2-1/2 teaspoons cornstarch
1/3 cup reduced-sodium soy sauce
1/4 cup white wine or reduced-sodium chicken broth
2 teaspoons sesame oil
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
1/2 cup reduced-sodium chicken broth
2 tablespoons sugar
1 tablespoon Worcestershire sauce
3/4 teaspoon chili powder
3 ounces uncooked thick rice noodles
4 teaspoons canola oil, divided
3 cups fresh broccoli florets
2/3 cup chopped green onions
3 garlic cloves, minced
2 teaspoons minced fresh gingerroot
1/4 cup unsalted dry roasted peanuts

Steps:

  • In a small bowl, combine the cornstarch, soy sauce, wine or broth and sesame oil until smooth. Pour 1/4 cup marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 20 minutes. Add the broth, sugar, Worcestershire sauce and chili powder to remaining marinade; set aside. , Cook rice noodles according to package directions. Meanwhile, drain and discard marinade from chicken. In a large nonstick skillet or wok, stir-fry chicken in 2 teaspoons canola oil until juices run clear; remove and keep warm. , Stir-fry broccoli in remaining canola oil for 5 minutes. Add the onions, garlic and ginger; stir-fry 3-5 minutes longer or until broccoli is tender. Return chicken to the pan. Stir reserved broth mixture and stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain noodles; toss with chicken mixture. Garnish with peanuts.

8 ounces thin rice noodles
3 tablespoons vegetable oil
8 thin-cut boneless pork chops (1/4 inch thick; about 1 1/4 pounds total)
Kosher salt and freshly ground pepper
1/4 cup soy sauce
2 tablespoons sambal oelek, plus more for serving
1 2-inch piece fresh ginger, peeled and sliced into matchsticks
4 scallions, sliced (dark green parts separated)
4 ounces shiitake mushrooms, sliced
2 small carrots, thinly sliced on an angle
4 ounces snap peas, halved lengthwise

Steps:

  • Cook the noodles as the label directs. Drain and set aside. Meanwhile, coat a baking sheet with 1 tablespoon vegetable oil. Generously season the pork chops with salt and pepper and arrange in an even layer on the pan. Whisk together the soy sauce and sambal oelek in a small bowl.
  • Preheat the broiler. Heat the remaining 2 tablespoons vegetable oil, the ginger and the white and light green scallion parts in a large nonstick skillet over medium-high heat. Add the mushrooms and cook, stirring, until nearly tender, about 5 minutes. Add the carrots and snap peas; cook until crisp-tender, about 4 minutes. Add the noodles and sambal sauce and cook, tossing, until the noodles are warmed through and well coated, about 2 minutes.
  • Broil the pork chops until charred, 3 to 4 minutes per side. Divide the noodle mixture among bowls. Top with the pork chops, scallion greens and more sambal oelek.

7 ounces thin rice stick noodles (1/2 of a 14-ounce package)
1/2 cup chicken or vegetable broth
1 tablespoon soy sauce low-sodium if desired or wheat-free tamari
1 tablespoon Shao Hsing rice wine or dry sherry
1 tablespoon minced garlic
1 tablespoon minced ginger
1/4 teaspoon red pepper flakes or 1 to 2 teaspoons minced jalapeño
2 tablespoons peanut oil or canola oil
2 eggs, beaten
3/4 pound (2 medium) baby bok choy, trimmed, washed and dried, cut in 1-inch lengths
1 1/2 cups cherry tomatoes, halved
Salt to taste
1/2 teaspoon sugar
1 cup coarsely chopped cilantro can include stems, plus additional sprigs for garnish
2 teaspoons sesame oil

Steps:

