STRACCIATELLA SOUP

6 cups reduced-sodium chicken broth
2 large eggs
2 tablespoons freshly grated Parmesan
2 tablespoons chopped flat-leaf parsley
2 tablepoons chopped fresh basil leaves
1 cup lightly packed spinach leaves, cut in thin strips
Salt and freshly ground black pepper

Steps:

  • Bring the broth to a boil in a large saucepan over medium-high heat. In a bowl, whisk the eggs, cheese, parsley, and basil to blend. Reduce the heat to medium-low. Stir the broth in a circular motion. Gradually drizzle the egg mixture into the moving broth, stirring gently with a fork to form thin strands of egg, about 1 minute. Stir in the spinach, then season the soup, to taste, with salt and pepper.
  • Ladle the soup into bowls and serve.

Stracciatella is often referred to as 'Italian egg drop soup,' which is fine, but knowing the name actually means little, torn rags or shreds works so much better metaphorically. When you've been run ragged, stracciatella is always there for you. As you eat this, hopefully with some nice crusty bread, imagine all those little 'rags' floating in the bowl are all your torn-up problems, both real and imagined. They were there, and then they were gone. You just won--with soup.

3 large eggs

Steps:

  • Bring broth to a simmer in a pot over high heat. Taste broth and adjust salt and pepper as needed.
  • Whisk eggs, parsley, semolina flour, grated Parmigiano Reggiano and pecorino Romano cheeses, salt, pepper, cayenne pepper, and nutmeg together in a bowl until well blended.
  • While stirring the simmering broth, slowly pour egg mixture into the broth. Bring mixture back up to a simmer. The liquid will be slightly cloudy initially and clear as broth heats.
  • Serve in bowls; garnish with a drizzle of olive oil and a pinch of red pepper flakes.

  • Bring chicken stock to a simmer in a medium-size saucepan.

1 (3 pound) whole chicken
3 quarts water
11 carrots
6 stalks celery
2 onions
½ cup uncooked white rice
6 ounces baby spinach, chopped
½ cup grated Romano cheese
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon dried oregano
1 tablespoon lemon juice
3 (14 ounce) cans chicken broth
4 eggs, lightly beaten

Steps:

  • Cut up chicken into large pieces and place in a large soup pot with the water. Chop 8 carrots, 3 stalks of celery and 1 onion and place them in the pot as well. Bring to a boil, then cover, reduce heat and simmer 45 minutes, until chicken is tender. Remove chicken and reserve stock. When cool enough to handle, bone chicken and cut meat into bite-size pieces.
  • Process reserved stock in a blender or food processor or using an immersion blender and return it to the pot with the chicken meat. Chop the remaining 3 carrots, 3 stalks of celery and 1 onion and stir into the chicken mixture with the rice. Bring to a boil, then reduce heat and simmer until rice is tender, about 20 minutes.
  • Remove chicken mixture from heat and stir in spinach, Romano, salt, pepper, lemon juice and oregano. Set aside.
  • In large saucepan, bring chicken broth to a boil. Pour the eggs into the boiling broth, slowly, in a thin stream. Remove the broth from the heat and stir it into the chicken mixture. Serve hot.

1 (12-inch) length of crusty baguette, halved lengthwise, then cut crosswise into thirds
Extra-virgin olive oil for brushing bread
2 cups water
3 cups reduced-sodium chicken broth (24 fl oz)

1 (10-oz) package frozen chopped spinach (not thawed)
1 oz finely grated Parmigiano-Reggiano (about 1/2 cup) plus additional for serving

Steps:

  • Put oven rack in lower third of oven and preheat oven to 400°F.
  • Brush cut sides of baguette with oil. Arrange, cut sides up, on a baking sheet and bake until golden, about 10 minutes.
  • Meanwhile, heat water with broth, salt, and pepper in a 2- to 2 1/2-quart saucepan over moderate heat until hot. Stir in frozen spinach and cheese and simmer, covered, stirring occasionally, until spinach is just tender, about 8 minutes.

TOMATO STRACCIATELLA

Stracciatella is like an Italian egg drop soup. This particular version is adapted from one of my favorite cookbooks, "Cooking From an Italian Garden," by Jon Cohen and Paola Scaravelli. I'd never seen a stracciatella with tomatoes until I came across this recipe.

