Strawberry Salad with Mixed Greens, Pecans and Feta image

This strawberry salad with mixed greens, pecans and feta is bursting with flavor! It has a perfect flavor balance, with sweetness from the strawberries, saltiness from the feta, and a lovely acidity from the vinaigrette. For an extra kick, try adding optional quick pickled shallots!

4 cups spring mix
2 cups California Strawberries, (hulled and quartered)
1/2 cup toasted pecans, (whole or coarsely chopped)
1/4 cup good quality feta cheese, (sliced or crumbled)
Optional: 1/4 cup quick pickled shallots (see notes)
Fresh ground black pepper for serving
2 tablespoons sherry vinegar ( (red wine vinegar may be substituted; see notes))
2 tablespoons extra virgin olive oil
1/2 - 1 teaspoon honey
1 teaspoon stone ground mustard
1/8 teaspoon kosher salt, (or to taste)
1/8 teaspoon ground black pepper, (or to taste)

Steps:

  • In a large bowl, combine the spring mix, strawberries, pecans, feta cheese, and quick pickled shallots, if using.
  • In a small bowl, whisk together the sherry vinegar, olive oil, honey, mustard, salt and pepper. Taste and adjust flavors if desired.
  • Add about 1/2 to 3/4 of the dressing to the salad ingredients and gently toss until evenly combined. Taste and add the remaining dressing, if desired.
  • Divide between 4 salad plates. Top each with some freshly ground black pepper. Serve immediately

1/3 cup canola oil
1/4 cup plus 3 tablespoons sugar, divided
2 tablespoons white vinegar
2 tablespoons grated onion
1/2 teaspoon ground mustard
1/4 teaspoon salt
1/2 cup pecan halves
2 heads leaf lettuce, torn
1 cup sliced fresh strawberries
1/2 cup shredded Monterey Jack cheese
1/3 cup sunflower kernels

Steps:

  • In a small bowl, whisk the oil, 1/4 cup sugar, vinegar, onion, mustard and salt until sugar is completely dissolved; set aside. , Place pecans in a small heavy skillet. Cook over medium heat for 1-2 minutes until nuts are toasted. Sprinkle with remaining sugar. Cook and stir for 2-4 minutes or until sugar is melted. Spread on foil to cool. Break apart., In a large serving bowl, combine the lettuce, strawberries, cheese, sunflower kernels and sugared pecans. Drizzle with vinaigrette; toss to coat.

For my wedding shower everyone brought a few recipes and this is one of my favorites. It is refreshing and pretty. This salad also travels well, just save the dressing and use it just before serving.

1 head romaine lettuce - rinsed, dried, and chopped
2 bunches fresh spinach - chopped, washed and dried
1 pint fresh strawberries, sliced
1 Bermuda onion, sliced
½ cup mayonnaise
2 tablespoons white wine vinegar
⅓ cup white sugar
¼ cup milk
2 tablespoons poppy seeds

Steps:

  • In a large salad bowl, combine the romaine, spinach, strawberries and sliced onion.
  • In a jar with a tight fitting lid, combine the mayonnaise, vinegar, sugar, milk and poppy seeds. Shake well and pour the dressing over salad. Toss until evenly coated.

I've served the salad with poultry, ham and pork all throughout the year and even used it to add color to the table at Christmas. Recently, when I brought this for a dinner at church, one lady asked if she could take home the little that was left for her husband's lunch the next day - and he very rarely eats salad or fruit. 1 egg white
1/4 cup and a pinch brown sugar
1 cup whole raw pecans
4 tablespoons extra-virgin olive oil
4 tablespoons aged-white balsamic vinegar
Sea salt and freshly ground white pepper, to taste
6 cups loosely packed mesclun greens
2 cups strawberries, halved

Steps:

  • Preheat the oven to 300 degrees F.
  • Line a baking sheet with parchment paper and set aside. In a big bowl, beat together the egg white and 1/4 cup brown sugar. Add the raw pecans and stir until the nuts are completely coated. Transfer the pecans onto a baking sheet in a single, even layer. Bake for 30 minutes.
  • In a jar with a tight-fitting lid, combine the extra-virgin olive oil, white balsamic vinegar, pinch of brown sugar, sea salt, and white pepper, to taste. Cover the jar and shake vigorously for 30 seconds to emulsify.
  • In a bowl, toss the mesclun greens, strawberries, and candied pecans with the vinaigrette.
