  • Put the rest of the strawberries in a blender.
  • Add vanilla, lemon juice, and sugar and puree.
  • Pour into a tall champagne glass.
  • Fill glass with ice cold champaign.
  • Cut an opening in the bottom of the remaining strawberry and slide on edge of glass.

The champagne works magic on these lemon bars, giving them a luscious flavour that sets them apart from other lemon squares. The strawberry topping is the piece de resistance. Cook time does not reflect chill time.

1 cup unsalted butter, at room temperature
1 cup sugar
2 cups flour
1/4 teaspoon salt
2 fresh lemons, zest of
1/2 cup strawberry jam (optional)
6 large egg yolks
6 large eggs
1 3/4 cups sugar
1 cup fresh lemon juice
1/2 cup champagne or 1/2 cup brut sparkling wine
3/4 cup chilled unsalted butter
1 pint fresh strawberries, hulled
1/2 cup sugar

Steps:

  • To make the crust, preheat the oven to 375°F Coat a 9x13-inch baking pan with cooking spray.
  • Using a mixer fitted with a paddle attachment, beat the butter and sugar in a large bowl about 3 minutes, until creamy.
  • Add the flour, salt and zest. Beat just until incorporated.
  • Press the dough evenly into prepared pan. Bake for 12-15 minutes until golden brown.
  • Let cool about 10 minutes. Spread the jam evenly over the cooled crust.
  • Leave oven at 350°F.
  • Whisk the egg yolks for the filling with the eggs, sugar, lemon juice and champagne in a large bowl set over a pan of simmering water. (make sure the water does not touch the bottom of the bowl).
  • Cook about 15 minutes, whisking occasionally, until the mixture thickens. Cut the cold butter into bite sized pieces.
  • Whisk the butter, one piece at a time into the lemon mixture. Cook about 10 minutes longer, whisking occasionally. The mixture will be thick and puddinglike.
  • Pour the fillng over the prepared crust and bake for 10-12 minutes. Refrigerate the bars at least 2 hours over overnight. (If you are in a hurry they will get sufficiently cold after 1 hour in the freezer).
  • Slice the strawberries thinly and arrange them in a single layer over the top of the lemon filling. Sprinkle the sugar evenly over top of the berries.
  • Use a kitchen torch to melt the sugar until it is brown and crackly, or put the bars under a hot broiler for about 1 minute, until the sugar melts and browns. Watch carefully.

1 1/2 cups sugar
1 tablespoon baking powder
1/2 teaspoon kosher salt
1 cup fresh strawberries
3 eggs
1 cup extra-dry champagne
1/2 cup butter, melted
1/2 cup vegetable oil
4 cups heavy whipping cream
8 large marshmallows
2/3 cups powdered sugar
Champagne Simple Syrup, recipe follows
1/2 cup extra dry champagne
1/2 cup sugar

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Line 2 muffin pans with 18 to 19 cupcake liners.
  • Sift together the flour, sugar, baking powder, and salt in a medium bowl.
  • Place the strawberries in a food processor and process until pureed. Measure out 1/2 cup of the puree, and reserve the extra for the frosting.
  • In the bowl of a stand mixer with a paddle attachment, mix the strawberry puree, eggs, Champagne, butter, and vegetable oil on medium speed until incorporated, about 2 minutes. Turn the mixer to medium-low speed, and add the dry ingredients a little bit at a time, making sure to scrape down the sides of the bowl if necessary. Mix until just combined.
  • Fill the cupcake liners 3/4 of the way full, and bake until a toothpick inserted in the center comes out clean, 20 minutes. Cool the cupcakes completely.
  • For the frosting: In the bowl of a stand mixer with a whisk attachment, whip the heavy whipping cream on high speed until soft peaks form, about 4 minutes. (While whipping the cream, place a washcloth over the mixer to prevent splatters on countertop.)
  • While the cream is whipping, melt the marshmallows in a heat-proof bowl in the microwave on high for 15 seconds. Stir with a rubber spatula, and plop the melted marshmallows into the whipping cream once the soft peaks are reached. Continue to whip until stiff peaks are formed. Turn the speed to medium and add the sugar and 1/4 cup reserved strawberry puree. Whip until all the ingredients are incorporated, about 30 seconds.
  • To assemble: With a pastry brush, brush the tops of the cooled cupcakes with the Champagne Simple Syrup. Place the frosting in a piping bag with a tip of your choice, and pipe a large dollop or multiple swirls on the tops of the cupcakes.
  • In a medium saucepan over medium-high heat, stir the Champagne and sugar together with a wooden spoon until the sugar has completely dissolved. Reduce the heat to medium, and continue to cook until the mixture has reduced to about half and can line the back of the spoon, about 5 minutes.
  • Allow to cool slightly.

Mix in grapefruit juice, then Champagne. Pour mixture into 8-inch square metal baking pan. Freeze mixture until firm, stirring every 2 hours, about 6 hours. (Can be made 2 days ahead. Cover; keep frozen.)
  • Mix remaining 1/2 cup sugar and lemon peel in pie plate. Spread 1/2 teaspoon mascarpone around pointed tip half of each whole strawberry. Dip in lemon sugar to coat mascarpone.
  • Moisten rims of 6 Martini glasses with water; dip rims into remaining lemon sugar. Scrape fork across surface of granita to form ice shavings. Mound granita in glasses. Garnish with sugared berries and serve immediately.

