EASY CLASSIC CHINESE BEEF STIR FRY



Easy Classic Chinese Beef Stir Fry image

Made with a classic Chinese stir fry sauce, this is a great recipe to use up whatever leftover greens you have in the fridge! Instead of making this Sauce, you can use my All Purpose Stir Fry Sauce (see Note 1) If using economical beef, consider tenderising it the Chinese way ("velveting", simple, highly effective, see Note 5!)

3 tsp cornstarch / corn flour*
2 tbsp + 1/3 cup water (, separated)
2 tbsp soy sauce ((Note 2)*)
1 tbsp oyster sauce*
2 tbsp Chinese cooking wine OR Mirin ((Note 3)*)
1 tsp white sugar*
1/2 tsp sesame oil ((optional)*)
Dash of black pepper*
2 tbsp peanut oil
1 garlic clove (, crushed)
7 oz / 200 g beef (, good quality, thinly sliced (Note 4))
1/2 small onion (, sliced (yellow, brown or white))
1/2 red bell pepper / capsicum (, sliced)
1 small carrot (, halved lengthwise and sliced thinly on the diagonal)
3 baby pak choy / bok choy (, quartered lengthwise)
2 stems scallion / shallots (, cut into 1.5"/3cm pieces)
Steamed white rice
Sesame seeds ((optional))
Fresh cilantro / coriander ((optional))

Steps:

  • Combine the cornstarch and 2 tbsp of water in a small bowl, mix until smooth.
  • Mix in remaining Sauce ingredients EXCEPT the 1/3 cup water.
  • Place the beef and 2 tbsp of Sauce in a bowl and mix gently. Set aside for 15 minutes.
  • Add 1/3 cup water into the remaining Sauce. Set aside.
  • Heat oil in wok over high heat. Add garlic and cook for 15 seconds.
  • Add onion and cook for 1 minute.
  • Add the beef and cook until it changes colour from red to light brown but not cooked through.
  • Add bell pepper and carrots and stir fry for 30 seconds.
  • Add Sauce and cook for 30 seconds.
  • Add pak choy and scallions/shallots and cook for a further 1 minute until the Sauce is thickened.
  • Remove from heat immediately.
  • Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice! Garnish with sesame seeds and cilantro, if using.

BEEF, MUSHROOM & GREENS STIR-FRY



Beef, mushroom & greens stir-fry image

4 tbsp oyster sauce
2 tbsp dark soy sauce
1-2 tbsp vegetable oil
400g beef rump steak, thinly sliced across the grain into ½cm thick pieces
finger-tip length chunk fresh root ginger , chopped
300g spring greens , sliced
150g pack chestnut mushroom , sliced

Steps:

  • Mix the sauces together and set aside. Heat a wok until smoking hot, add 1 tsp oil, then stir-fry the meat until browned all over. You may need to do this in 2 batches, adding a little more oil. Remove the meat, then wipe the wok clean.
  • Add a little more oil. Stir-fry the ginger until golden, then add the spring greens and mushrooms. Cook for 3 mins, stirring often, then add the steak and soy sauce mixture. Cook for 3-4 more mins until the sauce has thickened a little and everything is warmed through. Serve over rice or noodles.

This is my go-to recipe when I want Chinese food without having to go out. Very easy and delicious. Substituting chicken for the beef works great too. Serve over rice.

⅓ cup oyster sauce
2 teaspoons Asian (toasted) sesame oil
⅓ cup sherry
1 teaspoon soy sauce
1 teaspoon white sugar
1 teaspoon cornstarch
¾ pound beef round steak, cut into 1/8-inch thick strips
3 tablespoons vegetable oil, plus more if needed
1 thin slice of fresh ginger root
1 clove garlic, peeled and smashed
1 pound broccoli, cut into florets

Steps:

  • Whisk together the oyster sauce, sesame oil, sherry, soy sauce, sugar, and cornstarch in a bowl, and stir until the sugar has dissolved. Place the steak pieces into a shallow bowl, pour the oyster sauce mixture over the meat, stir to coat well, and marinate for at least 30 minutes in refrigerator.
  • Heat vegetable oil in a wok or large skillet over medium-high heat, and stir in the ginger and garlic. Let them sizzle in the hot oil for about 1 minute to flavor the oil, then remove and discard. Stir in the broccoli, and toss and stir in the hot oil until bright green and almost tender, 5 to 7 minutes. Remove the broccoli from the wok, and set aside.
  • Pour a little more oil into the wok, if needed, and stir and toss the beef with the marinade until the sauce forms a glaze on the beef, and the meat is no longer pink, about 5 minutes. Return the cooked broccoli to the wok, and stir until the meat and broccoli are heated through, about 3 minutes.

