STRAWBERRY-BANANA BREAD
Bananas and strawberries play nicely together in this sweet and tart quick bread.

- Preheat the oven to 350 degrees F. Grease a 9- by 5-inch loaf pan.
- Roughly chop 1/2 cup of the walnuts, and finely chop the remaining 2 tablespoons, keeping them separate.
- Whisk together the flour, sugar, roughly chopped walnuts, baking powder, cinnamon, nutmeg and salt in a medium bowl.
- Whisk together the oil, eggs, vanilla and zest. Fold in the bananas and strawberries. Fold the oil mixture into the flour mixture until just combined (it's OK if there are some lumps). Transfer the batter to the prepared pan, and sprinkle the top with the finely chopped walnuts.
- Bake until the bread is golden brown and a toothpick inserted in the center comes out clean, 1 hour to 1 hour 10 minutes. Run a knife around the edges, and let cool completely in the pan on a rack. The bread can be stored at room temperature in an airtight container for up to 3 days.

STRAWBERRY BANANA BREAD

- Preheat the oven to 350 degrees F. Grease an 8-by-4-inch loaf pan with butter and line the bottom and 2 sides with parchment paper.
- In a medium bowl, combine the flour, baking powder, baking soda and salt. In a large bowl, cream together the granulated sugar and eggs. Stir in the mashed bananas, oil and vanilla. Stir in the flour mixture a third at a time and mix until just combined. Remove 1 cup batter to a separate bowl and stir in the strawberry preserves and half of the freeze-dried strawberries.
- Pour the plain batter into the prepared pan, alternating occasionally with a spoonful of the strawberry batter. Use a skewer to swirl the batters. Bake until a clean skewer inserted in the center comes out mostly clean (some moist crumbs should stick to it), about 1 hour 15 minutes. Let cool completely, then remove the bread from the pan.
- Mix together the confectioners' sugar, lemon juice and remaining freeze-dried strawberries in a small bowl. Drizzle the mixture over top of the banana bread before serving.

- In a medium bowl, mix the cream cheese, 1 tablespoon of honey, and strawberries until smooth.
- Microwave the cream cheese mixture in 30 second intervals for a total of 5 minutes, stirring between each interval. This helps cook out the moisture so that the mixture doesn't create a large pocket of steam in the bread.
- Preheat oven to 350°F (180°C).
- In a bowl, mash the bananas with a fork.
- Add the eggs and mix until well combined and frothy.
- Add the Greek yogurt and honey, and mix until incorporated.
- Sprinkle in the whole wheat flour, baking soda, and baking powder, and fold the batter together with a spatula.
- Pour ¾ of the banana bread batter into a greased loaf pan, smoothing it into an even layer with the spatula.
- Pour in the cream cheese filling, making sure to keep it away from the edge of the pan.
- Pour the remaining banana bread batter over the cream cheese filling and smooth the top with a spatula.
- Bake for 50-55 minutes, until the top springs back when lightly touched.
- Let the pan cool for 15 minute before removing the loaf from the pan.
- Allow the bread to cool at least 1 hour before slicing and serving.

- Heat oven to 350°F. Grease or spray bottom only of 9x5-inch loaf pan.
- In 1-quart saucepan, heat butter over medium heat, stirring occasionally, until golden brown. Remove from heat; pour through strainer into small bowl to remove blackened bits.
- In large bowl, beat butter and sugar with electric mixer on medium speed 2 minutes. Stir in eggs until combined.
- Add bananas, buttermilk and vanilla; stir until smooth. Add flour, baking soda and salt; stir until just combined. Fold in strawberries. Pour into pan.

- Preheat oven to 375 degrees F.
- Spray bottom of an 8 by 4 by 3-inch loaf pan with nonstick spray. Stir 1 1/4 cups strawberries, banana bread mix, eggs, oil and milk in a large bowl to blend. Transfer batter to prepared pan. Bake until a toothpick inserted into center of bread comes out clean, about 50 minutes. Cool 15 minutes in pan. Remove bread from pan.

