STRAWBERRY-RHUBARB BREAD PUDDING
This delicious bread pudding recipe combines the classic combination of strawberry and rhubarb with a hint of zip from crushed gingersnaps and a crunchy texture from toasted cashews.

Steps:
- Beat eggs, milk, white sugar, vanilla extract, and lemon juice in a bowl. Combine bread cubes, gingersnap crumbs, strawberries, rhubarb, and cashews in a separate bowl. Pour egg mixture over the bread cube mixture, stir to moisten, and let stand 10 minutes.
- Grease a 9x13-inch baking dish and pour the bread mixture into the dish. Press down on the mixture to slightly compact the bread cubes and make a smooth top; cover dish and refrigerate 1 hour.
- Preheat oven to 375 degrees F (190 degrees C).
- Stir flour, rolled oats, brown sugar, and melted butter in a bowl until mixture is crumbly; spread oats mixture over the bread pudding. If necessary, lightly press topping onto the bread mixture. Cover dish with aluminum foil.
- Bake in the preheated oven until the bread pudding is set, 40 to 45 minutes. Uncover, return to oven, and bake until pudding puffs up and begins to brown on top, 15 to 20 more minutes. Let cool for 30 minutes before serving.

BREAD PUDDING WITH RASPBERRY/STRAWBERRY TOPPING
This is a great desert fit to serve any company. The Raspberry/Strawberry Topping is the key to this recipe. From the Hacienda Antigua Bed & Breakfast altered a tad to our liking. Prep time does not include letting the bread set overnight.

Steps:
- Blend all of the Custard ingredients together.
- Prepare a 9x13 inch pan lightly sprayed with a vegetable oil sray and lined with 1 inch slices of French bread.
- Leave the pan of bread (covered but not sealed tightly) overnight to dry on the counter.
- In the morning, preheat over to 350 degrees.
- Pour the custard over the bread.
- Decorate with a scattering of cinnamon powder and bake for 30 to 45 minutes.
- For the topping.
- Heat the mixture in a sauce pan until it boils. Puree and serve warm over the bread pudding.
- Serve with mixed fresh fruit in season.

- 1. Preheat oven to 350°F. 2. Whisk milk, eggs and vanilla in large bowl to blend. Fold in rhubarb, strawberries, and bread cubes and let stand for 15 minutes. Put pudding mixture in a 9-inch springform pan. 3. Bake bread pudding until tester inserted into center comes out clean, about 40 minutes. 4. While bread pudding is baking, combine compote ingredients in a saucepan and simmer over medium low heat until reduced and thickened to a soup jam consistency. Remove from heat. 5. Remove bread pudding from oven, let cool. When ready to serve, run a knife around the edge of the pan to loosen the sides. Remove ring from pan. 6. Slice bread pudding like a cake and serve with compote and a dab of clotted cream (or other dairy).
STRAWBERRY BANANA BREAD PUDDING
Steps:
- Preheat oven to 375 degrees F.
- Spray bottom of an 8 by 4 by 3-inch loaf pan with nonstick spray. Stir 1 1/4 cups strawberries, banana bread mix, eggs, oil and milk in a large bowl to blend. Transfer batter to prepared pan. Bake until a toothpick inserted into center of bread comes out clean, about 50 minutes. Cool 15 minutes in pan. Remove bread from pan.
- Meanwhile, stir remaining 3/4 cup strawberries (with syrup), berry yogurt, and plain yogurt in medium bowl to blend. Cover and refrigerate until ready to serve.
- Cut bread crosswise into slices and then into cubes. Transfer cubes to plates. Top with dollop of yogurt mixture and serve.
LOW-FAT BUTTERMILK BREAD PUDDING WITH STRAWBERRY SAUCE

- To make the bread pudding:
- Preheat oven to 325°F. Whisk eggs and sugar to blend in large bowl. Beat in both milks and vanilla. Add bread and let stand 5 minutes. Transfer mixture into 7x11-inch baking dish. Sprinkle top of bread pudding lightly with nutmeg. Place baking dish in large pan. Add enough water to pan to come 1 inch up side of baking dish. Bake until pudding is set in center, approximately 1 hour 15 minutes. Cool completely. Serve with Strawberry Sauce.
- To make the strawbwerry sauce:
- Puree strawberries in blender or processor until smooth. Add enough lemon juice to season to taste. Add enough sugar substitute to sweeten to taste. (Can be prepared 4 days ahead; chill.)
- Makes about 1 3/4 cups.

