This is a great recipe using ingredients already stocked in your cabinet and one my husband said was knock you to your knees delicious. Serve with fresh whipped cream and enjoy.

- In a saucepan, stir together the sugar and water. Bring to a boil, and cook for about 10 minutes, or until it becomes syrupy. Mix in the nutmeg and cinnamon, and remove from the heat. Stir in the vanilla. Allow to cool for a few minutes, then pour over sliced strawberries.

- Mix strawberry puree, sugar, cornstarch, lime zest, lime juice, and salt in a bowl.
- Melt butter in a saucepan over medium-low heat. Remove from heat and stir in strawberry mixture until well combined. Add egg yolks, stir, and return to heat.
- Cook over low heat, stirring constantly, until strawberry curd coats the back of a spoon and is slightly thickened, 8 to 10 minutes.

- Using a vegetable peeler, pare the zest from 1 lime in long strips. Shave away any white pith from the back of the zest (this can make it bitter), then put the zest in a medium pan. Squeeze both of the limes and add the juice to the pan with 3 tbsp water, the sugar and the crushed and whole peppercorns. Heat gently until the sugar dissolves, boil, then take off the heat.
- Spread out the strawberries in a serving dish, then pour over the hot syrup and allow to cool. As this happens, the syrup will become rosy pink. Serve at room temperature with scoops of ice cream.

STRAWBERRIES IN BALSAMIC PEPPER SYRUP

- In a mixing bowl, whisk the honey and vinegar until well-blended. Stir in the pepper. Add the strawberries and stir gently to coat with the syrup. Let stand for 5 to 10 minutes at room temperature. Stir in the banana. Serve the fruit and syrup in shallow dessert bowls or stemmed goblets.

When local strawberries are in season, they are best served with a very simple presentation - like this one. Smaller varieties of strawberries are generally better. Our local pick-your-own farmer is very frank: "The big ones are in this field, the good ones are in that field." I am always amazed that plenty of people will settle for the big ones, just because they are faster to pick. Fuggedaboudit! Life is too short to pick strawberries fast. Get the good ones.

- Wash the strawberries, and hull them, and cut them in half if they are large.
- (Which they are not, right? See above.) Put them in the bowl from which they are to be served.
- Grate the zest from the lime, and put it in a small saucepan (or a small microwaveable bowl) with the honey, the lime juice, and the ginger.
- Heat the mixture, stirring constantly, and as soon as the honey is dissolved and the syrup is hot, pour it over the strawberries.
- Mix them gently.
- Chill them, and serve them cold.
- Cream is nice but by no means required.

- Preheat oven to 350°. Line a 13x9-in. baking pan with nonstick foil; set aside. In a large bowl, beat cracker crumbs, flour, butter and 1/2 cup sugar until combined. Press onto bottom of prepared pan. Bake until lightly browned, 10-15 minutes. Cool on a wire rack., In a large bowl, beat egg yolks and cream cheese until smooth. Beat in milk and lime juice until blended. Stir in 1 tablespoon lime zest and vanilla paste; pour over cooled crust. Alternately arrange strawberries and peaches in closely spaced rows over filling. Combine cinnamon and remaining 2 tablespoons sugar; sprinkle over fruit., Bake until custard looks set, 20-25 minutes. Cool completely on a wire rack. Cover and refrigerate at least 2 hours or overnight. Sprinkle with remaining 1 tablespoon lime zest; cut into bars.

- In a small saucepan, bring the first 6 ingredients to a boil. Reduce heat; simmer 20 minutes. Remove from heat. Cool completely. Strain through a fine-mesh strainer into a small bowl (do not press berries). Refrigerate syrup until chilled. To serve, for each serving fill a tall glass with ice. Add 1/2 cup wine, 1/2 cup club soda and 1/4 cup strawberry syrup. If desired, garnish with additional tarragon.
