1 hour.

24 ounces cream cheese, softened
1/4 teaspoon stevia, stevioside
2 eggs
15 ounces pumpkin
2/3 cup evaporated milk
2 tablespoons cornstarch
1 1/4 tablespoons cinnamon
1/2 teaspoon nutmeg
8 ounces whole pecans, ground
1 1/2 tablespoons butter, softened
1 tablespoon flour (optional)

Steps:

  • ground pecans, add butter and flour, spread on bottom of 9 inch springfoam pan.
  • beat cream cheese, stevia until fluffy add pumpkin and milk. taste,,, add more stevia if needed. add eggs, cornstarch and spices.pour mixture on crust in pan.
  • bake at 350 for 55-60 min until center is set. cool and refrigerate overnight.
