- In a large bowl, mix together the sugar, eggs cooking oil and sweet potato.
- Sift together the flour, salt, baking powder and all of the spices and fold into sweet potato mixture.
- Finally fold in the raisins, if you are using them.
- Spoon batter into 12 greased or paper lined muffin tins.
- Bake at 350 degrees F for about 20-25 minutes or until a toothpick inserted in the centre comes out clean.

CINNAMON SWEET POTATO MUFFINS
Steps:
- Preheat oven to 375°. In a small bowl, combine flour, sugar and cinnamon. In another bowl, whisk egg, sweet potatoes and oil. Stir into dry ingredients just until moistened., Fill greased muffin cups two-thirds full. Bake 15-18 minutes or until a toothpick inserted in muffin comes out clean. Cool 5 minutes before removing from pans to wire racks. , In a small bowl, combine glaze ingredients; drizzle over warm muffins. Freeze option: Freeze unglazed cooled muffins in resealable plastic freezer bags. To use, thaw at room temperature or, if desired, microwave each muffin on high until heated through, 20-30 seconds. Glaze.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups.
- In a large bowl, combine flour, baking powder, salt and nutmeg. In a separate bowl, beat together oil, 3/4 cup sugar, egg and milk. Stir egg mixture into flour mixture, just until moistened. Spoon batter into prepared muffin cups.
- Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into a muffin comes out clean.
- While muffins are baking, mix together 3/4 cup white sugar and 1 teaspoon cinnamon. While muffins are still hot, dip tops in melted butter and then in cinnamon sugar mixture.

- 1. Preheat oven to 350 degrees. Line muffin pan with liners. Mix flour, baking powder, salt, and nutmeg into a bowl. Make a well in the center of the bowl. In a different bowl, mix wet ingredients, oil, sugar, egg, milk. Mix well.
- 2. Pour wet ingredients into the well and combine with the dry ingredients.
- 3. Fill muffins and bake for 20 - 25 minutes. Let muffins cool. Combine cinnamon and sugar together in a small bowl. Melt butter and place in separate bowl. Dip each muffin in the melted butter, then dip in cinnamon sugar.
SUGAR AND SPICE YAM MUFFINS
Steps:
- In a mixing bowl, cream butter and sugar until light and fluffy. Beat in yams. Add eggs one at a time, beating well after each addition. Mix in milk and vanilla extract. Add flour, baking powder, nutmeg, salt and cinnamon. Mix until incorporated; do not over-mix. Stir in nuts. Grease 24 2½ inch muffin tins. Fill three quarters full. Sprinkle sugar-cinnamon mixture over the tops. Bake at 400 degrees for 20 to 25 minutes or until lightly browned and a toothpick inserted in center comes out clean. Turn out onto rack and cool.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a muffin tin with cooking spray.
- Mix flour, baking powder, pumpkin pie spice, and salt together in a small bowl.
- Whisk sugar, avocado oil, and aquafaba together in a bowl until sugar is dissolved. Pour in flour mixture; mix until evenly incorporated.
