¾ cups sugar
2 eggs
½ cup cooking oil
1 cup sweet potato, mashed or pureed
1 ½ cups flour
½ tsp salt
1 tsp baking powder
1 tsp baking soda
1 ½ tsp cinnamon
1 tsp allspice
¼ tsp cloves
1 tsp ground ginger
½ tsp ground cardamom
1 cup golden raisins, optional

Steps:

  • In a large bowl, mix together the sugar, eggs cooking oil and sweet potato.
  • Sift together the flour, salt, baking powder and all of the spices and fold into sweet potato mixture.
  • Finally fold in the raisins, if you are using them.
  • Spoon batter into 12 greased or paper lined muffin tins.
  • Bake at 350 degrees F for about 20-25 minutes or until a toothpick inserted in the centre comes out clean.

Number Of Ingredients 12

2 cups self-rising flour
2 cups sugar
2 teaspoons ground cinnamon
1 egg
2 cups cold mashed sweet potatoes (without added butter or milk)
1 cup canola oil
GLAZE:
1 cup confectioners' sugar
2 tablespoons plus 1-1/2 teaspoons 2% milk
1-1/2 teaspoons butter, melted
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375°. In a small bowl, combine flour, sugar and cinnamon. In another bowl, whisk egg, sweet potatoes and oil. Stir into dry ingredients just until moistened., Fill greased muffin cups two-thirds full. Bake 15-18 minutes or until a toothpick inserted in muffin comes out clean. Cool 5 minutes before removing from pans to wire racks. , In a small bowl, combine glaze ingredients; drizzle over warm muffins. Freeze option: Freeze unglazed cooled muffins in resealable plastic freezer bags. To use, thaw at room temperature or, if desired, microwave each muffin on high until heated through, 20-30 seconds. Glaze.

1 ¾ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
½ teaspoon ground nutmeg
⅓ cup vegetable oil
¾ cup white sugar
1 egg
¾ cup milk
¾ cup white sugar
1 teaspoon ground cinnamon
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups.
  • In a large bowl, combine flour, baking powder, salt and nutmeg. In a separate bowl, beat together oil, 3/4 cup sugar, egg and milk. Stir egg mixture into flour mixture, just until moistened. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into a muffin comes out clean.
  • While muffins are baking, mix together 3/4 cup white sugar and 1 teaspoon cinnamon. While muffins are still hot, dip tops in melted butter and then in cinnamon sugar mixture.

MUFFINS
1 3/4 c all purpose flour
1 1/2 tsp baking powder
1/2 tsp brown nutmeg
1/2 tsp salt
1/3 c vegetable oil
3/4 c sugar
1 egg
3/4 c milk
CINNAMON SUGAR MIXTURE
3/4 c sugar
1 tsp cinnamon
1/2 c melted butter

Steps:

  • 1. Preheat oven to 350 degrees. Line muffin pan with liners. Mix flour, baking powder, salt, and nutmeg into a bowl. Make a well in the center of the bowl. In a different bowl, mix wet ingredients, oil, sugar, egg, milk. Mix well.
  • 2. Pour wet ingredients into the well and combine with the dry ingredients.
  • 3. Fill muffins and bake for 20 - 25 minutes. Let muffins cool. Combine cinnamon and sugar together in a small bowl. Melt butter and place in separate bowl. Dip each muffin in the melted butter, then dip in cinnamon sugar.

1 cup sugar
1 pound can yams, drained
2 large eggs
1 ¼ cups milk
1 teaspoon vanilla extract
2 ½ cups flour
1 ½ tablespoons baking powder
¾ teaspoon nutmeg
½ teaspoon salt
1 teaspoon cinnamon
½ cup chopped walnuts or pecans, if desired
¼ cup sugar mixed with 1 tablespoon ground cinnamon for topping

Steps:

  • In a mixing bowl, cream butter and sugar until light and fluffy. Beat in yams. Add eggs one at a time, beating well after each addition. Mix in milk and vanilla extract. Add flour, baking powder, nutmeg, salt and cinnamon. Mix until incorporated; do not over-mix. Stir in nuts. Grease 24 2½ inch muffin tins. Fill three quarters full. Sprinkle sugar-cinnamon mixture over the tops. Bake at 400 degrees for 20 to 25 minutes or until lightly browned and a toothpick inserted in center comes out clean. Turn out onto rack and cool.

3 tablespoons aquafaba (chickpea water)
½ cup white sugar
½ teaspoon ground cinnamon
½ cup vegan margarine (such as Earth Balance®), melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a muffin tin with cooking spray.
  • Mix flour, baking powder, pumpkin pie spice, and salt together in a small bowl.
  • Whisk sugar, avocado oil, and aquafaba together in a bowl until sugar is dissolved. Pour in flour mixture; mix until evenly incorporated.
  • Spoon batter into the prepared tin, filling each cup halfway full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes.
  • Combine sugar and cinnamon in a shallow dish to make the topping. Remove hot muffins from the tin and dip in melted margarine; roll in cinnamon sugar to coat. Serve warm.
