I cheat and use prepackaged angel food cake, but I absolutely, always, use fresh fruit and make the whipped cheesecake cream myself. I use a cream cheese whipped cream so that I stays looking nice when it has to sit around on a buffet for a few hours. Since the cream cheese gives it stability you can use WAY less sugar than traditional whipped cream calls for.

1 ½ quarts fresh strawberries, hulled and sliced
2 tablespoons white sugar
1 (8 ounce) package cream cheese, softened
1 pint heavy whipping cream
2 tablespoons confectioners' sugar
1 teaspoon vanilla extract
1 (10 inch) angel food cake, cut in cubes
½ quart fresh strawberries, hulled and sliced

Steps:

  • Mix 1 1/2 quarts strawberries and white sugar in a large bowl; gently mash strawberries with a potato masher. Cover and refrigerate.
  • Beat cream cheese in a bowl until light and fluffy; set aside. Beat heavy cream in another bowl until soft peaks form; add whipped cream cheese and continue to beat until stiff peaks form. Lift your beater or whisk straight up: the cream should form a sharp peak that holds its shape. Beat confectioners' sugar and vanilla extract into cream cheese mixture.
  • Layer about half the angel food cake in a large bowl or trifle. Spread a third of the cream cheese mixture over the cake and top with a layer of mashed strawberries. Repeat the layers, finishing with a final layer of the cream cheese mixture. Arrange the remaining 1/2 quart strawberry slices decoratively. Chill until ready to serve.

CAKE INGREDIENTS
1 box yellow cake mix
3 large eggs
1 1/3 c vanilla yogurt
1/2 c vegetable oil
CHEESECAKE FILLING
4 oz cream cheese, softened
4 oz Cool Whip
1/4 c strawberry jam
TOPPING
1 qt fresh strawberries
1/4 c sugar
4 oz Cool Whip

Steps:

  • 1. Preheat oven to 325. Lightly spritz the bottoms of 2 9" round cake pans with vegetable oil and dust with flour. Set aside.
  • 2. Combine all ingredients for cake and mix well.
  • 3. Divide batter between the two pans. Spread the batter in the pans evenly.
  • 4. Bake cake at 325 degrees for 25 minutes.
  • 5. Remove cakes, loosen sides from pans and place on cooling rack for about 20 minutes.
  • 6. Combine cream cheese and Cool Whip. Beat until smooth.
  • 7. Add strawberry jam. Place in refrigerator until cake is cooled.
  • 8. Cut up strawberries into chunks. Add sugar and place in refrigerator until ready to use.
  • 9. Invert cakes and turn the tops to face up. Let cool on cooling rack for an hour.
  • 10. When cake is cooled; spread cheesecake mixture on the top of the first layer.
  • 11. Place second cake on top of the mixture.
  • 12. Spread strawberries on top of cake.
  • 13. Top with Cool Whip.

5 ounces crushed shortbread cookies, or as needed
24 ounces cream cheese (such as Philadelphia®)
2 cups heavy whipping cream
1 tablespoon vanilla bean paste
1 cup confectioners' sugar
12 ounces sour cream
1 (10 ounce) jar strawberry fruit spread (such as Smucker's® Simply Fruit)
1 pint fresh strawberries, sliced

Steps:

  • Reserve about 1/2 cup crushed cookies and press remaining into the bottom of a springform pan to create a crust.
  • Blend cream cheese, heavy cream, vanilla bean paste, and 1/2 the confectioners' sugar together in a bowl. Set cheesecake mixture aside. Blend sour cream and remaining confectioners' sugar in a separate bowl and set whipped sour cream aside.

4 eggs
1 ¼ cups sugar, divided
3 teaspoons vanilla extract, divided
¾ cup flour
1 ½ teaspoons baking powder
1 teaspoon salt
16 oz cream cheese, room temperature
½ cup heavy whipping cream, cold
½ cup strawberry jam
2 cups fresh strawberry , sliced

Steps:

