STRAWBERRY LIQUEUR
This is being posted for the great strawberry recipe swap and for Rita who I know will perk up her ears when she sees it! I havent tried it and am not much of a liqueur person but the recipe says that it is a vivid red cordial with the fresh taste of strawberries.

Steps:
- Wash and stem the berries.
- In a bowl crush the berries and sugar together.
- Let stand for 1 hour.
- Transfer mixture to a clean 2 qt container.
- Add vodka, water, lemon juice, and zests.
- Cover and let stand in a cool dark place for 2 days, shaking several times each day.
- Press the mixture through a fine mesh sieve, discard solids.
- Transfer the liqueur to a clean container.
- Cover and let stand for 1 week.
- Filter into a decorative bottle with a tight fitting lid.
- Age for at least 1 month before serving.

FRESH STRAWBERRY PIE WITH ORANGE LIQUEUR GLAZE
Through trial, error and what I had in the house, I developed this easy glaze to make a yummy fresh strawberry pie -- almost easier than opening a container. Serve with sweetened whipped cream.

Steps:
- Preheat an oven to 400 degrees F (200 degrees C).
- Bake the pie crust in the preheated oven until puffed and golden-brown, 20 to 25 minutes. Remove to a wire rack and cool completely.
- Puree 1 cup of strawberries in a blender until smooth. Pour pureed strawberries into a saucepan. Stir in the water, sugar, and cornstarch. Bring to a boil over medium heat until thickened, stirring often. Remove from heat and stir in the orange liqueur. Set aside.
- Arrange the remaining 3 cups of strawberries decoratively in the prepared pie crust. Pour the glaze over the berries. Refrigerate until glaze is set, about 4 hours.

Fragolo is a very sweet Italian strawberry liqueur that is a great digestivo or after dinner drink. The liqueur not only tastes great but is a beautiful feast for the eyes. Very easy recipe...the hardest part is waiting 7 months for it to macerate. Be sure to shake it when you peek in on its progress. Pour it in an elegant bottle and seal with wax and give as a gift. Hopefully, your friend will share. A tablespoon in a pie crust or added to strawberry pie has phenomenal results.

- Rinse strawberries and hull.
- Place in a 2 Quart jar with tight fitting lid. Add the remaining ingredients, seal, and steep for a month in a dark place. Gently shake them once or twice a day during this period.
- After one month, pour the liqueur through a wire mesh strainer and into a bowl. Let the strawberries drain well. Strain again using a coffee filter or paper filter and then transfer the liqueur into a clear glass bottle.
- Cork the bottle, let it set for about 7 months.

- Hull the strawberries and lightly rinse them, then put them in a 2-quart glass jar. Add the other ingredients, seal the jar, and steep the strawberries for a month, gently shaking them once or twice a day. When you have finished steeping, remove the strawberries by gently pouring the liqueur through a wire mesh strainer and into a bowl. Let the strawberries drain well, then transfer the liqueur into a clear glass bottle, using a funnel and a piece of filter paper. Stopper the bottle, let it set for about 7 months, and it's ready.

Steps:
- Cut rhubarb and mix with strawberries and 14 cups of water in large stockpot.
- Boil for 30 minutes then strain off mash.
- Dissolve in sugar and let cool.
- Mix 4 cups prepared rhubarb juice with 2 cups water,2 T koolaid and 1/2 cup Everclear.
- Repeat until juice is gone.

- In a quart jar, add strawberries, 1 cup sugar, and vodka. (I use frozen berries as the freezing process breaks down the cell walls, allowing you to get more juice).
- Seal jar tightly, and place in a dry, dark place for about 2 weeks.
- After two weeks, strain the liquid using a double layer of cheese cloth. Gently squeeze the berries, getting as much juice from the berries as possible.
- In a fresh quart jar, add the second cup of sugar, glycerin, water to top and the strained liquid. Seal and store again in a dark place until sugar is dissolved.
- Once the sugar has all dissolved, bottle the resulting liqueur in a fresh bottle and let age for roughly 3 months.
