GOAT CHEESE STUFFED BABY PEPPERS



Goat Cheese Stuffed Baby Peppers image

10 baby bell peppers, halved lengthwise and seeds removed
1 tablespoon olive oil
1/2 teaspoon kosher salt
4 ounces goat cheese, at room temperature
3 tablespoons mascarpone, at room temperature
1 teaspoon orange zest (from about 1 orange)
1/2 teaspoon lemon zest (from about 1 lemon)
2 tablespoons chopped chives

Steps:

  • Position an oven rack in the top third of the oven and preheat the broiler to high.
  • On a rimmed baking sheet, toss the peppers with the olive oil and 1/4 teaspoon salt and arrange them cut-side down. Broil until beginning to brown and soften slightly, about 4 minutes. Allow to cool to room temperature.
  • In a medium bowl, combine the goat cheese, mascarpone, orange zest, lemon zest and remaining 1/4 teaspoon salt. Mix well with a rubber spatula. Place the cheese mixture in a piping bag with a decorative tip. Fill each pepper evenly with the cheese mixture, being careful not to overfill. Sprinkle with the chives. Store in the refrigerator if not serving immediately.

Vegetable oil cooking spray
2 tablespoons olive oil
3 ounces thinly sliced pancetta, chopped into 1/4-inch pieces
1/2 medium onion, finely chopped
3/4 cup ricotta cheese
1/3 cup grated Parmesan
1/2 cup frozen petite peas, thawed
Kosher salt and freshly ground black pepper
24 (2 to 3-inch long) sweet baby peppers

Steps:

  • Place an oven rack in the center of the oven and preheat to 350 degrees F. Spray a baking sheet with vegetable oil cooking spray and set aside.
  • In a medium skillet, heat the oil over medium-high heat. Add the pancetta and cook, stirring frequently, until brown and crispy, about 5 to 7 minutes. Using a slotted spoon, remove the pancetta and drain on paper towels. Add the onion to the pan and cook until translucent and soft, about 5 minutes. Set aside to cool for 10 minutes.
  • In a medium bowl, combine the onion, pancetta, cheeses, and peas. Season with salt and pepper, to taste.
  • Using a paring knife, cut 1/2-inch from the stem-end of the peppers. Remove the seeds and veins. Using a small dessert spoon, fill each pepper with the ricotta mixture. Place the filled peppers on the prepared baking sheet and bake for 15 to 18 minutes until the peppers begin to soften. Remove from the oven and cool for 10 minutes.
  • Arrange the peppers on a platter and serve.

3 tablespoons extra-virgin olive oil
1 pound assorted baby bell peppers (about 24)
1 small onion, diced
1 poblano chile pepper, seeded and diced
3 cloves garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon ancho chile powder
1 teaspoon chipotle chile powder
Kosher salt
1/2 pound ground pork
1/4 cup chopped fresh cilantro
3 ounces muenster cheese, diced (about 3/4 cup)
Lime wedges, for serving

Steps:

  • Heat the olive oil in a large nonstick skillet over medium heat. Add the baby bell peppers in a single layer and cook, turning, until the skins blister and start browning, about 8 minutes. Transfer to a plate.
  • Add the onion, poblano, garlic, cumin, oregano, ancho and chipotle chile powders and 1 teaspoon salt to the skillet. Cook, stirring, until the onion and poblano are tender, about 8 minutes. Increase the heat to medium high and add the pork. Cook, breaking up the meat with a wooden spoon, until no longer pink, about 6 minutes. Remove from the heat; let cool.
  • Meanwhile, preheat the oven to 425 degrees F. Make a slit in each baby bell pepper with a paring knife, cutting from stem to tip. Crumble the meat mixture into small bits, then stir in the cilantro and cheese. Stuff 2 to 3 teaspoons of the meat mixture into each pepper using your fingers or a small spoon; transfer to a baking sheet. (The peppers can be stuffed up to 4 hours ahead; cover and refrigerate. Bring to room temperature before baking.)
  • Bake until the peppers are hot and the cheese melts, about 10 minutes. Season with salt and serve with lime wedges.

