I found this recipe when I was looking for this recipe or one close to it. I tried this at Subway and really liked it. Subway always uses light Mayo. In this recipe the salt and pepper are optional. Use more or less mayo to suit your own taste and the same with the fruits. I like to add a few more fruits. There is no cook time unless you are cooking your chicken for this recipe. I use left over or canned.

3 cups red apples, chopped small
1/2 cup sliced celery, diced small
4 cups cooked chicken, cut into small cubes
1/4 cup golden raisin (to your taste)
1/4 cup dried cranberries (to your taste)
3/4 cup mayonnaise (or enough to taste)
1/2 teaspoon celery salt
salt and pepper
lettuce, shredded
2 (6 inch) rolls
sliced tomatoes (optional)
sliced red onion (optional)
cheese slice, your choice (optional)

Steps:

  • In a medium bowl toss apples, celery, raisins, cranberries and chicken.
  • Season with celery salt, salt and pepper to taste and mix.
  • Stir in mayonnaise.
  • Slice a 6 inch roll in half.
  • Add 2 heaping tablespoons chicken salad to bottom slice of roll and spread.
  • Add your toppings.

8 ounces rotini pasta, cooked drained and cooled
1 cup grape tomatoes, cut in halves
1 cup diced cucumber
1/2 cup diced red bell pepper
2 cups shredded iceberg lettuce, packed
1/2 cup chopped red onion
1/2 cup sliced black olives
4 ounces diced cooked ham
4 ounces diced hard salami
4 ounces cubed provolone cheese
1/3 cup extra virgin olive oil
1/2 cup red wine vinegar
1/4-1/2 teaspoon salt
1/4-1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/2 teaspoon sugar
1 teaspoon oregano

Steps:

  • Make sure your pasta has cooled completely.
  • In a large bowl, toss together pasta, tomatoes, cucumber, red bell pepper, shredded lettuce, chopped onion, sliced black olives, ham, salami and provolone.
  • In a jar or crouet, pour all the dressing ingredients. Shake very very well.
  • Pour over the salad and toss to coat evenly.
  • Serve.
  • If not eating right away, give another good mix/toss before serving.
  • Best if eaten the same day as prepared.

2 cups red apples, chopped small
1/3 cup celery, diced small
2 cups cooked chicken, cut into small cubes
1 -2 tablespoon golden raisin
1 -2 tablespoon dried cranberries
1/2 cup mayonnaise (use more or less to suit your taste)
salt and pepper
squeeze lemon juice
lettuce, shredded
6 inches whole wheat sub rolls
3 -6 tomatoes, slices (depending on size of tomato)
2 -3 red onion rings
6 -8 pickles, slices
2 cheese, sliced of your choice

Steps:

  • In a medium bowl toss chopped apples with squeeze of lemon juice.
  • Add celery, raisins, cranberries and chicken. Season with salt and pepper to taste and mix. Fold in mayonnaise.
  • Split a whole wheat sub roll horizonally without cutting all the way through the roll. Add about 1/3-1/2 cup shredded lettuce. Add veggies of choice, and finish with desire amount of chicken salad. You will have enough chicken salad for two 6 inch subs.

3 cups bread cubes
2 tablespoons extra-virgin olive oil
2 1/3 cups giardiniera (Italian pickled vegetables), drained and chopped, plus 2 tablespoons brine from the jar
3/4 cup fresh basil leaves, torn
1/2 cup sliced pitted Cerignola olives (black and green)
1/2 cup chopped jarred Peppadew peppers
1 large head romaine lettuce, shredded
2 ounces sliced mortadella, cut into thin strips
2 ounces sliced prosciutto, cut into thin strips
1 ounce sliced capicola, cut into thin strips
1 ounce sliced Genoa salami or hot soppressata, cut into thin strips
1 2-ounce piece aged provolone, shaved with a vegetable peeler

Steps:

  • Preheat the oven to 400 degrees F. Toss the bread cubes and 1 tablespoon olive oil in a bowl. Spread on a rimmed baking sheet and bake, tossing occasionally, until crisp, 8 to 10 minutes. Let cool.
  • Meanwhile, toss the giardiniera in a large bowl with the basil, olives, peppers, romaine, mortadella, prosciutto, capicola, salami, provolone and the remaining 1 tablespoon olive oil. Drizzle with the giardiniera brine and toss. Let sit about 20 minutes to let the flavors combine.

Kosher salt and freshly ground black pepper
2 large ripe tomatoes (about 1 pound)
8 slices good sourdough bread
1 clove garlic
1 tablespoon extra-virgin olive oil
A handful of fresh basil leaves
1/4 pound thinly sliced deli ham
1/4 pound thinly sliced salami

Steps:

  • Heat a stovetop grill pan or a broiler to high heat.
  • Slice the cheese about 1/4 inch thick and season with salt and pepper. Core the tomatoes, slice crosswise the same thickness as the cheese and season with salt and pepper.
  • Grill or broil the slices of bread, turning as needed, until evenly toasted, about 1 minute. Lightly smash the garlic. 8 cups boston lettuce, washed, drained, chilled and torn into bite-sized pieces
4 cups spinach, washed, drained, chilled and torn into bite-sized pieces

Steps:

  • To Make The Honey-Dijon Dressing: Whisk together all ingredients in a small bowl. Cover, chill and reserve.
  • To Make The Cajun Spice Blend: Combine spices for Cajun spice blend in a small bowl.
  • To Make the Turkey Cutlets: Preheat oven to 400 degrees F.
  • Lightly brush both sides of turkey cutlets with olive oil.
  • Sprinkle top of each with spice blend, covering the entire top surface of the cutlets with the seasonings.
  • Heat heavy large skillet (preferably cast-iron) over high heat until very hot. Add 1 tablespoon oil; swirl to coat.
  • Place 2 cutlets, seasoned side down, in skillet. Sear until very brown on bottom, about 2-3 minutes. While the first side cooks, sprinkle another teaspoon of spice blend over the top of each cutlet, coating the surfaces well. Turn the cutlets and sear for another 2-3 minutes. Repeat with remaining 2 cutlets.
  • Place cutlets on a baking sheet. Place in preheated oven; bake until an internal temperature of 170 degrees is reached, about 6-8 minutes.
  • For The Salad Assembly: Toss lettuce, spinach and carrots together. Portion vegetables into 4 shallow pasta bowls or dinner plates.
  • Slice cutlets, across the grain, in 1/2-inch-thick slices. Place the turkey strips across the top of each salad.
  • Sprinkle each salad with grape tomato halves, shredded cheese and green onions.
