STRAWBERRY PIE WITH BISQUICK CRUST
This scrumptious pie recipe was given to me many years ago by a co-worker. I have made it every year during strawberry season. I also made it with fresh peaches.

Steps:
- For the crust: Mix together the bisquick, butter and boiling water. Spread in pie pan with hands and bake at 400 degrees for 8 minutes.
- Fill cooled shell with clean berries. I leave my berries whole starting in the middle of the pie pan and going around in a circle.
- Meanwhile, combine 1 cup sliced berries and 2/3 cup of water in saucepan and cook until it comes to a boil.
- Blend together the sugar, cornstarch and 1/3 cup water. Mix well and then pour into above boiling mixture, stirring constantly while boiling.
- Cook for 1 minute and then pour over the berries in pie pan.
- Refrigerate at least 1 hour. Serve with whipped cream if desired.

- In baked pie crust add sliced strawberries.
- In small saucepan, mix water, sugar, and cornstarch and bring to boil. Boil until mixture is clear and thick, approximately 2 minutes.
- Remove saucepan from heat and add the strawberry gelatin, stirring until dissolved. Pour this over the strawberries in pie shell. Chill and serve.

- To makethe pie crust, mix together the first six ingredients and press into a 9-inch pie plate. Bake in a 400F oven for 12 minutes, let cool.
- In a saucepan, combine sugar and cornstarch. Add water and corn syrup. Cook and boil for 2 minutes. Add Jello powder. Cool for 10 minutes. Arrange cut strawberries in the cooled crust. Cover with the filling and chill for 4 hours or overnight.
- Top with whipped cream before serving.

STRAWBERRY PIE
Strawberry Pie is a family favorite passed down from DH's grandmother, who was a pastor's wife in Texas. She and I made it together once, about 20 years ago, after spending the afternoon picking fresh strawberries. Now my daughter, her great-granddaughter, helps me make it during strawberry season. Always a treat!

- Preheat oven to 450 degrees F.
- Mix together flour, 2 Tablespoons sugar, milk, salt and oil.
- Press mixture into a 9-inch pie plate.
- Bake for 10 minutes.
- Set crust aside to cool.
- In a sauce pan, heat 1 cup sugar, corn syrup, cornstarch and water until clear and thickened.
- Stir in strawberry gelatin, cool.
- Fold strawberries into the cooled gelatin mixture.
- Pour into crust and chill for at least 2 hours.
- Cut into wedges and serve.
- Great with whipped cream.
- Refridgerate leftovers (if there any).
STRAWBERRY GLACE PIE
This is my favorite strawberry pie; it has a fresh, light flavor. I much prefer it to those with jello or cream cheese. This is adapted from an old Farm Journal cookbook & is a family favorite. There are many recipes on Zaar that are close to this one, but no exact matches.

- Hull, wash, & drain berries.
- Crush enough berries to make 1 cup.
- Combine sugar & cornstarch; add crushed berries & water.
- Cook over medium heat, stirring almost constantly, until mixture comes to a boil.
- Continue cooking & stirring over low heat for two minutes or until mixture thickens & becomes translucent.
- Remove from heat; stir in butter & set aside to cool.
- Place whole berries in pie shell, reserving a few choice ones for garnishing.
- Pour cooked mixture over berries & chill at least 2 hours.
- Whip cream & sugar together & frost pie with whipped cream.
- Garnish with reserved berries.
- Note: you can use whole berries placed into the shell with the points up, or you can half them & layer the berries in the crust.
- "cooking" time = chlling time.
STRAWBERRY PIE WITH WHIPPED TOPPING
This is always the first thing I make when truly seasonal strawberries hit the market stands - I won't buy strawberries any other time, and I wouldn't make this pie with anything but the most aromatic berries.

- Roll out dough 1/8 inch thick on a lightly-floured surface; fit it into a 10 inch glass pie plate, crimping edge decoratively.
- Chill for 30 minutes.
- Prick pastry lightly with a fork, line with foil and weight with dry beans or pie weights.
- Preheat oven to 375F and bake crust for 10 minutes, remove beans and foil, sprinkle bottom with almonds, and bake 10-12 minutes more, or until almonds are golden.
- Let cool.
- Hull and slice 1 pint of the strawberries and in a saucepan, combine them with ¼ cup water and sugar.
- Bring to a boil, stirring until sugar is dissolved, and simmer 3 minutes.
- In a small bowl, stir together cornstarch and ¾ cup water, add to cooked strawberries and bring to a boil.
- Simmer, stirring, for 3-5 minutes, or until thickened, and stir in lemon juice.
- Hull remaining 1 ½ pints strawberries, arrange in pie shell, and pour cooked strawberry mixture over.
- Chill pie for 3-4 hours or until set.
- In a chilled bowl, beat cream, vanilla extract and icing sugar until it holds soft peaks and serve with pie.

- Pre-bake pie crust.
- Cool.
- Slice the strawberries into the pie crust.
- In a medium saucepan mix the package of jello with the cornstarch.
- Add the water and the sugar.
- Cook over medium heat until boiling.
- Stir occasionally.
- Pour the boiling mixture over the strawberries.
- Place the pie in the refrigerator.
- Chill for 3-4 hours until the jello glaze sets.
- Serve with big dollops of whipped cream over the pie.
