This is a great hamburger for the grill. Feta cheese gives it a rich and creamy taste.

- Preheat an outdoor grill for medium heat, and lightly oil the grate.
- Knead together the ground beef, Worcestershire sauce, parsley, salt, and pepper in a bowl. Form the mixture into 8 equal-sized balls; flatten to make thin patties. Place about 1/4 cup of feta cheese onto each of four of the patties. Top each of the patties with cheese with one of the patties without; press the edges together to seal the cheese into the center.
- Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, 7 to 8 minutes per side for well done. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

MOM'S LEGENDARY STUFFED HAMBURGERS
These are enormous, stick-to-your-ribs kind of burgers with a surprise in the center. A real family favorite. I like to serve them on a bun topped with sauteed mushrooms and Swiss cheese. Use extra lean or lean ground beef instead of medium because the bacon adds to the fat content of the meat.

Steps:
- Prepare a grill for medium heat. When hot, lightly oil the grate.
- Fry the bacon in a skillet over medium heat for about 5 minutes, stirring frequently. Add onions to the pan; cook and stir until bacon is browned, but not crisp and onion is soft. Remove from the pan and drain on a paper towel-lined plate. Season to taste with black pepper.
- In a large bowl, mix together the ground beef and onion soup mix. Divide into 8 balls and then flatten into thin patties. Place a quarter of the bacon mixture onto each of four patties. Top with the remaining patties and press the edges together to seal.

STUFFED ROASTED GARLIC PASTE AND BLUE CHEESE HAMBURGERS

- Preheat the grill. In a bowl, mix the meat. Form 4 (3-ounce patties) by using a scoop. Push them down and make little indentations in the middle to hold the flavors. Place a teaspoon of garlic paste in the middle of each patty and add a little chunk of blue cheese tucked right on top of the garlic paste. Add a good twist of black pepper. Take another 3 ounce scoop of meat, make it flat in your hand and place right on top of the other half.
- Take your fingers and just seal the 2 patties up and refrigerate until you are ready to grill.
- Meanwhile: Split the pieces of bread, and pull out some of the soft center to make a hole for the burger. Place the bread face down on the grill to toast.
- Place the burger in the bread, and top with your favorite condiments.
- Preheat the oven to 375 degrees F.
- Heat an ovenproof saucepan on the stovetop. When it's hot, add the extra-virgin olive oil. Next, add the cloves and season with salt and pepper. Let the cloves begin to caramelize, then put the pan in the preheated oven.
- Roast cloves in the oven for about 30 minutes or until they are nicely browned. (Starting the garlic on the stove will save at least 20 minutes of roasting time). Let cool.
- When cool enough to handle easily, put the roasted garlic into a small bowl, mash with a fork and add oil from the pan until a paste forms. Store, tightly covered, in the refrigerator, for up to 1 week.

- Separate beef into four parts.
- Take one fourth of the beef mixture and split in half.
- Flatten each one out into a small hamburger patty.

- Set grill to medium heat.
- Oil the grill grates.
- In a bowl stir together the softened cream cheese with jalapeno pepper; mix until combined.
- In a bowl combine the ground beef with onion soup mix and garlic, then add whatever other seasonings you desire, egg, breadcrumbs, Worcestershire sauce, etc (do not add in any extra salt to the ground beef mixture as the dry onion soup mixture already has enough salt).

- In a bowl, combine the ground sirloin and basil and mix well. Shape into 6 thick patties. Make a pocket in the center of each patty, fill each pocket with 1 tablespoon of the goat cheese, and cover with the meat. Press into patties 3/4 inch thick. Heat grill pan or saute pan over medium-high heat. Spray lightly with nonstick cooking spray, and add the burgers. - 1. prepare stuffing as directed on box, set aside.
- 2. mix hamburger together with egg. press hamburger into 4-6 inch diameter round and 1/4 inch thick. (I use a sheet of plastic wrap and do it by hand, it doesnt need to be perfect but the plastic wrap makes it easier to fold over and place into the pan.)
- 3. place a scoopful of stuffing on one side of the hamb. patty, and fold over to make half moon shape, press around hamb to seal in stuffing. place into 9x13 pan.
