- In a Dutch oven or large saucepan, simmer ham hock in water until tender, 1-1/2 hours. Cool; remove meat from the bone and return to pan. (Discard bone and broth or save for another use.) Add the tomatoes, beans, peas, corn, green pepper, onion, ketchup and seasonings. Simmer, uncovered, for 45 minutes. Add okra; simmer, uncovered, until tender, 15 minutes. Discard bay leaf before serving. Garnish with dill and chives, if desired.

FARMERS' MARKET GRILLED SUCCOTASH
Grilling your farmers market bounty brings out sweet and smoky layers of flavor. Grill up a big batch, then have ready-to-go veggies on hand all week long.

Steps:
- Heat gas or charcoal grill. Place corn, zucchini, onion and tomatoes in grill basket (grill "wok") or directly on grill rack over medium heat. Cover grill; cook 10 to 15 minutes, turning occasionally, until slightly charred and crisp-tender. Remove vegetables from grill; cool.
- In 10-inch skillet, cook bacon until crisp; drain on paper towels. Reserve 1 tablespoon of the drippings in skillet. Crumble bacon; set aside.
- Cut corn off cobs. Chop zucchini and onion. Cut tomatoes in half. Add butter and garlic to bacon drippings in skillet. Cook and stir over medium-high heat 1 minute. Stir in grilled vegetables and bacon. Cook 3 to 4 minutes, stirring occasionally, until hot. Sprinkle with basil and thyme. Season with salt and pepper to taste.

PIGGY SUCCOTASH
Steps:
- Cook the bacon in a 10-inch heavy skillet over moderate heat, stirring frequently until crisp, about 5 minutes. Using a slotted spoon, transfer the bacon to paper towels to drain, leaving the fat in the pan. Add the ham and cook until golden brown, about 5 minutes. Add the corn, lima beans and the white parts of the scallions and cook, stirring, about 2 minutes. Add 1/2 cup water, scraping up the brown bits on the bottom of the pan. Simmer until the vegetables are tender and most of the water has reduced, 5 to 8 minutes. Stir in the bacon, scallion greens and season with salt and pepper.
- BYOC: Try adding some red or orange peppers for some extra color.
SUCCOTASH WITH SMOKED HAM AND HERBS
Herbs provide an aromatic flavor to this traditional side dish. Enjoy succotash made using Green baby lima beans, corn and ham.

Steps:
- Cook lima beans in microwave as directed on package; drain.
- Meanwhile, in 12-inch skillet, melt butter over medium-high heat. Cook ham in butter 3 minutes, stirring frequently, until lightly browned. Add bell pepper and shallots; cook 3 minutes or just until tender.
- Add lima beans, corn, sugar, salt and pepper. Cook 6 minutes, stirring frequently. Add cream; cook 10 minutes, stirring occasionally, until vegetables are tender and cream is slightly thickened. Stir in chives, parsley and tarragon.
