WHITE CHOCOLATE STRAWBERRY MOUSSE PIE

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Stir cookie crumbs and butter together in a bowl. Press crumb mixture into the bottom of an 8-inch springform pan.
- Bake in the preheated oven until browned and set, about 10 minutes; cool completely.
- Heat 2/3 cup cream in a small saucepan over medium heat until just barely bubbling, 3 to 4 minutes. Place white chocolate in a bowl and pour hot cream over the chocolate. Whisk until white chocolate melts and mixture is smooth. Cool to room temperature.
- Beat 1 1/2 cups cream in a chilled glass or metal bowl with an electric mixer until soft peaks form. Add vanilla extract and continue to beat until stiff peaks form.
- Puree 2/3 pound strawberries in a blender or food processor.
- Fold 1/2 the whipped cream into the cooled white chocolate mixture. Fold white chocolate mixture into remaining whipped cream. Add the strawberry puree and fold until just combined. Spoon strawberry mixture on top of the crumb crust in the springform pan. Top with chopped strawberries. Refrigerate until chilled, at least 4 hours.

- In a food processor, combine strawberries and sugar; cover and process until smooth. Strain and discard seeds. Return strawberry mixture to the food processor. Add pudding mix; cover and process until smooth. , Transfer to a large bowl; fold in whipped topping. Spoon into dessert dishes. Refrigerate until serving.

Can't believe how good this is and it's gluten free and low carb!! So easy to put together too!! Flavor was even better on the second day! I don't know about a third day.. this didn't survive that long!

- 1. Heat oven to 350 F. Melt the butter and mix the ingredients for the crust up in the pan and press into place with your fingertips.
- 2. Bake for about 10 minutes until the crust is beginning to brown. After 8 minutes, check every minute or so, because once it starts to brown it goes quickly. Allow to cool completely.
- 3. Slice strawberries thin and spread in bottom of cooled crust.
- 4. In a mixing bowl, combine pudding mix and milk until thickened. Fold in cool whip until well blended. Spread over strawberries in pie plate. Chill until ready to serve.

Light creamy vanilla mousse pie made with fresh strawberries. Easy to make and a winner every time. Sugar free pudding, fat free cream cheese, sugar free whipped topping and sugar substitute can be used for diabetics. My mothers coworkers couldn't tell the difference.

Steps:
- In one bowl cream together cream cheese, sugar and vanilla. Fold in 1 1/2 cups whipped topping and set aside.
- In another bowl beat whipping cream and instant pudding until stiff peaks form.
- Place cream cheese mixture in the bottom of the pie crust.
- Place sliced strawberries on top of the cream cheese layer followed by the vanilla mousse.
- Top with the remaining 1 1/2 cups whipped topping.
- Let chill for 1 hour.

Steps:
- Sprinkle gelatin over cold water in saucepan: Let stand for 1 minute to soften.
- Stir over low heat until gelitan is dissolved (about 1 minute).
- Remove from heat.
- Place berries, extra fine granulated sugar and gelatin mixture in food processor or blender.
- Whirl to puree. Pour into bowl, chill until mixture mounds when dropped from a spoon (1 Hour).
- Beat cream and powdered sugar in chilled bowl until soft peaks form.
- Stir 1/4 of cream into strawberry puree to lighten mixture.
- Fold in remaining cream.
- Pour into crust.
- Refrigerate for 2 hours before serving.
- Cooking time is chill time!

- POUR INTO GRAHAM CRACKER PIE CRUST.
