STRAWBERRY-ORANGE SOUP

2 cups yogurt
1/4 cup orange juice
1 tablespoon sugar
1 cup chopped mint leaves
2 cups sliced strawberries
2 tablespoons lime juice
2 tablespoons sugar
1 teaspoon chili powder

Steps:

  • In a bowl, whisk together 2 cups yogurt, 1/4 cup orange juice, 1 tablespoon sugar and 1 cup chopped mint leaves until mint is fragrant; strain and discard solids.
  • In another bowl, combine two cups sliced strawberries, 2 tablespoons lime juice, add 2 tablespoons sugar and 1 teaspoon chili powder; refrigerate bowls for 2 hours, stirring once
  • To serve, spoon yogurt onto strawberries and stir.
  • Garnish with whipped cream and mint.

1 pound fresh or frozen unsweetened strawberries, slightly thawed
1 1/2 cups orange juice
1/4 cup sugar
1 teaspoon grated peeled gingerroot
2 tablespoons lime juice (optional)

Steps:

  • In a food processor or blender, process all the ingredients until smooth.
  • If using fresh strawberries, cover and refrigerate for 1 hour to chill thoroughly. If using frozen strawberries, serve or cover and refrigerate until needed.
  • Serve this soup within 24 hours for peak flavor.

1 cup orange juice
2 cups fresh strawberries, hulled
2 teaspoons cornstarch
3/4 cup white grape juice
2 tablespoons seedless strawberry jam
2 teaspoons honey
Whipped topping and orange peel strips, optional

Steps:

  • In a blender, combine orange juice and strawberries; cover and process until blended. Press mixture through a fine meshed sieve; discard seeds. , In a large saucepan; combine cornstarch and grape juice until smooth. Stir in strawberry puree and jam. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Reduce heat; add honey. Simmer, uncovered, for 10 minutes. , Transfer to a bowl; cover and refrigerate until chilled. Garnish with whipped topping and orange peel if desired.