  • Preheat the oven to 350°F (180°C).
  • Whisk together eggs, ¾ cups (150 g) sugar and 1 teaspoon vanilla until pale and fluffy.
  • Into the mixture sift in flour, baking powder & salt. Mix until just combined.
  • Pour the sponge cake batter onto a 10x15-inch (25x38 cm) baking sheet lined with parchment paper and bake for 10-12 minutes. Allow to cool.
  • In a mixing bowl beat together cream cheese, ½ cup sugar (100 g) and 2 teaspoons vanilla extract. Add in heavy cream and beat until light and fluffy. Set aside.
  • Cutting widthways, cut the cooled cake into 4 equal rectangles.
  • Spread the jam onto 2 rectangles. Then place the two rectangles together and top with a rectangle without any jam.
  • Transfer the stack of cake with jam onto a cutting board. Cut in half longways. Then cut widthways into 1 cm (½ inch) thick slices. The cut pieces of cake should be about square in shape.
  • Arrange the sliced pieces on cake into a medium sized bowl lined with cling film. Alternate the direction the lines are facing to create a checkered like pattern. As you reach the edges of the bowl, you may need to cut the pieces to fit.
  • Fill the cake with the cheesecake filling. Spreading evenly.
  • Arrange the strawberries on top making sure they slightly overlap each other.
  • Cover the cake with slices of the 4th piece of cake. Wrap the exposed cake with cling film and refrigerate for at least 4 hours.
  • To serve, unwrap the bottom layer of the cake, and place a plate on top. Flip the plate and carefully remove the bowl, and the remaining cling film.
  • Slice and serve.

2/3 cup milk
3 tablespoons sugar
3 tablespoons butter, melted
2 packages (8 oz each) cream cheese, softened

1 cup heavy whipping cream
1 lb fresh strawberries, sliced

Steps:

  • Heat oven to 400°F. Line 13 x 9-inch pan with cooking parchment paper, or spray with cooking spray.
  • In medium bowl, mix crust ingredients. Use a greased spatula or your fingers to press dough evenly into pan. Bake 12 to 15 minutes or until it just begins to turn golden brown; cool.
  • While crust is cooling, in large bowl, beat cream cheese, 1/2 cup sugar and the vanilla 2 to 3 minutes or until smooth and creamy. In medium bowl, beat whipping cream to stiff peaks. Gently fold whipped cream into cheesecake mixture in 2 additions.

BOTTOM CRUST:
22 golden Oreos crushed
5 tablespoons melted butter
FILLING:
4 (8-ounce) packages cream cheese
1 2/3 cups sugar, divided
1/4 cup cornstarch
1 tablespoon pure vanilla extract
2 large eggs
3/4 cup heavy whipping cream
1 (11.75-ounce) jar of Smuckers strawberry ice cream topping
TOPPING:
12 golden Oreos crushed, divided into 2 bowls--1 for plain Oreo topping and 1 for your strawberry ones
1 1/2 teaspoon softened butter
3 tablespoons of strawberry gelatin

Steps:

  • Preheat oven to 350°F. Line the outer perimeter of your pan with aluminum foil and generously apply butter to the inside to prevent sticking. CRUST: Crush the Oreo's and mix them with the butter, press into the bottom of your 9-inch springform pan. FILLING: Place 1 (8-ounce) package of the cream cheese, 1/3 cup of the sugar, and the cornstarch in a large bowl. Beat with an electric mixer on low until creamy, about 3 minutes, then beat in the remaining 3 (8-ounce) packages of the cream cheese. Increase the mixer speed to high and beat in the remaining 1 1/3 cups of the sugar, then beat in the vanilla. Blend in the eggs, 1 at a time, beating the batter well after each one. Blend in heavy cream. At this point mix the filling only until completely blended. Be careful not to over-mix the batter. Gently spoon 1/2 of the cheese filling on top of the prepared crust. Spoon about 1/2 of the jar of strawberry topping here and there. Drag a butter knife through the strawberries to marbleize the cream cheese mixture and the strawberry ice cream topping. Spoon in the other half of the batter and then repeat the strawberry process on top. Bake for 1 hour or until there is only a slight jiggle when shaken gently. TOPPING: In a small bowl or in your food processor, add the Oreo cookies, and pulse into large crumbs. Add the softened butter and mix gently with a fork or your hands to make pea-sized pieces stick together. Scoop out 2 tablespoons of the mixture into a small bowl and set aside. Pour strawberry gelatin powder over the remaining crumbs and continue pinching the pieces together. Add more softened butter if needed for the mixture to stick to the cooled baked cake.

  • Layer with the remaining batter.
  • Bake in a 350 degree oven for 1/2 hour.
  • Pour cheesecake batter over the top of partially baked shortcake/strawberry batter.
