This recipe is naturally sweetened with fruit and an optional drizzle of agave syrup meaning less added sugar is required in this banana bread

Categories     Afternoon tea, Dessert

Time 40m

Yield Cuts into 6 - 8 slices

Number Of Ingredients 10

125g self-raising wholemeal flour
½ tsp baking powder
2 tsp ground cinnamon
75g sultana
50g butter, melted
2 tsp vanilla essence
1 egg
1 tbsp milk
3 ripe bananas, mashed
drizzle agave syrup, to serve (optional)

Steps:

  • Grown ups: Preheat the oven to 180C/ 160C fan/ gas mark 4. Grease and line a 450g loaf/1lb tin with baking parchment.
  • Children: Weigh the flour, baking powder, cinnamon and sultanas into a bowl and mix with a wooden spoon. Then weigh the butter, vanilla essence, egg, milk and mashed bananas and put into another bowl or jug and mix with a small balloon whisk or fork. Pour the 'wet' banana mixture into the 'dry' flour mixture and combine thoroughly with a wooden spoon. Weighing needs to be very accurate when baking so help older children to measure carefully. Younger children can also get involved by spooning or pouring into the scales with adult supervision. Younger children can also beat the egg with a fork and mash the banana with a potato masher.
  • Grown ups: Pour the cake mixture into the prepared tin and bake for 30 - 40 mins or until a skewer inserted in the middle comes out clean. Remove from the oven, allow to cool in the tin for 10 mins then turn out.
  • Children: Drizzle with agave syrup if using.

Fat-Free, Sugar-Free & Cholesterol-Free Banana Bread! image

This banana bread is VERY good and VERY healthy! It does tend to come out a bit dense for my own personal taste, but considering all the substitutions I've made to the conventional recipes, it's fantastic! Enjoy!

Time 1h5m

Yield 1 9x5 loaf, 12 serving(s)

Number Of Ingredients 10

2 cups unbleached all-purpose flour, plus more for dusting the pan
1 1/4 cups walnuts, chopped coarse
1 cup sugar substitute, like splenda (if you want it non SF than add 3/4 cup sugar instead of Splenda)
3/4 teaspoon baking soda
1/2 teaspoon salt
3 bananas, very ripe, soft, darkly speckled large bananas, mashed well (about 1 1/2 cups)
1 cup plain Greek yogurt
2 large eggs, beaten lightly
3/4 cup unsalted butter, melted and cooled
1 teaspoon vanilla extract

Steps:

  • Adjust an oven rack to the lower-middle position and heat the oven to 350 degrees F (175 degrees C) degrees. Grease the bottom and sides of a 9 by 5-inch loaf pan; dust with flour, tapping out the excess.
  • Spread the walnuts on a baking sheet and toast until fragrant, 5 to 10 minutes. Set aside to cool.
  • Whisk the flour, sugar, baking soda, salt, and walnuts together in a large bowl; set aside.
  • Mix the mashed bananas, yogurt, eggs, butter, and vanilla with a wooden spoon in a medium bowl. Lightly fold the banana mixture into the dry ingredients with a rubber spatula until just combined and the batter looks thick and chunky. Scrape the batter into the prepared loaf pan.
  • Bake until the loaf is golden brown and a toothpick inserted in the center comes out clean, about 55 minutes. Cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature. (The bread can be wrapped with plastic wrap and stored at room temperature for up to 3 days.).

QUINOA BANANA BREAD, REGULAR OR SUGAR FREE

Quinoa Banana Bread, Regular or Sugar Free image

I have not heard of Quinoa before, but after I discover it, I fell in love with this unique grain. High in protein and fiber and it is very tasty! This recipe uses regular sugar or you can make it sugar free, by using xylitol. If you have not heard of xylitol (Xylitol is not only a safe, natural sweetener without the bad side-effects of sugar and artificial substitutes, it's also good for your teeth, stabilizes insulin and hormone levels, and promotes good health. I get my xylitol at Ebay or your favorite health store. The quinoa makes a wonderful moist bread, loads of flavor. I find the best bananas to use are the nice and ripe ones! IMPORTANT NOTICE: Please do not give your pets anything made with xylitol. It is good for people, but toxic for animals.