3 ounces bacon bits
1 shallot, very finely chopped
3/4 cup cream cheese or 3/4 cup goat cheese
1/3 cup grated parmesan cheese
salt and pepper
24 baby sweet peppers

Steps:

  • Preheat oven to 350 degrees.
  • In a bowl, combine bacon, shallot, cheese, Parmesan, salt and pepper.
  • Using a small paring knife, cut off stem end of pepper.
  • Cut a small slit in the other end of pepper.
  • Put mixture in plastic bag and snip corner in order to "pipe" into peppers.
  • Fill peppers 3/4's of the way full.
  • Spray sheetpan with cooking spray. Spray a piece of foil, if grilling.
  • Place peppers on pan.
  • Bake 15-18 minutes until peppers begin to soften and cheese melts.
  • Cool for 10 minutes before serving.

3/4 cup toasted bread crumbs
1 cup whole-milk ricotta
1/3 cup finely grated Parmigiano-Reggiano (1 oz)
2 tablespoons drained capers, rinsed, patted dry, and chopped
2 large eggs, lightly beaten
3 tablespoons finely chopped fresh flat-leaf parsley
For peppers
1 1/2 lb baby red and yellow bell peppers* (2 inches in diameter; 24)
1/2 cup water
1 tablespoon olive oil

Steps:

  • Make filling:
  • Cook onion and anchovies in oil in a heavy skillet over moderate heat, stirring frequently, until onion is golden, about 8 minutes. (Anchovies will dissolve.) Transfer to a bowl and stir in bread crumbs, cheeses, capers, eggs, and parsley until combined well.
  • Stuff and bake peppers:
  • Preheat oven to 350°F.
  • Cut tops from baby peppers (keep stems on tops) and reserve. Cut a very thin slice from bottom of each pepper so it can stand upright (don't worry if you make a hole in bottom). Scoop out and discard seeds, then divide filling among peppers. Cover with reserved tops and arrange peppers upright in an oiled baking dish. Add water to dish and drizzle peppers with oil.
  • Bake, uncovered, in middle of oven until peppers are tender and filling is puffed, 50 to 60 minutes.

STUFFED BABY BELL PEPPERS (EGYPTIAN RECIPE)

Most Mediterranean countries have a recipe for stuffed bell peppers. The stuffing in all of them share one common ingredient which is the rice, then the herbs and spices added in each country make all the difference. As for the ground beef I used here; most of the time it is not used in the Egyptian recipe to save money.

2 lb baby bell peppers
1 1/2 c rice
1/2 lb ground beef
2 Tbsp olive oil, extra virgin
2 Tbsp onion flakes, dehydrated
1 Tbsp dill, dried
1 Tbsp parsley flakes
1 Tbsp mint, dried
salt and pepper
3 c hot water or broth

Steps:

  • 1. Wash the bell peppers. Using a sharp knife with a pointed tip; cut and remove the tops of the bell peppers, then scoop out all the seeds. Set aside.
  • 2. In a mixing bowl, add the rest of the ingredients except the water. Mix very well making sure to break any lumps in the ground beef.
  • 3. Fill the peppers with the rice mixture (but don't pack them too tight so as to allow room for the rice to plump when cooked).
  • 4. Stand the filled peppers up in a pot, add the hot water (or broth), bring to the boil then reduce the heat, cover and let it simmer till the rice is cooked; about 35 - 45 minutes. In Egypt it is served with plain yogurt or garlic yogurt.