1 tablespoon extra virgin olive oil
3 to 4 plump garlic cloves, minced
1 14-ounce can chopped tomatoes, or 1 1/2 cups grated tomatoes
Salt to taste
1 basil sprig
2 quarts vegetable broth or chicken stock
4 eggs
1/4 cup bread crumbs or semolina
6 tablespoons freshly grated Parmesan
2 tablespoons finely chopped parsley
2 tablespoons finely chopped basil or chives
Freshly ground pepper
Optional: Cooked soup pasta for serving

Steps:

  • Heat the olive oil over medium heat in a large, heavy soup pot or Dutch oven. Add the garlic. Stir until fragrant, about 30 seconds. Add the tomatoes and basil sprig. Cook, stirring, until the tomatoes have cooked down slightly and smell fragrant, about 10 minutes. Season to taste, and add the vegetable or chicken stock. Bring to a simmer, cover and simmer 20 minutes. Season to taste with salt and pepper.
  • In a large mixing bowl, beat together the eggs, bread crumbs or semolina, Parmesan, parsley and basil or chives. Beat until frothy.
  • Bring the soup to a boil, and slowly drizzle in a thin stream of the egg mixture, stirring constantly. After the mixture has been added, reduce the heat and simmer five minutes. Taste and adjust seasonings. Add a spoonful of cooked soup pasta to the bowl if desired.

Tendrils of quickly cooked eggs, seasoned with cheese, nutmeg and pepper, float in a meaty stock in this traditional Italian soup. To avoid clumps that make the dish seem more like failed scrambled eggs than a delicate broth, pour the egg mixture into the hot stock in a thin stream, whisking as you go and promptly pulling it off the heat when done. In the dead of winter, when warmth is elusive and colds seem to be overtaking everyone, there's nothing better.

Steps:

  • Set a large Dutch oven or soup pot over medium-high heat. Add oil. When it shimmers, add the onions and a generous pinch of salt. Reduce heat to medium. Stirring occasionally, cook onions for 10 to 15 minutes until tender. It's fine if they start to take on a little color.
  • In a large measuring cup or medium bowl with a spout, thoroughly whisk together the eggs, ½ cup grated Parmesan, nutmeg, black pepper, and a generous pinch of salt.
  • When onions are tender, add Parmesan rind and stock to pot. Increase heat to high and bring to a boil. Reduce to a strong simmer. While gently whisking soup with one hand, pour egg mixture into pot in a thin stream with the other. Once all of the egg mixture has been added, turn off the heat. Remove Parmesan rind. Taste and adjust for salt.

1 1/2 quarts chicken or turkey stock
Salt
freshly ground pepper to taste
2 large or extra large eggs
1 1/2 tablespoons semolina
1/3 cup freshly grated Parmesan (1 1/2 ounces)
1 6-ounce bag baby spinach, or 1 bunch spinach, stemmed, washed, dried and coarsely chopped

Steps:

  • Place the stock in a large saucepan or soup pot. Remove 1/3 cup and set aside. Bring the rest to a simmer. Season to taste with salt and freshly ground pepper. If there is any visible fat, skim it away.
  • Beat the eggs in a bowl, and stir in the 1/3 cup of stock, the semolina and the cheese.
  • Stir the spinach into the simmering stock, then drizzle in the egg mixture, scraping all of it in with a rubber spatula. Stir very slowly with the spatula, paddling it back and forth until the little "rags" form. Taste, adjust seasoning and serve at once.

FRESH STRACCIATELLA

1 tablespoon kosher salt (17 grams)
1 pound mozzarella curd, broken into small pieces
1 cup heavy cream
1 baguette, sliced into 1-inch-thick slices
1/2 cup extra-virgin olive oil, plus more for garnish
2 cloves garlic, cut in half
1 ripe tomato, cut in half
Flaky sea salt
Freshly cracked black pepper

Steps:

  • Making mozzarella: In a large pot, bring 2 quarts water and the kosher salt to a boil. Remove from heat and let cool to 180 degrees F.
  • Add mozzarella curd to a large bowl and bring to room temperature. When the water has cooled to 180 degrees F, ladle it onto the curd. The curd will begin to look like shaggy mozzarella. Using a wooden spoon, stir and stretch the cheese until it forms a cohesive ball and takes on a "plastic" texture.
  • Shaping mozzarella: Place half of the whey water (the salted water that turned the cheese curd into mozzarella) in another large bowl and chill to 80 degrees F. Meanwhile, work the mozzarella that's in the remaining warm whey water into 1 large ball. Knead and stretch the ball of cheese until there are no more lumps. Once the cheese is smooth, pull off a 4-inch section and put it into the second bowl containing the cooled whey water. Repeat this process with the remaining cheese.
  • Making stracciatella: Take each of the sections of the mozzarella out of the cooled water and pull apart the strands (like string cheese). Put all of the pulled strands of cheese into a mixing bowl and add the heavy cream. Gently stir to make stracciatella. Set aside.
  • Preheat oven to 400 degrees F. Place baguette slices on a baking sheet. Drizzle olive oil over the slices and place in the oven to toast, about 10 minutes. Remove from oven and, while still warm, rub cut side of garlic over the toasted bread. Then rub the bread with the cut side of tomato while gently squeezing the tomato halves. Top slices with a generous spoonful of stracciatella followed by a drizzle of olive oil, flaky sea salt and freshly cracked black pepper.

