STRAWBERRY SUN TEA

Black tea brewed in the sunshine with a strawberry muddle mixed in.

6 quarts of water
6 tea bags
1 cup granulated sugar
3 pounds strawberries, divided
6 tablespoons granulated sugar
Large pitcher
3 pounds strawberries, divided
6 tablespoons granulated sugar

Steps:

  • In a 2 gallon or larger pitcher, pour in water and place tea bags in the water. Stir in 1 cup sugar. Cover and place tea in the sun for about 4 to 5 hours to steep.
  • Meanwhile, set aside ½ pound of strawberries for garnish. With the remaining strawberries, hull and crush about 3 cups strawberries with a potato masher in a large bowl. Hull and slice the remaining strawberries and add them to the mashed strawberries. Add 6 tablespoons sugar and stir to combine. Cover and set in the refrigerator until the sun tea is done.
  • Remove the tea bags and stir tea with a wooden spoon. At this point you can either pour the strawberry compote into the tea or serve the compote into individual glasses. Serve over ice and enjoy.

Strawberry Mint Sun Tea image

Refreshing and healthy too! This works best on a summer sunny day! In the winter I just make this by heating the water to boiling, then steeping the tea bags for 10-20 minutes. Adapted from the Heart & Stroke Foundation.

6 cups cold water
4 caffeine-free herbal berry tea bags
2 sprigs mint leaves
24 frozen whole strawberries
24 ice cubes
sugar or honey

Steps:

  • Place the cold water in a large clear glass pitcher or jar.
  • Add the tea bags and the mint leaves.
  • Cover with a small dish towel or washcloth, large enough to keep debris and bugs out.
  • Place the tea in direct sunlight for 4 to 5 hours.
  • Divide the strawberries and ice between six tall glasses.
  • Discard the tea bags and mint.
  • Sweeten to taste with sugar or honey.
  • Pour the tea into the glasses and serve. Enjoy!