- Cut croissants into 1/2 inch pieces and place into a greased 13x9 inch baking dish.
- In medium mixing bowl, beat eggs, milk, sugar, and both extracts. Pour mixture over croissants and set aside for 10 minutes.
- Dot with almond paste and sprinkle almonds on top croissants. The baking dish will be full so handle carefully and place in 350 degree oven. Bake for 35 to 40 minutes or until inserted knife in center comes out clean.
- While this is baking prepare Strawberry Caramel Sauce. Over medium heat in heavy saucepan cook sugar and stir with wooden spoon. Continue cooking and stirring until sugar is melted and a deep amber color, approximately 20 minutes. Stir in one cup of cream and the mixture will bubble. Add remaining cream and cook 10 to 15 minutes or until caramelized sugar is completely dissolved. Remove pan from heat and stir in strawberries. Serve over bread pudding.

- Add jello mix, sugar and oil.
- Mix well.
- Add pudding mix, vanilla and milk.
- Beat for 3 minutes with electric mixer.

- Heat oven to 350 degrees with rack in the middle of oven. Lightly butter one side of all the bread with 4T of softened butter. Set the bread, buttered side up, on a large baking sheet and bake for 15 minutes or until lightly toasted.
- Meanwhile, hull and thickly slice strawberries. Put them in a bowl and sprinkle with 2 T sugar. Toss and set aside.
- When bread is toasted, reduce oven temperature to 325 and set a large roasting pan half filled with water on the middle rack to act like a water bath. Trim the crusts off the bread and slice diagonally in half to form triangles.
- Use the remaining 1 T butter to grease a 9x12 inch baking dish. Line the sides of the dish with pieces of bread, points up. Line the bottom of the dish with more bread. Stand the remaining bread, points up, wedged between the bottom slices. (Don't worry if there are some spaces in between the slices or if the pieces standing up are a bit leaned over).
- Scatter almonds and chocolate chips over the bread and between the slices. Lift the strawberries with a slotted spoon, leaving the juices behind, scatter them around the dish.
- In a large saucepan heat the half and half and the remaining 1 Cup of sugar over moderate heat, stirring to dissolve the sugar, until the mixture is hot but not boiling.
- In a medium bowl, beat the whole eggs and egg yolks to blend. Whisk in vanilla. Remove the hot half and half from heat and immediately whisk into the eggs. Pour custard through a sieve into the baking dish. Set the dish in the rasting pan and bake for 35-40 minutes or until custard is set.
- Remove from water bath and serve warm, room temp or chilled.

BREAD PUDDING WITH STRAWBERRY SAUCE
Steps:
- Preheat the oven to 350 degrees F.
- Whisk the eggs in a large bowl, then add the milk, honey, orange zest, vanilla and cinnamon. Whisk until well combined. Put the bread cubes in the bowl and toss with the egg mixture until all the liquid is absorbed.
- Divide the bread mixture among four 8-ounce creme brulee ramekins and transfer to a baking sheet. Sprinkle the tops of the bread pudding with the raw sugar and bake until golden brown, about 25 minutes.
- In a large skillet over high heat, melt the butter until bubbling. Add the strawberries and sprinkle in the granulated sugar. Toss the strawberries over high heat and add the orange juice. Reduce the heat to medium and simmer for 3 to 5 minutes.
- Serve the sauce with the bread pudding.

- In a small sauce pan combine undrained strawberries and cornstarch.
- Cook and stir over medium heat until mixture thickens and bubbles.
- Spread evenly over bottom of 11 x 7 baking dish that has been sprayed with cooking spray.
- In a mixing bowl combine eggs, milk, sugar, butter, vanilla and salt.
- Add bread cubes to moisten.
- Spread evenly over strawberry mixture.
- Bake at 350 degrees for 50-55 minutes.
- Serve warm with cream.
