GRILLED SAUERKRAUT-STUFFED KIELBASA

Steps:
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Grill kielbasa ring on one side for 4 minutes. Transfer to a cutting board, grilled side up.
- Cut a slit down the length of the kielbasa, leaving an inch on both ends. Be careful not to cut all the way through as you are just making a pocket. Stuff sauerkraut into the pocket.
- Carefully place the kielbasa back on the grill, stuffed side up. Grill for 4 minutes more. Slice into serving portions and serve.

- Cook 1 cup raw rice in 2 cups water and Cajun spice for 20 minutes on stovetop.
- While rice is cooking, cut peppers in half lengthwise, remove seeds. Place in microwave safe dish with 1/2 cup water and steam 4-6 minutes.
- Heat oil on medium high heat in 12 inch skillet. Add onion and garlic. Cook 2-3 minutes. Add sausage, tomatoes and kidney beans. Reduce heat and simmer for 5 minutes.
- When rice is finished, add to skillet and combine.
- Remove peppers from microwave. Place on plate and fill with rice mixture. Spoon additional rice mixture around the peppers and serve.

- pre heat oven to 400 degrees Cut kielbasa into bite size pieces,sautee in butter on medium heat in a frying pan until brown and heated through,take off stove when finished strain excess butter,set kielbasa aside. Strain the sauerkraut really well squeeze to almost dry, pat on paper towel to remove excess liquid, add mustard, mix well Stretch pizza dough on a flat surface into a rectangle
- On one side of the dough add 1/2 the bag of shredded swiss cheese,kielbasa,the sauerkraut mixture and the remaining cheese. spread it out but leave a little room on the edges.
- Fold over the other side of dough crimp and pinch the edges closed shape into a loaf, place on a greased cookie sheet,cut tiny slits on the top of bread for air to escape,bake 25 mins or until the bread is lightly golden brown wait 5 mins before cutting, cut into slices and ENJOY!!
STUFFED KIELBASA

- Open the sauce and place in 2 quart pot. Cook to a boil then turn down to simmer for about 1 hour: add spices of your choosing to taste! About 1/2 hour into the simmering of the sauce, open and place the rings of the kielbasa in the sauce.
- Immediately start to boil your spaghetti in a quart pan of boiling water. After the spaghetti is cooked, drain and rinse with cool water. Place spaghetti in a large baking pan in the center of the pan.
- Next, check to see if the kielbasa has swollen in the tomato sauce. If it has, take out of the sauce and place around the spaghetti in the baking pan. Next, slit the kielbasa carefully 1/2 way through in the middle around the whole kielbasa. Take your mozzarella cheese and place the cheese in the slits of the kielbasa. Pack it in slits carefully. Save a small amount available on the side. Next, take your sauce from the pan and pour over the kielbasa and spaghetti in the roasting pan and sprinkle remaining mozzarella cheese over the top of kielbasa and spaghetti.
- Place baking pan in oven on 375°F and bake for about 15 to 20 minutes.
