Spinach Balls image

This is one of those recipes that you cut out and tucked away always intending to make it sometime. Well,after years of holding on to it I was looking through clippings and decided to make them....I had to ask myself afterwards what I waited so long for!! These are so good and when I had taken them to a family get together they...

Number Of Ingredients 7

1 box herb stuffing mix(make as directed on package)
2 box frozen spinach(thawed and rinsed until all water removed)
1 small onion(chopped)
4 4 eggs(beaten)
2/3 c butter or 10 and 2/3 TBLS.(melted)
1/2 tsp garlic powder
1/2 c grated parmesan cheese

Steps:

  • 1. Prepare herb stuffing mix according to package instructions.
  • 2. Then thaw spinach and remove excess water.
  • 3. I rolled it up in several paper towels and squeezed well until all moisture was removed.
  • 4. In a bowl place butter in microwave until melted.
  • 5. Remove and add chopped onion,4 eggs beaten, garlic powder, parmesan cheese.
  • 6. Mix well and then add stuffing mix and spinach.
  • 7. Chill for 45 minutes and then roll into walnut size balls.
  • 8. Lightly grease cookie sheet.
  • 9. Bake for 30 minutes or until lightly browned.