1 vanilla bean, split lengthwise
3/4 cup sugar
5 large egg yolks
Pinch of kosher salt
1/2 cup chilled heavy whipping cream
1/3 cup bittersweet chocolate chips
2 teaspoons vegetable oil

Steps:

  • Place milk in a medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring to a simmer, whisking often. Whisk sugar, yolks, and salt in a medium bowl until well blended, about 1 minute. Gradually whisk hot milk mixture into yolk mixture. Return to saucepan; stir over medium-low heat until custard thickens and a thermometer registers 170°F-175°F, about 5 minutes (do not boil). Strain into a medium bowl. Stir in cream. Chill custard until cold, at least 2 hours.
  • Stir chocolate and oil in a small sauce-pan over low heat until melted; let cool.
  • Process custard in an ice cream maker according to manufacturer's instructions. Slowly add all but 1 tsp. melted chocolate during the last 30 seconds of churning (chocolate will form small chips). Transfer to a bowl. Drizzle remaining chocolate over gelato in zigzag lines. Serve immediately.

3 tablespoons cornstarch
4 cups whole milk
1/2 cup sugar
1/4 cup nonfat dry milk powder
1/4 cup light corn syrup
1/8 teaspoon kosher salt
1/2 cup heavy whipping cream
2 to 4 ounces dark chocolate, cut into pieces

Steps:

  • Fill a large bowl with ice water and set a smaller bowl inside. Set a fine-mesh strainer in the smaller bowl. Whisk the cornstarch and 1 cup of the milk together in a medium bowl until the cornstarch dissolves. Combine the sugar, milk powder, corn syrup, salt, and the remaining 3 cups of milk in a medium (4-quart) saucepan over high heat. Whisk to break up and dissolve the milk powder and heat the milk until it just begins to bubble. Turn off the heat and gradually add the milk-cornstarch mixture, whisking constantly. Return the heat to high and bring the milk back to a boil. Reduce the heat to medium high and cook, stirring constantly with the whisk, until the gelato base thickens slightly, 4 to 5 minutes. It will get viscous but will not thicken enough to coat the back of a spoon.
  • Pour the gelato base through the strainer into the bowl set over the ice water and set aside to cool to room temperature. Transfer the base to an airtight container and refrigerate for at least several hours and up to three days.
  • Place a medium stainless steel bowl in the freezer. Remove the base from the refrigerator, pour it into a separate bowl, and stir in the cream. Pour the base into the bowl of an ice cream maker and spin it according to the machine instructions.
  • Set a stainless steel bowl over a pot of water or fill the bottom of a double boiler with water, making sure the water doesn't touch the top vessel, and bring the water to a simmer over medium heat. Add the chocolate to the bowl or double boiler and let it melt, without stirring. Turn off the heat.
  • Take the stainless steel bowl out of the refrigerator. Spoon the gelato out of the ice cream maker into the bowl. Use a spoon to drizzle one-quarter of the melted chocolate over the gelato in thin strands. Use a large metal spoon or metal spatula to break up the chocolate strands and fold them into the gelato. Drizzle another quarter of the chocolate over the gelato and cut it into the gelato in the same way. Continue until you've used all of the chocolate. Cover the bowl and return the gelato to the freezer to firm slightly before serving. Serve it within a few hours of spinning it, before it hardens.

