STRAWBERRY AND MANDARIN SALAD
This is a fresh summer-time salad that is inexpensive and easy to make. This salad can be made up the day before and is always a crowd pleaser.

Steps:
- Heat a heavy-bottomed pan over medium heat. Stir the almonds and 3 tablespoons sugar together in the skillet; cook until the sugar has melted and coats the almonds; 15 to 20 minutes. Set aside.
- Whisk the vegetable oil, vinegar, hot sauce, 2 1/2 tablespoons sugar, salt, and pepper together in a bowl. Toss the spring mix, oranges, strawberries, celery, onion, and parsley together in a large mixing bowl; drizzle the vegetable oil mixture over the lettuce mixture and stir gently to coat. Sprinkle the toasted almonds over the salad to serve.

STRAWBERRY ORANGE AVOCADO SALAD
Strawberries, avocados and mandarin oranges come together beautifully with fresh baby greens and a tangy citrus dressing in this lovely salad! Perfect for spring or summer time entertaining. The light and tangy flavors pair perfectly with meat and poultry, especially those that are grilled and barbecued. The dressing is great over spinach salad, as well. Add chopped pecans for a little crunch, if you like. Slightly adapted from a recipe found at Wives with Knives.

AVOCADO AND MANDARIN ORANGE SALAD
Given to me by a society matron who used this as her "presentation salad" at luncheons. I recommend cutting back on the oil a bit.

Steps:
- Make dressing: Combine vinegar, oil, orange juice, mustard, orange peel, lemon juice, sugar, and salt.
- Drain mandarin oranges.
- Slice onions into very thin slices.
- Combine mandarin oranges, sliced avocados and onion rings.
- Cover orange/avocado/onion mixture with dressing and refrigerate.
- Immediately before serving, break up lettuce and spoon orange/avocado mixture over lettuce.
