Rich shortbread gets a delicious twist with apple-spice seasonings and icing.

3/4 cup firmly packed brown sugar
1 cup butter, softened
1 teaspoon vanilla
1 egg
2 3/4 cups Gold Medal™ all-purpose flour
3/4 teaspoon apple pie spice
1 1/2 cups powdered sugar
1/2 teaspoon apple pie spice
1 to 2 tablespoons apple juice

Steps:

  • In large bowl, combine brown sugar, butter, vanilla and egg; beat until light and fluffy. Add flour and 3/4 teaspoon apple pie spice; mix well. Divide dough in half; shape each half into flattened disk. Wrap each in plastic wrap; refrigerate about 1 hour for easier handling.
  • Heat oven to 350°F. On lightly floured surface, roll half of dough at a time to 12x6-inch rectangle. Keep remaining half of dough refrigerated. Cut dough rectangle lengthwise in half; cut each half into 1-inch-wide sticks. Place sticks 1/2 inch apart on ungreased cookie sheets.
  • Bake at 350°F. for 12 to 15 minutes or until edges are light golden brown. Immediately remove from cookie sheets. Cool 10 minutes or until completely cooled.
  • Meanwhile, in small bowl, blend all glaze ingredients until smooth, adding enough apple juice for desired glaze consistency. Spread glaze on tops of cookies. Let stand until glaze is set before storing.

6 tablespoons white sugar
1 teaspoon ground cinnamon
1 ½ teaspoons ground nutmeg
¼ teaspoon ground cloves
2 cups softened butter

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper.
  • Combine flour, sugar, cinnamon, nutmeg, and cloves in a bowl. Cut in butter until the mixture resembles small crumbs. Pack the crumbs into a ball, then knead by hand until smooth.

1 ¼ cups all-purpose flour
3 tablespoons brown sugar
1 tablespoon white sugar
½ teaspoon ground cinnamon
½ cup butter

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a medium bowl, stir together the flour, brown sugar, white sugar and cinnamon. Cut in the butter until the mixture is like fine crumbs. Pack the crumbs into a ball, then knead by hand until smooth. On a lightly floured surface, roll the dough out into an 8 inch circle. Place the circle on a baking sheet, and slice into 16 wedges. 1 cup (2 sticks) I Can't Believe It's Not Butter!® spread
3/4 cup packed brown sugar
2 cups Gold Medal™ all-purpose flour
1/3 cup semisweet chocolate chips, melted

Steps:

  • Heat oven to 325°F. Grease 9-inch round pan.
  • Beat spread and brown sugar in large bowl with electric mixer on medium speed 5 minutes. Beat in flour on low speed or with spoon. Spread evenly in pan. Partially cut surface into 16 wedges.
  • Bake 40 to 45 minutes or until golden. Cool in pan 20 minutes. Remove from pan to wire rack. Cool completely, about 30 minutes.
  • Pour melted chocolate into small plastic food-storage bag. Twist bag to seal; cut tiny corner off bag and drizzle chocolate over shortbread. Cut into 16 wedges.
