Wheat Berry Waldorf Salad image

A scoop of this delightful salad with a few apple slices on a plate with some grilled chicken would make a lovely ladies luncheon entree! The simple substitution of dried cranberries for raisins adds so much in terms of both flavor and presentation.

Number Of Ingredients 9

1 c cooked wheat berries
2 Tbsp dijon mustard
1 tsp honey
1 sweet apple
celery (desired amount)
raisins or crainsins (desired amount)
1/3 c non-fat yogurt
2 Tbsp lemon juice
1/2 c walnuts

Steps:

  • 1. Cook the wheat berries (1/2 cup of dry wheat berries with 1.5 cups of water). Drain and cool the cooked wheat berries.
  • 2. Add the remaining ingredients and enjoy.