BROWNED BUTTER BUTTERMILK BANANA BREAD WITH STRAWBERRY BUTTER

- Bread - Preheat oven to 350F. Spray two 8-by-4-inch loaf pans with floured cooking spray; set aside. Bread may be baked in one 9-by-5-inch pan at your own risk; or bake as muffins, mini loaves, or in a Bundt pan, adjusting baking times accordingly. In a heavy-bottomed large pot or skillet, melt 1/2 cup butter over medium-low heat, stirring nearly continuously or swirling the pan. Butter will melt, foam, turn clear, golden, turn brown, and will then smell nutty. As soon at the butter begins to turn brown, take the pan off the heat, and continue to stir for about 1 minute, to ensure carryover heat doesn't continue to cook and subsequently burn the already browned butter. - Preheat oven to 350°. Grease a 9X4X11 in loaf pan and place a piece of parchment paper on the bottom of the pan.
- Beat together the sugars and butter until light and fluffy. Add in the eggs, one at a time, incorporating well after each addition then add the vanilla extract. Peel and mash bananas. Stir into the butter mixture. Add the flour, nutmeg cinnamon until just combined. Do not over-beat.
- Pour mixture into pan and bake for 1 hour, 15 minutes until a toothpick inserted into the bread comes out clean. Remove from the oven and let stand for 5 minutes before turning out onto a wire rack.
- Made the compote while bread is baking by mixing the first four of the compote ingredients together in a medium sized pan and bringing to a boil Add fruit and return to a boil. Remove from heat, pour into a heatproof bowl, and let cool.
- Serve slices of banana bread with a spoonful of mascarpone or yogurt and spoon over either warm or cold compote. Fish with a light dusting of confectioners' sugar.
BROWN BUTTER BANANA STRAWBERRY BREAD

- Place a rack in the center of the oven and preheat to 350 degrees F. Grease and flour a 9×5-inch loaf pan and set aside. Melt butter in a saucepan over medium heat. Butter will begin to foam and crackle as it melts. When the crackling subsides, the butter will begin to brown. Swirl the pan as the butter cooks. When the butter browns and begins to smell nutty, remove the pan from the flame and transfer the butter to a small bowl. Taking the butter out of the hot saucepan will stop the butter from overcooking and burning. Set aside to cool. In a large bowl, whisk together flour, sugar, baking soda, salt, and cinnamon. In a medium bowl, whisk together eggs, vanilla extract, and yogurt or buttermilk. Whisk in the mashed bananas. When butter has cooled, whisk in the browned butter. Add the wet ingredients, all at once to the dry ingredients. Fold together, making sure to scrape the bottom of the bowl to reveal any hidden pockets of flour. Fold in the diced strawberries. Fold together ingredients, but try not to over stir. Spoon batter into prepared pan and top with thinly sliced strawberries. Bake for 50 minutes to 1 hour, or until a skewer inserted into the center of the loaf comes out clean. Remove from the oven and allow to rest in the pan for 15 minutes, before inverting onto a wire rack to cool completely.

- 1. Prepare a 9 x 5 inch bread pan with cooking spray. I always line the bottom with parchment for easy removal. Spray parchment as well. Preheat oven to 350 degrees.
- 2. Sift flour sugar salt and baking soda into large bowl.
- 3. In medium bowl, combine mashed bananas, vanilla, yogurt and 3 T fat free milk
- 4. Slowly combine the wet ingredients into the dry ingredients. Batter will be thick. Once they are combined gently stir in strawberries.
- 5. Pour into the prepared bread pan. Bake for 60-65 minutes. Bread is done when toothpick is inserted into the middle and comes out clean. Top should be golden brown.
- 6. Cool in pan for 10 minutes then turn out onto a cooking board to cool completely. Serve with butter!

- Mash bananas in large bowl. Add hulled strawberries and mash as well.

- Preheat oven to 350°F. Grease 9-inch loaf pan with cooking spray. (I love Trader Joe's Coconut Oil spray.) In a large bowl, whisk together flour, baking powder, baking soda, and salt; set aside. In a separate large bowl, beat together banana, brown sugar, egg, coconut oil vanilla, yogurt, and almond milk until smooth and creamy. Slowly add dry mixture to wet ingredients, and mix until combined. Gently fold strawberries, raspberries, coconut and chia seeds into the batter. Place batter in prepared loaf pan. Sprinkle top evenly with 3 tablespoons of coconut. Place sliced strawberries over the top of the bread. Bake for 50-65 minutes or until toothpick inserted into center comes out clean. Cool on wire rack for 20 minutes, then remove from pan and return to wire rack to finish cooling. Bread is even better the next day (they always are). Bread will stay fresh for a few days when wrapped tightly. I love this bread with strawberry jam and peanut butter.

SLOW COOKER STRAWBERRY BANANA BREAD
I have been staying in a motel with no stove or oven. I have become a pro at slow cooking and have found you can cook about anything in it. This recipe is wonderful. Hope you enjoy.

- 1. Mash bananas and strawberries.
- 2. Combine fruit, margarine, sugar and eggs.
- 3. Stir into the fruit mixture the baking soda and banana extract.
- 4. Add flour and nuts and stir until all combined.
- 5. Spray with non stick cooking spray the bottom of your slow cooker. Mine is a 4qt round slow cooker.
- 6. Pour half of the batter in the bottom. Using a spoon or rubber spatula to spread evenly over the bottom.
- 7. Take 2 paper towles and set on the mouth of the slow cooker and place the lid on top of the. ( The paper towels absorb and condensation through the baking process).
- 8. When finished run a knife along the edge to losen the loaf then place a plate on top and flip the cooker releasing the bread.
- 9. Spray again and pour the remaining batter into the slow cooker and repeat the process.
- 10. Slice and serve.
