STRAWBERRY BASIL MOJITO
It's cocktail time and I've got a Strawberry Basil Mojito with your name on it! Fresh strawberries and a gentle basil flavor make this my favorite mojitos recipe. It's lightly sweetened and beautifully fragrant and perfect for a hot summer's day. It's also super easy to make a big batch for easy summer entertaining.

- Add the rum, strawberry simple syrup, lemon juice, and basil leaves in a cocktail shaker or mason jar filled with ice. Shake then pour into a glass.
- Top the glass with soda water and garnish with strawberries and basil.

- For the strawberry-basil puree: To make the simple syrup, heat the sugar and 2 cups water in a saucepan over medium heat, stirring as needed, until the sugar has completely dissolved. Set aside and allow to cool completely.
- Add half of the strawberries, lime juice and basil to the bowl of a food processor. Pulse until you reach a consistency that makes you happy. I do 10 to 15 pulses, which leaves a good bit of texture. Transfer to a pitcher or container. Repeat with the other half and add to the same container. Pour in the room temperature simple syrup, mix and chill for at least 30 minutes.
- For the strawberry-basil mojitos: Pour 1/2 cup of the strawberry basil puree into each glass. Top with 2 ounces of your favorite light rum, add ice and stir gently to combine. Top off each glass with a splash of soda. Garnish each drink with a stalk of basil and a lime wedge.
LEMON-BASIL MOJITO MOCKTAILS

- In a small saucepan, bring sugar and water to a boil. Cook and stir until sugar is dissolved. Place half the basil in a small bowl. With a pestle or wooden spoon, crush basil until its aroma is released. Stir into sugar mixture. Remove from heat; cool completely. Strain; refrigerate until cold., Place 2 cups crushed ice and remaining basil in a 4-qt. pitcher. Using a muddler or a wooden spoon, press basil leaves against ice until their aroma is released. Stir in basil syrup and soda. Serve over crushed ice in tall glasses; squeeze lemon wedges into drink.

I had this drink at a popular chain restaurant and decided to try it at home. I have served it at a couple different gatherings now and it has always been given rave reviews. It's the perfect drink for a hot summer day!

- Pour 1/4 to 1/2 inch of sugar onto a small, shallow plate. Run one of the lime quarters around the rim of each cocktail glass, then dip the glasses into the sugar to rim; set aside.
- Squeeze all of the lime quarters into a sturdy glass pitcher. Toss the juiced limes into the pitcher along with the mint, strawberries, and 1 cup of sugar. Crush the fruits together with a muddler to release the juices from the strawberries and the oil from the mint leaves. Stir in the rum and club soda until the sugar has dissolved. Pour into the sugared glasses over ice cubes to serve.

We're right in the middle of bountiful strawberry season. We eat strawberries on everything in the summer, don't you? Did you know that most strawberry farmers have to use organic growing conditions ANYWAY to get strawberries to grow, even if their farm is not certified organic? And that frozen, fresh, organic or not, just EAT THEM anyway you can get them in your body. The nutritional value is the same. I'm sharing one of my favorite items from a Strawberry Get-Together with you. Cuz it's awesome. And because a lot of people have been bugging me for this recipe.

- Combine lime juice and basil leaves in the bottom of a highball glass; use a wooden spoon to muddle the basil.
- Stir in rum and strawberries.
- Fill glass with ice cubes and top with club soda.
- Garnish with a lime slice and a whole strawberry, and serve.
- Makes 1 cocktail.
