These are my favorite cut-out cookies. Sweet and spicy, they're a wonderful Christmas treat. I've been making them every Christmas for almost 15 years now. You can make the dough up to 3 days ahead of time.

1 ¾ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 pinch ground cloves
½ cup softened butter
1 cup packed brown sugar
1 egg
½ teaspoon vanilla extract

Steps:

  • Mix the flour, the baking powder, cinnamon, nutmeg, and cloves together in a bowl.
  • Cream the butter and brown sugar together with an electric mixer in a large bowl until smooth; beat the egg and vanilla extract into the butter mixture. Add the flour mixture in small amount to the butter mixture, beating each addition until blended. Form the dough into a ball, wrap with plastic wrap, and refrigerate at least 1 hour or up to 3 days.
  • Preheat an oven to 350 degrees F (175 degrees C). Grease baking sheets.
  • Roll the dough out on a floured work surface with a rolling pin to about 1/8-inch thickness. Cut with 2-inch cookie cutters. Arrange the cut cookies onto the prepared baking sheets.
  • Bake in the preheated oven until the edges begin to brown, 10 to 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

3/4 cup butter, softened
2 cups sugar
2 eggs, beaten
1/2 cup molasses
4 cups flour
1 1/2 teaspoons ground cinnamon

1 tablespoon ground ginger
2 teaspoons baking soda
1/2 teaspoon salt

Steps:

  • Cream butter and sugar.
  • Add eggs and molasses and beat well.
  • Mix all dry ingredients in separate bowl.
  • Add dry mix to wet 1/2 cup at a time, mixing well after each addition to make a stiff dough.
  • Roll dough into teaspoon size balls and roll in more granulated sugar.
  • Bake on greased baking sheet at 350 for 8-10 minutes.

These have been a favorite since I was a little girl. I remember eating these in front of the TV watching "Romper room". The dough is quite soft, so I always put it in the fridge between baking batches for easier rolling.

3/4 cup Crisco shortening
1 cup sugar
1 large egg
1/4 cup molasses
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
3/4 teaspoon ground cloves
3/4 teaspoon ground ginger
1 teaspoon cinnamon
additional sugar, to roll cookies in

Steps:

  • Cream Crisco, sugar, egg, and molasses till fluffy.
  • Add flour, baking soda, baking powder, salt, and spices.
  • Form into small balls using a teaspoon.
  • Roll into sugar.
  • Place on ungreased cookies sheets.
  • Bake at 350° for 10-12 minutes. Watch carefully towards end so they do not burn.

1 (10 ounce) package cinnamon swirl coffee cake mix
1 egg
½ cup shortening
1 teaspoon ground cloves
1 teaspoon ground nutmeg
½ teaspoon ground black pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Remove the cinnamon packet from the mix and reserve 1/3 cup for later.
  • In a large bowl, stir together the cake mix, the rest of the packet of cinnamon, cloves, nutmeg and black pepper. Mix in the egg and shortening until a dough forms. Form dough into 1 inch balls, roll the balls in the reserved cinnamon packet and place them 2 inches apart onto ungreased cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, until the tops are cracked and puffy. Let cookies set on cookie sheets until completely cool.

1 cup sugar
3/4 cup butter, softened (not melted)
1 egg
1/4 cup molasses
2 cups flour
2 teaspoons baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg

1/4 teaspoon clove
1/4 teaspoon salt

Steps:

  • Cream sugar and softened butter together, then add the egg and molasses.
  • Combine sifted flour, baking soda, salt and all of the spices together with fork or whisk in a separate mixing bowl.
  • Combine dry ingredients into the wet ingredients, roll into balls and then roll in sugar.

1 tablespoon hot water
1/2 cup butter or margarine, softened
1/4 cup shortening
1 cup granulated sugar

2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1 teaspoon instant espresso coffee granules
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup granulated sugar
2 teaspoons instant espresso coffee granules

Steps:

  • In large bowl, dissolve 1 1/2 tablespoons espresso in hot water. Beat in butter, shortening, 1 cup granulated sugar, the brown sugar and egg with electric mixer on medium speed until fluffy. Beat in flour, baking powder, 1 teaspoon espresso, the cinnamon and salt on low speed.
  • Divide dough in half. Shape each half into 10-inch-long roll. Wrap each roll with plastic wrap; refrigerate 30 minutes.
  • On large plate, mix coating ingredients. Roll each roll of dough in coating (reserve any remaining coating). Rewrap in plastic wrap; refrigerate 2 hours longer.
  • Heat oven to 375°F. Cut each roll into 1/4-inch slices. On ungreased cookie sheet, place slices about 2 inches apart. Sprinkle with remaining coating.
  • Bake 8 to 10 minutes or until edges are light brown. Cool slightly; remove from cookie sheet. Cool completely.

1/8 teaspoon salt
1/2 cup butter or margarine, softened
1/2 cup vegetable shortening solid
1/2 cup sugar
1/2 cup powdered sugar
1 egg large
1 teaspoon vanilla extract

Steps:

  • Stir together flour, cinnamon, ginger, cloves, allspice, and salt set aside.Beat butter, shortening, sugar, and powdered sugar in a large bowl with electric mixer until fluffy. Beat in egg and vanilla. On low speed, gradually beat in flour mixture. Divide dough in half. Cover and chill 1 hour or until firm enough to handle.Preheat oven to 350°. Roll half of the dough at a time to 1/4 -inch thickness on a lightly floured surface. Cut with floured cutter. Place cookies 2 inches apart on ungreased baking sheets.Bake 12 to 15 minutes until lightly browned. Cool cookies on wire racks. Decorate with colored icing if desired. Store loosely covered if decorated otherwise store in an airtight container.