1/3 cup vegetable oil
3 eggs

1 bag (12 oz) white vanilla baking chips, melted, slightly cooled
1 cup powdered sugar
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 2 (8-inch) heart-shaped or round cake pans with baking spray with flour.
  • In large bowl, beat cake mix, champagne, oil and eggs with electric mixer on low speed 30 seconds or until combined; beat 2 minutes on medium speed. Divide batter evenly between cake pans.
  • Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool cakes in pans 15 minutes. Remove cakes from pans to cooling racks; cool completely, about 1 hour.

Steps:

  • Make 4-5 cuts along the length of the strawberry, starting from the pointed end until just before the stem end. Fan the slices apart with your fingers, and set aside.
  • Separate the cotton candy into two balls. Cut a slit in the center and push the fanned strawberry inside, sealing up the hole afterwards.
  • Slice half of the lime into rounds, saving the other half for later. Make a single cut on each lime slice, starting from the center and cutting through the rind.
  • In a large pitcher or jug, mix the vodka and rose. Squeeze the juice from reserved lime half into the mixture, then add champagne.
  • Place the strawberry-stuffed cotton candy balls into two separate martini glasses.
  • Place the lime slices on the side of the glass.
  • Pour the drink mixture around the sides of the cotton candy in a circular motion, and watch it dissolve to reveal the strawberry inside!

1 1/2 cups fresh grapefruit juice
1 1/2 cups dry Champagne
1/2 cup fresh lemon juice

Steps:

  • Combine 3/4 cup sugar and 3/4 cup water in heavy small saucepan. Stir over medium heat until sugar dissolves. Increase heat and boil 1 minute. Cool. Refrigerate syrup until cold, about 45 minutes.
  • Puree enough strawberries (about 6 large) in blender to yield 1/2 cup puree. Transfer strawberry puree to large bowl. Mix grapefruit juice, Champagne, lemon juice and chilled syrup into strawberry puree. Pour mixture into 13x9x2-inch metal baking pan.
  • Freeze Champagne mixture until icy at edge of pan, about 55 minutes. Whisk to distribute frozen portions evenly. Freeze again until icy at edge of pan and overall texture is slushy, about 40 minutes. Whisk to distribute frozen portions evenly. Cover and freeze until mixture is solid, about 3 hours.
  • Meanwhile, slice remaining strawberries. Place in large bowl and toss with remaining 1/4 cup sugar and 1/4 cup Grand Marnier. Cover with plastic wrap and refrigerate at least 30 minutes and up to 3 hours.
  • Using fork, scrape granita down length of pan, forming ice flakes. (Granita can be prepared up to 2 days ahead of time. Cover and freeze until ready to serve.) Divide sliced strawberries equally among 6 wineglasses. Top with granita and serve immediately.

½ cup champagne, vegan-friendly, or sparkling wine

Steps:

  • Prepare the coconut cream by whipping the coconut cream and icing sugar together, until you form soft peaks.
  • Leave to chill in the fridge until set, for about 30 minutes.
  • Meanwhile, preheat the oven to 180°C (350˚F) and line a cupcake tray with 12 cases.
  • Make the cupcakes by mixing the coconut oil, maple syrup, and almond milk together.

1 lemon, juice of

1 oz walnuts, finely chopped
4 oz honey chevre cheese (available at Trader Joe's)
1/3 cup Champagne-Pear Vinaigrette (available at Trader Joe's)
1 package baby spinach
1/2 small red onion, sliced into very thin half-rings
1 cup strawberries, hulled and sliced

Steps:

  • 1. Place walnuts in a shallow dish. Divide chevre into 12 equal portions, rolling to form 12 balls. Roll each ball in the walnuts until well-coated. Set walnut-crusted chevre balls aside. 2. Combine spinach, red onion, and vinaigrette in a large mixing bow; toss gently to coat evenly. Divide spinach mixture evenly among 4 salad plates or shallow bowls. 3. Top each serving with 1/4 cup strawberries and 3 chevre balls. Serve immediately. Makes 4 servings. Each serving = 4 Weight Watchers points.

1/2 cup sugar
1/4 cup champagne
3 tablespoons strawberry jelly (you can use preserves too but the texture will be different)
1 tablespoon water
1 tablespoon cornstarch
1 pint strawberry, stemmed and halved

Steps:

  • Mix together sugar, champagne and jelly in a saucepan.
  • Stir over medium heat and cook until the sugar dissolves and the mixture begins to lightly boil.
  • Mix water with corn starch in a separate bowl to form a paste.
  • Stir into the saucepan.
  • Cook on medium heat until slightly thickened.
  • Mix in strawberries and cook until heated and slightly softened.
  • Serve over ice cream, sorbet or shortcake with whipped cream.

10 ounces champagne
2 pints strawberries, washed,cleaned of stems,and halved
4 ounces water
8 ounces orange juice
1/2 cup sugar
1 cinnamon stick
1/4 teaspoon kosher salt
8 green peppercorns
2 tablespoons honey
1 tablespoon lemon juice

Steps:

  • Bring water, orange juice, sugar, cinnamon stick, salt, honey and green peppercorns to a simmer.
  • Let stand for one hour.
  • Strain mixture through a fine-meshed strainer and pour over the strawberries.
  • Put the strawberries in a blender.
  • Puree until mixture is smooth.
  • Stir in the lemon juice and champagne.
  • Serve chilled.
