Light and fluffy pancakes packed with strawberries. The vanilla makes this breakfast seem like dessert! Serve with butter and real maple syrup.

1 cup all-purpose flour
2 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon salt
1 egg
1 cup milk
2 tablespoons vegetable oil
2 tablespoons vanilla extract
1 cup chopped fresh strawberries

Steps:

  • In a medium bowl, stir together the flour, brown sugar, baking powder and salt. Pour in the milk, oil, egg and vanilla, and mix until well blended. Stir in the strawberries.
  • Heat a large skillet or griddle over medium heat, and coat with butter or cooking spray. Pour batter into desired size of pancakes. Flip with a spatula when bubbles appear in the center. Cook until golden brown on the other side.

These pancakes are made with fresh strawberries and pure vanilla extract. I happen to come across this recipe at 2 different recipe websites... allrecipes and Tasty Kitchen. While I enjoyed these pancakes, I do think you could cut back on the vanilla extract just a bit. The pancakes tasted great with maple syrup, but I also think they tasted even better with fresh strawberries and Reddi Wip Whipped Topping!

1 cup all-purpose flour
2 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
2 tablespoons vegetable oil
1 egg
2 tablespoons vanilla extract
1 cup chopped fresh strawberries
maple syrup (or use jam of choice)
additional fresh strawberries, to garnish pancakes
reddi whip to garnish pancake (or use Cool Whip)

Steps:

  • In a medium size bowl stir together, the flour, brown sugar, baking powder and salt.
  • Pour in the milk, oil, egg, and vanilla extract (yes that's 2 tablespoons of extract), and mix until well blended.
  • Stir in the 1 cup of fresh chopped strawberries.
  • Coat a large skillet or griddle, with butter or cooking spray. Then heat skillet or griddle over medium heat.
  • Pour batter into desired size of pancakes, onto skillet or griddle. Flip with a spatula when bubbles appear in the center. Cook until golden brown on the other side.
  • Top pancakes with either maple syrup, or jam, or fresh strawberries and Reddi Wip (or Cool Whip). I ate mine with fresh strawberries and Reddi Wip.
  • Yields: 8 pancakes.

1 1/2 cups flour
3 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 eggs
6 ounces non-fat vanilla yogurt
3/4 cup water
3 tablespoons butter or 3 tablespoons margarine, melted
1 3/4 cups sliced fresh strawberries
1 cup strawberry syrup, warmed

Steps:

  • Spray griddle with cooking spray and heat over medium heat or to 375.
  • In a large bowl, mix flour, sugar, baking powder, baking soda, and salt; set aside.
  • In another bowl, beat eggs, yogurt, and water with wire whisk; beat in butter.
  • Pour egg mixture all at once into flour mixture; stir just until moistened.
  • For each pancake, pour by 1/4 cupfuls onto hot griddle.
  • Cook pancakes 1-2 minutes or until bubbly on top. Turn and cook other sides for an additional 1-2 minutes.
  • Top each serving with 1/4 cup sliced strawberries and syrup.

2 cups all-purpose flour (10 ounces)
3 tablespoons sugar, divided
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk
2 large eggs
1/4 cup sour cream
3 tablespoons unsalted butter, melted and cooled slightly
10 ounces strawberries, hulled and chopped fine (2 cups)
1/2 teaspoon vanilla extract
2 teaspoons vegetable oil, divided

Steps:

  • Whisk flour, 2 tablespoons sugar, baking powder, baking soda and salt together in bowl. In second bowl, whisk buttermilk, eggs, sour cream and melted butter together. Make well in center of flour mixture and pour in buttermilk mixture; gently stir until just combined (batter should remain lumpy, with few streaks of flour). Do not overmix. Let batter sit for 10 minutes (don't skip this step). .
  • Combine strawberries, vanilla and remaining 1 tablespoon sugar in small bowl; set aside.
  • Heat 1 teaspoon oil in 12-inch nonstick skillet over medium heat until shimmering. Using paper towels, carefully wipe out oil, leaving thin film on bottom and sides of pan.
  • Using 1/4-cup dry measuring cup, portion 4 pancakes into pan. Cook until edges are set, first side is golden brown and bubbles on surface are just beginning to break, 2 to 3 minutes. Sprinkle 1 tablespoon strawberry mixture over each pancake.
  • Using wide spatula, flip pancakes and continue to cook until second side is golden brown, 1 to 2 minutes longer. Serve pancakes immediately or transfer to prepared rack in oven. Repeat with remaining batter and strawberry mixture, adding remaining 1 teaspoon oil, as needed.
