STUFFING STUFFED CHICKEN BREASTS

- In a small nonstick skillet, saute the onion, celery and garlic in 1 tablespoon butter until tender. In a large bowl, dissolve bouillon in boiling water. Stir in the bread crumbs, milk, herbs and celery mixture. Set aside., Flatten chicken to 1/4-in. thickness. Sprinkle with salt and pepper. Spread bread crumb mixture over chicken; roll up. Secure with toothpicks., Place in a 13-in. x 9-in. baking dish coated with cooking spray. Bake, uncovered, at 350° for 25 minutes. Melt remaining butter and brush over chicken. Bake 10-15 minutes longer or until a thermometer reads 170°. Discard toothpicks.

- In a large skillet, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry., Flatten chicken to 1/4-in. thickness. Spread mustard over one side of each chicken breast. Down the center of each, place two sage leaves, a cheese slice, ham slice and four asparagus spears. Fold chicken over asparagus; secure with toothpicks., Place flour and egg in separate shallow bowls. In another shallow bowl, combine bread crumbs and Parmesan cheese. Dip chicken in the flour, egg, then bread crumb mixture., In a large skillet, brown chicken on all sides in butter and oil. Transfer to an 8-in. square baking dish coated with cooking spray. Add wine to skillet, stirring to loosen browned bits from pan. Pour over chicken. , Bake at 350° for 20-25 minutes or until chicken is no longer pink. Discard toothpicks.

Steps:
- Preheat oven to 400 degrees.
- Combine stuffing mix and water in large bowl. Let stand for 5 minutes.
- Pound chicken to 1/4 inch thickness using a meat mallet.
- Add broccoli to the stuffing and mix lightly.
- Spread evenly on flattened chicken breasts to within 1/2 inch of the outer edges.
- Roll up each chicken breasts starting at the short end enclosing the stuffing mixture.
- Place the chicken, seam side down, in a 13x9 inch baking dish.
- Mix the soup and milk and pour over the chicken.
- Sprinkle with the cheese.
- Bake for 30 minutes or until chicken is cooked through 170 degrees.

- Breading mixture - Mix the Breading ingredients in a bowl.
- Stuffing mixture- In another bowl mix the 1/2 cup almond flour, spinach and cheese with the egg.
- Dust one chicken breast with the breading mixture covering both sides of the chicken. Take about 2 heaping tablespoons of the stuffing mixture and roll it up in the breast. Secure the roll with about 3 toothpicks. Put a little olive oil in the bottom of a casserole dish and place the rolls in there.
- Cook at 350 degrees for 30-35 minutes.
- Serve with salad and steamed broccoli.
