1 cup coarsely chopped mushrooms
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup butter or margarine, 1/2 stick
1 (1-pound) package RITZ crackers, coarsely crushed, about 7 cups crumbs
2 Granny Smith apples, unpeeled, cored and large diced
1 cup walnuts, coarsely chopped
1 tablespoons chopped, minced rosemary
1/4 cup chopped fresh parsley
1 tablespoon poultry seasoning
1/2 teaspoon ground black pepper
1 (14.5-ounce) can chicken broth
2 eggs, beaten

Steps:

  • Preheat oven to 325°F. Cook mushrooms, onion, apples and celery in butter in skillet on medium heat until tender. Mix cracker crumbs, walnuts, parsley, rosemary, poultry seasoning, pepper and vegetable mixture in large bowl. Add broth and eggs, tossing until well blended. Spoon into 2 quart baking dish or pan; cover. Bake 30 to 40 minutes or until heated through.

1/2 teaspoon Celery seed
2 cups chicken broth

Steps:

  • Preheat oven to 350 degrees F
  • In a skillet, melt butter
  • Place onion, celery, and apple in pan and saute for several minutes until soft
  • Crush your Ritz crackers and place the cracker crumbs in a large bowl
  • Add fruit and vegetable mixture in a large bowl and mix with a spoon
  • Add salt, pepper, poultry seasoning, sage and celery seed, tossing until well blended
  • Spread mixture in a baking dish or pan
  • Add chicken broth over the mixture evenly

2 tablespoons extra-virgin olive oil, plus more for baking dish
2 large yellow onions, diced small
3 celery stalks, diced medium (about 2 cups)
Coarse salt and ground pepper
10 ounces cremini or button mushrooms, diced small
2 tablespoons fresh sage leaves, finely chopped
1/2 cup dry white wine, such as Sauvignon Blanc
1 cup toasted walnuts, roughly chopped
1 loaf crusty white bread, cut into 3/4-inch pieces (8 cups) and left uncovered overnight or toasted
1 to 1 1/2 cups low-sodium or homemade chicken or turkey broth
2 large eggs, lightly beaten

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium-high. Add onions and celery; season with salt and pepper. Cook, stirring occasionally, until vegetables are soft, 5 to 7 minutes; transfer to a large bowl. Add 1 tablespoon oil, mushrooms, and sage to skillet; season with salt and pepper and cook, stirring often, until mushrooms are browned, 5 minutes. Add wine and cook, stirring and scraping up any browned bits with a wooden spoon, until wine is almost evaporated. Transfer to bowl with vegetables; add walnuts, bread, and enough broth to moisten (stuffing should feel moist but not soggy). Season with salt and pepper and toss to combine.
  • Add eggs to bread mixture and toss well to combine. Reserve 4 cups stuffing for turkey. Spoon remaining stuffing into a lightly oiled 2-quart baking dish. (To store, cover and refrigerate, up to 1 day.) Preheat oven to 400 degrees, with rack in upper third. Bake, uncovered, until golden brown on top, 30 minutes.

Steps:

  • Brown onions in oil or chicken fat until very brown; drain off grease.

Extra-virgin olive oil
1 large onion, finely diced
3 ribs celery, finely diced
Kosher salt
3 cloves garlic, smashed and finely diced
1 pound spicy sausage, casing removed, broken up into bite-size chunks
3 Granny Smith apples, peeled, cored, and cut into 1-inch dice
1 cup apple cider
1/2 bunch sage, leaves finely chopped
3/4 cup coarsely chopped walnuts
10 cups stale rustic bread, crusts discarded, cut into 1-inch cubes; or fresh bread slices toasted until crispy but no color, cut into 1-inch cubes
2 to 3 cups chicken stock

Steps:

  • Coat a large saute pan, over medium heat, with olive oil and add the onions and celery. Season with salt and cook until the veggies start to become soft and are very aromatic. Add the garlic and cook for another 1 to 2 minutes. Add the sausage and cook until the sausage browns. Stir in the apples and apple cider and cook until the apples start to soften, about 3 to 4 minutes. Sprinkle in the sage leaves and the walnuts and turn off the heat.
  • Preheat the oven to 350 degrees F.
  • Add the diced bread and toss together. Pour in the chicken stock and knead with your hands until the bread is very moist, actually wet. Taste to check for seasoning and season with salt, if needed, (it does). Transfer to a large deep ovenproof dish (roughly 9 by 11 inches) and bake until it is hot all the way through and crusty on top.
  • Remove from the oven and serve.