  • Place the noodles in a large bowl and cover with warm water. Soak for at least 20 minutes, until soft. Drain in a colander and, using kitchen scissors, cut into 6-inch lengths. Set aside within reach of your wok or pan. Combine the broth, soy sauce, and rice wine or sherry in a small bowl. Combine the garlic, ginger, and pepper flakes or minced jalapeño in another bowl. Have everything within reach of your wok or pan.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in 2 teaspoons of the oil by adding it to the sides of the pan and swirling the pan. Make sure that the bottom of the wok or pan is coated with oil and add the eggs, swirling the pan so that the eggs form a thin pancake. Cook 30 seconds to a minute, until set. Using a spatula, turn the pancake over and cook for 5 to 10 more seconds, until thoroughly set, then transfer to a plate or cutting board. Season to taste. Allow to cool, then roll up and cut into strips 1/4 inch wide. Place near the wok.
  • Swirl the remaining oil into the wok or pan and add the garlic, ginger and chili. Stir-fry no more than 10 seconds, until fragrant, and add the bok choy. Stir-fry for 1 minute, until it is bright green and the leaves are wilted, and add the broth mixture, the drained noodles, and the tomatoes. Reduce the heat to medium and stir-fry 1 to 2 minutes, until the noodles are just tender and the tomatoes are beginning to soften. Add the cilantro and egg shreds, and the salt and sugar, and stir-fry another 30 seconds to a minute, until well combined. Add the sesame oil, stir together, and serve, garnished with cilantro sprigs if desired.

2 dried mushrooms
1 1/2 cups warm water
1/2 cup leftover chicken and/or pork adobo meat, shredded (or shredded rotisserie chicken)
1 tablespoon red or white wine (optional)
3 tablespoons vegetable oil, divided
4-6 cloves garlic, minced
1 small to medium onion, cut into slivers
1-2 celery ribs, chopped
1 small red bell pepper, seeded and cut into thin strips
1/4 cup fresh shrimp, peeled and deveined, or dried shrimp
1/4 cup soy sauce, plus a dash for serving
1 medium carrot, cut into thin strips
1 chayote or zucchini, cut into thin strips, or 1/2 head broccoli or napa cabbage, chopped
1/2 pound bihon (dry rice noodles) (see Note)
1/2 teaspoon freshly ground black pepper
Dash freshly squeezed calamansi (or lime) juice, for serving (optional)

Steps:

  • Soak the mushrooms in the warm water for at least 20 minutes. Drain the mushrooms, reserve the soaking liquid, and thinly slice the mushrooms. Combine the adobo and wine (if using) in a bowl.
  • Heat 2 tablespoons of the oil in a large skillet or wok over medium heat until it shimmers. Add the garlic and stir-fry until light gold. Add the onion and cook, stirring occasionally, for about 2 minutes, or until translucent. Stir in the celery and bell pepper. Cook, stirring occasionally, for 2 minutes. Add the adobo. If you are using fresh shrimp, add them, too. Cook, stirring, for about 1 minute. Remove from the heat and set aside.
  • Pour the reserved mushroom soaking liquid into a saucepan and add the soy sauce, mushrooms, carrot, and chayote. If you are using dried shrimp, add those, too. Bring the mixture to a boil over high heat. Add the noodles and toss with the rest of the ingredients. As the noodles become tender, separate them until they are able to mix evenly with the veggies, about 3 minutes.
  • When the noodles have completely absorbed the liquid and are chewable, stir in the celery, bell pepper, and adobo mixture. Season with the black pepper and mix thoroughly. Pour in the remaining 1 tablespoon oil. Reduce the heat to low to gently fry the noodles for about 2 minutes. Serve with an extra dash of soy sauce and calamansi juice, if using.

4 ounces julienned Spanish onion
1 pound boneless pork loin, trimmed and cut into 1 1/2 inch strips
4 ounces soy sauce
2 pints white chicken stock
1/2 ounce oyster sauce
14 ounces carrots, washed, peeled and cut julienne
14 green cabbage, washed and finely cut chiffonade
8 ounces Chinese sausage, cut into narrow strips, about 1 1/2 inches long
1 pound rice noodles, soaked in warm water (to cover) for 20 minutes
Salt and ground white pepper
3 scallions, washed, trimmed, and coarsely chopped, as a garnish

  • In a wok, heat oil over medium-high heat. Add garlic and onions and stir-fry until translucent.