75g of couscous (1/2 cup)
125ml of boiling water (1/2 cup)
55g of raisins, chopped (1/3 cup)
75g of pine nuts, toasted (1/2 cup)
2 heaped dessertspoons of capers, rinsed of any salt or brine
45g of marinated pitted kalamata olives, drained and chopped (1/4 cup, chopped)
4 TBS coarsely chopped mint and flat leaf parsley, combined
4 TBS olive oil, plus more to drizzle
salt and black pepper to taste
12 baby sweet bell peppers, halved and deseeded (or 6 large ones)
a handful of grated mozzarella cheese
Balsamic vinegar to drizzle (use a good quality)

Steps:

  • Place the couscous in a bowl. Pour the boiling water over top and cover. Let stand for 5 minutes. Uncover and stir in the chopped raisins, pine nuts, rinsed capers, chopped olives, mint and parsley and half of the olive oil. Season with salt and pepper to taste. Taste and adjust as needed. Preheat your oven to 180*C/350*F/ gas mark 4. Have ready a large baking dish. Place the pepper halves into the dish. Stuff each with a portion of the stuffing. Drizzle with some more olive oil. Cover the baking dish with foil. Bake for 30 minutes in the heated oven. Remove the foil and bake for 15 minutes longer. Remove from the oven and sprinkle some mozzarella cheese on top of each. Return to the oven for an additional 5 to 10 minutes, until the cheese has melted. Remove from the oven and place onto a nice platter. Drizzle with some Balsamic vinegar and serve. May be served hot or at room temperature.

10 baby red peppers or 5 full-size red peppers, halved
150 g feta
100 g ricotta cheese
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, chopped
2 teaspoons lemon zest, finely grated
2 -4 garlic cloves, minced
fresh ground black pepper, to taste
1 1/4 cups fresh lemon juice
2 tablespoons extra virgin olive oil
2 cups watercress leaves, washed, dried, to serve

Steps:

  • Preheat the oven to 200°C, cut the tops off the baby red peppers and reserve (or halve the full-sized red peppers); using a small sharp knife, carefully remove the membrane and seeds and discard.
  • Place the feta and ricotta in a bowl and using a fork mash them until they are well-combined; add the parsley, dill, lemon zest and garlic, and season with pepper to taste.
  • Place the peppers in a lightly oiled roasting pan, divide the feta mixture among the red peppers and spoon it into the peppers, replace the tops, and drizzle the peppers with lemon juice and oil.
  • Roast the peppers in the oven for 20 minutes or until tender. If you are using halved full-sized peppers, you may want to cover the pan loosely with foil for the first part of the roasting time.
  • Transfer the peppers to a serving dish and garnish with watercress to serve.

Slow-Cooked and Stuffed Baby Bell Chile Peppers image

10 small, round baby bell chile peppers (cherry peppers)
Small bottle olive oil
2 good handfuls rocket (arugula)
1 good handful parsley
1 small handful capers, soaked and drained
1 handful anchovies
10 tablespoons balsamic vinegar or enough to cover
Salt and fresh ground black pepper

Steps:

  • Halve the chiles, remove the seeds and then wash in cold water. Then drain. Tightly pack into a large earthenware dish and cover with the olive oil then place in the oven at 325 for about 45 minutes until tender. Carefully remove the dish from the oven and leave to cool. Take the chiles out of the dish. Pour the olive oil back into the bottle. This is great on salads, over mozzarella and other cheeses, on pizzas, or over pasta. Finely chop the rocket, parsley and capers. Roughly chop anchovies and then mix everything up in a bowl with balsamic vinegar. Season with salt and pepper. Stuff this filling into your bell peppers (cherry peppers) and serve on a plate as tapas.;

1- 8 oz cream cheese softened
1/4 c cheddar cheese, shredded
3 slice thick bacon minced, cooked, drained
1/4 tsp oregano, dried
1/4 tsp black cracked pepper
1/8 tsp garlic
1 sprig(s) scallions fine diced
2 pinch dried chives
20 small sweet peppers hollowed out

Steps:

  • 1. Hollow out you peppers. Rinse, Dry , and set aside.
  • 2. In a pot, render your minced bacon in a pot with a tsp. olive oil. Drain on a paper towel. set aside to cool.
  • 3. Mince up 1 whole scallion - you can add more if you like - adds amazing flavor. mix into cream cheese.
  • 4. Add all your spices. then add your Shredded Cheddar cheese.
  • 5. Add your bacon and mix everything together.
  • 6. Stuff into your peppers. Note: the best way I noticed to cook these is in a mini cupcake pan. this way they wont fall over and spill out while cooking.