Oil for saute or cooking spray
1 lb package Ritz Crackers
1 can (14 ounce) chicken broth
1/2 tsp poultry seasoning
1/4 tsp paprika
1/4 tsp garlic powder
salt and pepper to taste

Steps:

  • Saute onion, celery, and mushrooms in a few Tbsp. vegetable oil or cooking spray in a large non-stick skillet.
  • Lightly break up crackers in their packs, then open and place in a large bowl. Add can of broth and seasonings, mix well. Saute cracker mixture with vegetables until lightly browned about 5 minutes, stirring as you go.
  • Stuff in 12 lb. turkey like you would for bread stuffing or heat in a casserole to serve on the side.

This portobello mushroom-based stuffing has all the amazing flavors of a hearty stuffing without the bread. It is so easy, rich, and delicious, my family eats it as a side dish for any type of meat, any time of year.

½ medium eggplant, cut into 1/2-inch slices
salt and freshly ground black pepper to taste
1 medium sweet onion, chopped
½ cup chopped walnuts
1 stalk celery, diced
1 clove garlic, crushed
3 large portobello mushrooms, diced
1 cup diced mixed mushrooms (such as shiitake, maitake, oyster, beech, and/or chanterelles)
4 (3.5 ounce) links sweet Italian sausages
1 cup chicken stock
2 tablespoons red wine, or to taste
2 tablespoons butter, divided, or more to taste
2 teaspoons dried oregano
1 teaspoon dried rosemary
1 teaspoon dried sage
2 large red apples, diced

Steps:

  • Sprinkle each eggplant slice generously with salt and sandwich between paper towels. Place a heavy pan on top of the eggplant slices and set aside for 30 minutes.
  • Combine onion, walnuts, celery, and garlic in a bowl. Mix all mushrooms in a second bowl.
  • Heat an oven-safe skillet over medium-low heat. Squeeze sausage meat without the skin into meatball-sized segments and add to the skillet. Cook in its own juices until browned, breaking up sausage into bite-sized pieces while cooking, 3 to 5 minutes. Add onion mixture to the skillet and saute until soft, about 10 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Meanwhile, rinse off salt and any accumulated liquid from eggplant slices. Don't be afraid to twist and squeeze the slices. Dice eggplant and add with mushrooms to the skillet. Continue to cook stuffing over low heat until mushrooms have softened, about 10 minutes. Add chicken stock, red wine, and 1 tablespoon butter. Season with oregano, rosemary, sage, salt, and pepper. Mix in diced apples. Place remaining butter in thin pats on top of the stuffing and transfer skillet to the preheated oven.
  • Cook stuffing until browned on the top, about 15 minutes.

1/8 teaspoon ground nutmeg
2 medium stalks celery, sliced (1 cup)
1 large onion, chopped (1 cup)
1 package (14 ounces) herb-seasoned stuffing cubes
1 jar (4 1/2 ounces) sliced mushrooms, drained
1 1/2 cups applesauce
2 cups water

Steps:

  • Heat 2 tablespoons of the butter and the walnuts in 10-inch skillet over medium heat, stirring occasionally, until walnuts are lightly toasted. Remove walnuts from skillet, using slotted spoon; place in small dish. Stir honey and nutmeg into walnuts until glazed; set aside.
  • Melt remaining 6 tablespoons butter in same skillet over medium heat. Cook celery and onion in butter 3 to 4 minutes, stirring occasionally, until crisp-tender.
  • Spray 4- to 6-quart slow cooker with cooking spray. Place stuffing cubes in cooker. Add cooked celery and onion with butter and the mushrooms to stuffing cubes; mix lightly. Add applesauce and water; stir gently to mix.