2 tablespoons fresh serrano peppers or 2 tablespoons jalapeno chiles, coarsely chopped
1 tablespoon coarsely chopped garlic
1 tablespoon sugar
1/4 teaspoon salt
black pepper (to taste)
3 tablespoons fish sauce
2 teaspoons soy sauce
2 -4 tablespoons vegetable oil
1/4 lb ground pork (may also use ground beef, turkey or chicken)
3 cups dried wide rice noodles
3/4 cup fresh basil leaf (may also use or mix with mint)
5 cherry tomatoes, quartered (may use more)

Steps:

  • Boil the noodles until tender to your liking, then drain and set aside till needed.
  • Set up a little system of bowls to help you when you cook.
  • Place the garlic in one and the chiles in another.
  • Mix the sugar, salt and pepper in a third bowl.
  • Mix the fish sauce and the soy sauce in a fourth bowl and keep them all near your wok or frying pan.
  • Heat the oil in your pan until nice and hot then add the garlic.
  • In about 30 seconds, when it sizzles nicely and starts to turn golden (but before it burns), add the peppers and stand back a little.
  • Stir them for 30 seconds or so more until they get really fragrant (you'll know when).
  • Add the pork and cook until it browns, breaking up the meat as it lumps.
  • Sprinkle in the sugar from the bowl to season the meat, and toss until it is mixed.
  • Pour in the fish/soy from its bowl and stir quickly while it thickens just a bit, usually about 1 minute or so.
  • Add the rice noodles to the pan and toss and turn them to mix the meat into them, using your tools to break up any spots that may try to clump (add a little oil if they clump badly).
  • Stir in about 3/4 of the basil and cook just till it begins to wilt, then add the tomatoes and remove the pan from the heat.
  • Mix once, and pour on a serving platter.
  • Garnish with the rest of the basil and serve hot, with sambal oelek, or sriracha sauce, if desired.

I like to use golden or Chioggia beets for this stir-fry. Whatever beets you use, slice them very thin; for best results use a mandolin. Use a wok, not a pan, for stir-fried noodles as noodles will spill out of a pan. Tongs are a good tool for stirring and tossing the noodles, but a long-handled spatula will also work.

1/2 cup chicken stock or vegetable stock
1 tablespoon soy sauce (more to taste)

  • Beat eggs in a bowl and season with a little salt. Heat a 14-inch flat-bottomed wok over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in 2 teaspoons of oil by adding it to the sides of the wok and swirling the wok. Make sure that the bottom of the wok is coated with oil and add beaten eggs, swirling the wok so that the eggs form a thin pancake. Cook 30 seconds to a minute, until set. Using a spatula, turn pancake over and cook for 5 to 10 more seconds, until thoroughly set, then transfer to a plate or cutting board.   • Swirl remaining oil into wok and add garlic, ginger, and pepper flakes or chile. Stir-fry no more than 10 seconds and add beets and leeks. Stir-fry 2 minutes, until beets are crisp-tender. I have taken the liberty to change this recipe into a vegetarian one(except for the fish sauce). Hope you like it! :) Adapted from Cooking School Stories, Food Network.

2 -4 ounces vegetable oil, 1/4 cup (or more)
2 garlic cloves, peeled and minced
4 ounces julienned Spanish onions (about 1/2 cup)
1 lb firm tofu, pressed, cut into 1 1/2 inch strips
1/4 cup cornstarch
4 ounces soy sauce (1/4 cup)
2 pints vegetable broth
1/2 ounce fish sauce
14 ounces carrots, washed, peeled and cut julienne (1 1/2-2 cups)
4 ounces celery, julienned (1/2 cup)
14 leaves green cabbage, washed and finely cut, chiffonade style (see below)
8 ounces vegetarian sausages, cut into strips, about 1 1/2 inches long
1 lb rice noodles, soaked in warm water (to cover)
salt & fresh ground pepper
4 scallions, washed, trimmed, and coarsely chopped, as a garnish
2 lemons, washed, tips cut off, sliced into wedges, as a garnish

