1 (3 1/2 ounce) box vanilla pudding mix
1/2 cup tapioca
1 (3 1/2 ounce) box strawberry gelatin
3 cups warm water
2 cups sliced fresh strawberries
1 (8 ounce) container Cool Whip, thawed

Steps:

  • In a saucepan mix together vanilla pudding mix, tapioca and strawberry gelatin. Stir in warm water. Cook over medium heat until thickened. Remove from the heat and chill in the refrigerator until slightly thickened but not set.
  • Stir in sliced strawberries; mix well. Fold in whipped topping until blended. Pour into a 9-inch square pan.
  • Refrigerate 4 hours or overnight.
  • Cut into squares to serve.

2 (4 ounce) packages vanilla tapioca pudding mix
1 (6 ounce) package strawberry Jell-O gelatin dessert
3 cups water
1 (8 ounce) container whipped topping, frozen and thawed
1 1/2 cups strawberries, fresh and sliced

Steps:

  • Mix tapioca pudding and Jell-O with the water and boil rapidly for 1 minute over medium heat, stirring.
  • Chill until thickened.
  • Fold in whipped topping & strawberries.
  • Pour into a 9x12" dish & refrigerate until firm.
  • Cut into squares to serve, if desired can put cut salad on a small lettuce lined plate.
  • It is also good using raspberry flavored Jell-O & raspberries in place of the strawberry.

1 (3 ounce) box strawberry-banana gelatin
1 (3 ounce) box banana cream instant pudding
1 (8 ounce) Cool Whip Lite
2 cups hot water
3 bananas, sliced
1 lb strawberry, sliced

Steps:

  • Mix hot water with puddings and Jell-O mix in a small saucepan.
  • Stir over medium high heat approximately 5 minutes.
  • Let cool on stovetop completely.
  • Stir in Cool Whip & fruit.
  • Transfer to large serving bowl.

We love this very berry tapioca after a meal. It's creamy and flavorful.

2 c strawberries, washed and hulled
1 c sugar
3 c boiling water
1/2 c quick cooking tapioca
1/4 tsp salt
2 tsp butter
1 tsp fresh lemon juice
1/4 tsp almond extract
1/8 tsp red food coloring (optional)
whipped cream and fresh mint leaves, for garnish

Steps:

  • 1. Puree the strawberries in a food processor bowl with 1/2 cup of the sugar or place the berries and sugar in a bowl and use a potato masher to crush; set aside.
  • 2. In a large saucepan, combine the boiling water, tapioca, and salt; allow mixture to stand for 10 minutes. Cook, stirring frequently, over medium heat for 15 minutes or until the tapioca is clear. Stir in the remaining sugar and the butter.
  • 3. Remove the pan from the heat and whisk in the lemon juice, almond extract, and food coloring. Then stir in the strawberries, mixing well.Chill for several hours, then serve in small bowls, garnish with whipped cream and fresh mint leaves.

I got this from a co-worker's wife (Thanks, Kris). It is so easy and delicious. Not to mention you can use fat-free cool whip, sugar free strawberry jell-o to help make it a little less sinful.

3 c boiling water
1 box strawberry jell-o (small box)
2 box tapioca pudding
8 oz cool whip
1 pkg frozen sliced strawberries (thawed and drained)

Steps:

  • 1. Bring to a boil - 3 cups of water.
  • 2. Stir in Strawberry Jell-o, and both small boxes of Tapioca.
  • 3. Cook over medium heat until thick (3-5 minutes).
  • 4. Cool mixture so the heat won't melt down the Cool Whip in the next step.
  • 5. Blend in 8 ounces of Cool Whip.
  • 6. Add in Frozen Strawberries and then place in fridge to set up and enjoy!
  • 7. To dress it up a bit, once dessert is set up, place a few sliced strawberries on top with a dollop of Cool Whip!

  • Add jello and sugar and stir until dissolved.
