SHRIMP STIR FRY RECIPE WITH GARLIC & GINGER



Shrimp Stir Fry Recipe with Garlic & Ginger image

Other vegetables that you can easily add to this recipe: snow peas, canned straw mushrooms (halved), canned baby corn (cut small pieces), fresh bean sprouts, red bell pepper (julienned), julienned carrots. If you add more ingredients, increase the amount of seasoning and garlic/ginger/green onion.

2 tablespoons oyster sauce
2 tablespoon soy sauce
2 tablespoons fresh cilantro (minced (optional))
2 teaspoons cornstarch
1 pound shrimp (peeled and deveined (tails left intact optional))
2 tablespoons cooking oil (divided)
3 green onion (chopped (white and light green parts))
2-3 garlic cloves (finely minced)
2 teaspoons grated fresh ginger (use microplane grater)

Steps:

  • In a small bowl, combine oyster sauce, soy sauce and cilantro and set aside.
  • Pat the shrimp very dry with paper towels. In a medium bowl, add shrimp and cornstarch and toss to coat.
  • In a wok or large saute pan over high heat, add half the cooking oil and swirl to coat the bottom of the pan. When the wok is very hot, add the shrimp in a single layer and cook partially until one side is nicely seared, about 1 minute. Flip and sear the other side of each shrimp, about one more minute. They don't need to be cooked all the way through yet. Remove them to a plate and set aside.
  • Turn the heat down to medium and let wok cool off a bit to prevent the aromatics from burning. Add the remaining cooking oil and add green onion, garlic and ginger and stir fry for a minute until fragrant. [If you are using other vegetables, like snow peas, add them to the wok now and stir fry for a minute or until the vegetables are bright in color and crisp-crunchy]
  • Pour in the sauce mixture and add the shrimp back into the pan. Stir fry for another minute or so until shrimp is cooked through. Serve immediately.

The real shrimp fried rice, restaurant style. This is how I used to cook fried rice when my father still owned a restaurant.

1 ½ cups uncooked white rice
3 cups water
4 tablespoons vegetable oil
1 cup fresh bean sprouts
½ cup chopped onion
1 ½ cups cooked medium shrimp, peeled and deveined without tail
¼ cup chopped green onion
2 eggs, beaten
1 teaspoon salt
¼ teaspoon ground black pepper
4 tablespoons soy sauce
¼ teaspoon sesame oil

Steps:

  • In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Set aside and allow rice to cool.
  • Heat a large skillet or wok for 2 minutes. When the skillet or wok is hot, pour in vegetable oil, bean sprouts and onions. Mix well and cook for 3 minutes.
  • Mix in cooled rice and shrimp and cook for another 3 minutes. Stirring constantly.
  • Mix in green onions, eggs, salt, pepper, soy sauce and sesame oil. Cook for another 4 minutes, stirring continuously, until eggs are cooked and everything is blended evenly.

Peanut oil to cook
1/2 cup thinly sliced scallions
1 tablespoon minced ginger
1 tablespoon sliced garlic
1 pound bean sprouts, hair removed
Salt and black pepper to taste

Steps:

  • In a very hot wok, coat well with oil and add scallions, ginger and garlic. Season and stir. Quickly add the bean sprouts and stir-fry, flipping the sprouts around quickly. Check for seasoning. Serve immediately. May serve with rice.

1/2 pound shrimp
1 pound bean sprouts
1 tablespoon preserved sweet pickle
1 clove garlic
1 or 2 slice fresh ginger root
2 tablespoons sherry
1 teaspoon sugar
1 teaspoon soy sauce
1 tablespoon cornstarch
3 tablespoons water
dash pepper
1 teaspoon soy sauce
2 tablespoons oils
1/2 teaspoon salt
1/2 cup Stock, Chicken or favorite stock

Steps:

  • 1. Shell, devein and butterfly shrimp. (Leave tail segments intact.) 2. Blanch bean sprouts. Shred sweet pickles. Crush garlic. 3. Mince ginger root then combine in a cup with sherry, sugar and soy sauce. In a second cup, blend cornstarch, cold water, pepper and remaining soy sauce to a paste. 4. Heat oil. Add salt, then garlic, and stir-fry to brown lightly. Add shrimp stir-fry until pinkish. 5. Add ginger-sherry mixture stir-fry 1 1/2 minutes more. 6. Add bean sprouts and pickles and stir-fry another minute. 7. Stir in stock and heat quickly. Then cook, covered, 1 to 2 minutes over medium heat. 8. Stir in cornstarch paste to thicken and serve at once. VARIATION: * For the bean sprouts, substitute any of the following: 1 pound broccoli, broken in flowerets and parboiled 1 pound string beans, cut in 2-inch lengths and parboiled or 1/2 pound snow peas. 2 tablespoons vegetable oil, divided
1 pound brussels sprouts, trimmed and shredded
Salt and pepper
1 cup bean sprouts
2 cloves garlic, thinly sliced
1 small green chile, such as Thai, thinly sliced
3 scallions, white and green parts separated and thinly sliced
1 pound medium shrimp (41 to 50), peeled and deveined (tails left on)
2 teaspoons toasted sesame oil
Lime wedges, for serving

Steps:

  • In a large skillet or wok, heat 1 tablespoon vegetable oil over medium-high. In 2 batches, saute brussels sprouts until tender, 5 minutes total; season with salt and pepper. Transfer to a platter. Add bean sprouts to pan and cook until heated through, 1 minute; add to platter.
  • Wipe out pan, add remaining tablespoon vegetable oil, and return to heat. Add garlic, chile, and scallion whites and cook until fragrant, 30 seconds. Add shrimp, season with salt and pepper, and saute until opaque throughout, about 4 minutes. Add to platter, drizzle with sesame oil, top with scallion greens, and toss. Serve with lime wedges.