Steps:

  • Press tofu by cutting in half and placing paper towels on top, then placing a heavy cast iron skillet(or other heavy object) on top and pressing for 15-20 minutes, to squeeze out moisture. Cut tofu into 1 1/2" strips and roll in cornstarch to coat.
  • In a wok, heat oil over medium-high heat. Add garlic and onions and stir-fry until translucent.
  • Add tofu and sear until tofu is browned.
  • To make a chiffonade, stack the cabbage leaves one on top of the other and roll tightly. Cut in thin slices.
  • Add soy sauce, vegetable broth, fish sauce, carrots, celery, cabbage, and vegetarian sausage to wok. Reduce heat and simmer for 5 minutes or until vegetables are al dente and wok is almost dry.
  • Drain rice noodles, stir into wok and cook for 5 to 7 minutes on medium-low heat with tofu and vegetables.
  • Season, to taste, and serve immediately on a warmed plate. Garnish with scallions and a lemon wedge.

10 oz rice noodles
5 Tbsp soy sauce
1 Tbsp shaoxing wine, saki, or dry sherry
2 Tbsp brown sugar
1/4 tsp chili oil more or less to taste
3 Tbsp peanut oil divided
2 large eggs beaten
1 lb kohlrabi peeled halved and thinly sliced
4 clove garlic minced
1 small red bell pepper seeded and sliced
1 handful sugar snap peas trimmed and cut in half
1 c bean sprouts
2 scallions sliced on bias
1 c fresh basil chopped
MY GARNISHES
hoisin sauce
chopped candied peanuts

Steps:

  • 1. Cook the noodles according to package directions. Drain and set aside. Mix the soy sauce, wine, brown sugar and chili oil together and set aside.
  • 2. Add 1 tbsp peanut oil to a skillet. Add the beaten eggs and when set on the bottom fold the eggs over themselves then remove from the pan to a cutting board. Slice in thin slices. Set aside.
  • 3. In a large skillet or Wok add the remaining oil. Add the kohlrabi and saute until lightly browned. Add the garlic and cook 30 seconds. Add the red bell pepper and sugar snap peas. Cook until crisp tender.
  • 4. Add the soy sauce mixture, noodles, eggs, bean sprouts, and scallions. Cook and toss until the sauce coats all the ingredients and everything is warmed through. Stir in the basil
  • 5. Garnish with hoisin sauce and candied peanuts if desired.

8 oz. salmon, cubed
2 tbsp. vegetable or peanut oil
2 fresh green chilies, seeded and chopped
1 tbsp. fish sauce
4 oz. wide rice noodles
2 tbsp. vegetable or peanut oil
2 shallots, sliced
2 garlic cloves, chopped finely
1 red chili pepper, seeded and chopped
2 tbsp. Thai soy sauce
2 tbsp. chili sauce

Steps:

  • Place the fish in a shallow bowl. To make the marinade, mix the oil, green chilies, and fish sauce together and pour over the fish. Cover and chill for 2 hours. Put the noodles in a bowl and cover with boiling water. Leave for 8-10 minutes (check the package instructions) and drain well. Heat the oil in a wok or large skillet and suate the shallots, garlic, and red chili until lightly browned. Add the soy sauce and chili sauce. Add the fish and marinade to the wok and fry gently for 2-3 minutes until cooked through. Add the drained noodles and stir gently. Sprinkle with cilantro and serve immediately.