2 tablespoons extra-virgin olive oil
2 leeks (white and light green parts), thickly sliced
3 carrots, chopped
8 cups low-sodium chicken broth
1 pound skinless, boneless chicken thighs, trimmed and cut into thirds
1/2 cup pearl barley
1 head escarole, trimmed and roughly chopped (about 6 cups)
3 large eggs
1/2 cup grated Parmesan cheese
Kosher salt and freshly ground pepper
Juice of 1/2 lemon
1/4 cup chopped fresh parsley

Steps:

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the leeks and carrots and cook until just beginning to soften, 1 to 2 minutes. Add the chicken broth, chicken thighs and barley. Cover the pot, increase the heat to high and bring to a rapid simmer. Uncover, reduce the heat to medium and simmer until the chicken is cooked through, about 16 minutes.
  • Remove the chicken to a bowl. Add the escarole to the pot. Shred the chicken with two forks and return to the pot. Simmer until the barley is tender, about 12 more minutes.
  • Whisk the eggs in a medium bowl. Whisk in the Parmesan, 1/4 teaspoon salt and a few grinds of pepper. Stir the soup slowly in a clockwise direction and slowly drizzle in the egg mixture. Once you've added all the egg, remove the soup from the heat; season with salt and pepper. Stir in the lemon juice and parsley.

1/3 cup Parmesan cheese, grated (plus more for garnish, if desired)

2 cloves garlic, minced
1/2 lemon, zest and juice

Steps:

  • Chop fresh spinach and set aside.
  • Whisk eggs, salt, pepper, and Parmesan cheese together and set aside.
  • Bring chicken broth, lemon juice, lemon zest, and garlic to a boil; add chopped spinach and mix to incorporate.
  • When broth is boiling, add eggs in a steady, slow stream, whisking broth rapidly to break eggs up as they are incorporated into the broth.
  • When all eggs are blended with broth, reduce heat to a simmer and cook for an additional 2 to 3 minutes.
  • Serve immediately; garnish with additional Parmesan cheese if desired.

2 tablespoons cornstarch
1 cup water
3 cups low-sodium low-fat chicken broth (24 fl oz)
2 teaspoons finely grated fresh lemon zest
1/2 teaspoon salt
1 large egg, lightly beaten
1 cup firmly packed shredded spinach leaves

Steps:

  • Stir together cornstarch and 1/4 cup water until smooth.
  • Bring broth and remaining 3/4 cup water to a boil in a 2- to 3-quart heavy saucepan over high heat, then reduce heat to moderately high and add zest and salt.
  • Stir cornstarch mixture and add to soup, whisking until smooth. Simmer, whisking, 2 minutes, then add egg in a slow stream, stirring with a spoon. Stir in spinach and return to a boil, then remove from heat. Season with salt.

A marriage made in heaven! I love Italian wedding soup, and I love Stracciatella, so when I found this recipe at "The Food of Love", it was love at first sight--or, rather, love at first bite! This is great comfort food. You can make the meatballs with ground chicken or beef or turkey or sausage. For the greens you can use either spinach or escarole. And, for the pasta you can use either acine de pepe -or- orzo. Recipe makes enough to serve 2-3 people, but is easily doubled or even tripled.

1 slice white bread, crust removed
1/4 cup milk
garlic clove, minced
6 ounces ground turkey
1 tablespoon olive oil
1 egg yolk
2 teaspoons fresh parsley, minced
salt and pepper
4 cups chicken broth
2 ounces orzo pasta
1/2 bunch fresh Baby Spinach
1 egg
1 tablespoon water
2 tablespoons grated parmigiano
2 tablespoons chopped fresh parsley
salt and pepper

Steps:

  • Make the Meatballs:.
  • Place the bread in a bowl and pour the milk over it. Let it soak for 5 minutes.
  • While the bread soaks, saute the garlic in the olive oil until translucent.
  • Add the garlic in oil, the ground turkey, the egg yolk, the parsley, and salt and pepper to the bowl. Use a fork to gently mix together--the less you handle the meat, the lighter the meatballs will be.
  • Divide mixture into 12 equal parts and form into balls.
  • Bring broth to a simmer and gently drop in the meatballs. Simmer 5-10 minutes, just until cooked through. Remove from the broth with a slotted spoon and set aside; keep warm.
  • Make the Soup:.
  • Return the broth to a boil and add the orzo. Cook for 10 minutes.
  • When orzo is almost done, add the spinach and return the meatballs to the soup. Add parsley.
  • For the Stracciatella:.
  • Break the egg into a small bowl, add the water, and stir briefly. Stir in the grated parmigiano cheese.
  • Quickly stir the soup, then drizzle in this egg-cheese mixture slowly so that the heat of the soup will quickly form the mixture into cooked strands.
  • To Serve:.
  • Season soup to taste with salt and pepper.
  • Ladle into warmed bowls and serve immediately.