2 eggs, beaten well
1 teaspoon minced garlic
6 scallions, cut into 1 1/2-inch pieces, shredded
1/2 Chinese barbecue pork, cut into matchstick pieces
8 dried Chinese mushrooms, soaked in hot water until spongy. Discard stems, shred caps
1/2 lb shrimp, shelled, deveined, rinsed in cold water, pat dry and cut into 4 thin strips
1/4 teaspoon baking soda
1/2 egg white
1 teaspoon sherry wine
1/3 cup bell pepper, cut in long thin strips
1 tablespoon curry paste
1 teaspoon curry powder
1/4 teaspoon cayenne pepper
1/2 teaspoon sugar
1 tablespoon black soy sauce
1 tablespoon thin soy sauce
1 tablespoon sherry wine
1/2 lb dried rice sticks, . drain in colander and place in plastic bag to keep from drying (soaked in very warm water but not burning hot tap water for 15 min. or until softened but still resi)
2 cups fresh bean sprouts, rinsed and drained

  • Heat wok over medium heat. Swirl in 2 Tblsp. oil; swirl in eggs and spread into a large pancake. Turn pancake when set. Remove from wok; cut pancake into thin strips and set aside. 1/3 cup reduced-sodium soy sauce
1/4 cup white wine or chicken broth
2 teaspoons sesame oil
1 1/2 pounds boneless skinless chicken breast halves , cut into 1-1/2-inch pieces
1/2 cup reduced-sodium chicken broth
2 tablespoons sugar
1 tablespoon Worcestershire sauce
3/4 teaspoon chili powder
3 ounces uncooked Asian rice noodles
4 teaspoons canola oil, divided
3 cups fresh broccoli florets
2/3 cup chopped green onions
3 garlic cloves, minced
2 teaspoons minced fresh gingerroot
1/4 cup unsalted dry-roasted peanuts

Steps:

  • In a small bowl, combine the cornstarch, soy sauce, wine or broth and sesame oil until smooth. Pour 1/4 cup marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 20 minutes. Add the broth, sugar, Worcestershire sauce and chili powder to remaining marinade; set aside. Cook rice noodles according to package directions. Meanwhile, drain and discard marinade from chicken. In a large nonstick skillet or wok, stir-fry chicken in 2 teaspoons canola oil until juices run clear; remove and keep warm. RICE NOODLES WITH STIR-FRIED PORK AND VEGETABLES

1/2 to 1 pound rice noodle
1/2 cup pork
1/2 cup bamboo shoots
1 cup chinese lettuce
2 teaspoons cornstarch
3 tablespoons water
2 tablespoons oils
2 cups Stock, Chicken or favorite stock
2 to 3 tablespoons oils

Steps:

  • 1. Parboil rice noodles until cooked through but still firm (about 8 minutes) then drain. Rinse with cold water and drain again. 2. Shred pork, bamboo shoots and lettuce. In a cup, blend cornstarch and cold water to a paste. 3. Heat oil. Add pork and stir-fry until it loses its pinkness (1 to 2 minutes). Add vegetables stir-fry 1 minute more. 4. Add stock and heat quickly. Cook, covered, 3 to 4 minutes over medium heat. Then stir in cornstarch paste to thicken. Keep warm. 5. Heat remaining oil in another pan. 1 pound(s) shaved rib eye steak
salt and pepper
3 scallions white parts only chopped
4 clove(s) garlic minced
2 tablespoon(s) vegetable oil
2 tablespoon(s) hoisin sauce
FOR THE NOODLES AND STIR FRY
4 ounce(s) rice noodles
1 tablespoon(s) dark soy sauce
1 tablespoon(s) fish sauce
1 teaspoon(s) oyster sauce
1 tablespoon(s) hoisin sauce
1/4 cup(s) brown sugar
2 handfulls of bean sprouts
green parts of scallions

Steps:

  • For the beef Add the vegetable oil to a wok or skillet. Once hot add the white parts of the green onions and garlic. Stir fry 3 minutes. Season the meat and add to the pan and cook until no longer pink about 2 minutes. Stir in the hoisin sauce and remove the meat from the pan and set aside.
  • Cook the noodles according to package directions and drain. Mix the dark soy sauce, fish sauce, oyster sauce, hoisin sauce and brown sugar together in a bowl
  • Place more oil if needed in the wok and add the noodles. Pour in the sauce and stir to coat the noodles. Add the bean sprouts and cook 30 seconds. Add the beef back in and cook 30 more seconds. Plate and garnish with the green parts of the scallions.