1 pound beef sirloin, cut into 2-inch strips
1 ½ cups fresh broccoli florets
1 red bell pepper, cut into matchsticks

2 tablespoons sesame seeds, toasted

Steps:

Stir-Fried Beef with Green Beans and Peanut Sauce image

2 large egg whites
1 teaspoon sesame oil
2 tablespoons cornstarch
Kosher salt and freshly ground black pepper
1 pound boneless beef top round, sliced paper-thin against the grain
8 fresh chives, minced
1/2 cup peanut oil
1-inch piece fresh ginger, peeled and minced
2 garlic cloves, minced
2 green onions, white and green parts, chopped
1 dried red chile
3/4 pound green beans, halved on the bias
1/2 cup chicken broth
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon sugar
3 tablespoons creamy peanut butter
2 strips orange peel
1/4 cup roasted peanuts, chopped

Steps:

  • In a mixing bowl, whisk together the egg whites, sesame oil, and 1 tablespoon of the cornstarch until foamy; season with salt and pepper. Add the beef and chives, toss to coat in the marinade and stick it in the refrigerator for 30 minutes.
  • Pour the peanut oil in a large skillet or wok and place over high heat. When the oil is smoking hot, add 1/2 of the beef. (If you fry all the meat at once the oil temperature will drop and the beef will stew instead of crisp.) Fry for 2 minutes then remove to a paper towel to drain; repeat with the remaining beef. Very carefully drain all but 2 tablespoons of the hot oil into a safe container.
  • Stir-fry the ginger, garlic, green onions, and chile in the remaining oil until they perfume. Add the green beans; season with salt and pepper. Stir-fry the beans for 2 minutes until crisp-tender; remove from the pan. Mix the chicken broth with the remaining tablespoon of cornstarch to make a slurry and add it to the pan. Add the soy sauce, vinegar, sugar, peanut butter, and orange peel. Simmer until the sauce is thick, about 5 minutes. Return the beef and green beans to the pan, tossing to coat in the sauce. Garnish with chopped peanuts and serve with rice.

1 1/4 pounds beef sirloin, cut into 2-inch-long slices about 1/4-inch thick
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
1 tablespoon fresh ginger, minced
3 stalks celery, sliced 1/2 inch thick diagonally
2 bunches watercress
1 tablespoon toasted sesame oil
1 tablespoon rice vinegar
1 tablespoon soy sauce

Steps:

  • Season 1 1/4 pounds beef sirloin, cut into 2-inch-long slices about 1/4 inch thick, with 1/4 teaspoon each salt and pepper. In a large skillet, heat 1 tablespoon canola oil over medium-high heat. Add beef to skillet; cook, tossing occasionally, until brown, 2 to 3 minutes. Transfer to a plate with a slotted spoon.
  • Reduce heat to medium. Add 1 tablespoon minced fresh ginger and 3 stalks celery, sliced 1/2 inch thick diagonally; cook until celery is soft, about 4 minutes.
  • Add 2 bunches watercress, trimmed and washed; toss until wilted, about 1 minute. Return beef with any juices to skillet; stir in 1 tablespoon toasted sesame oil, 1 tablespoon rice vinegar, and 1 tablespoon soy sauce. Serve hot over rice.

STIR-FRIED BOK CHOY OR STURDY GREENS



Stir-Fried Bok Choy or Sturdy Greens image

This recipe works equally well with bok choy or sturdy greens, both of which have tough ribs and leaves that have a cruciferous flavor. I steam them for a minute before stir-frying so the leaves won't be too tough.

12 to 16 ounces bok choy or sturdy greens, like collards, or packaged Southern greens mix
1/4 cup chicken broth, vegetable broth or water
1 tablespoon Shao Hsing rice wine or dry sherry
2 teaspoons soy sauce
1/4 teaspoon cornstarch
1 tablespoon peanut or canola oil
3 garlic cloves, smashed with the flat side of a chef's knife or minced
1 slice ginger, smashed with the flat side of a chef's knife or minced
Salt to taste
1/4 teaspoon sugar
1 to 2 teaspoons sesame seeds, to taste

Steps:

  • If using bok choy, trim off the bottoms and separate into stalks. Rinse if necessary and drain on paper towels. Cut crosswise into 2-inch pieces. If using collard greens, stem, discard stems and chop the leaves coarsely. Bring an inch of water to a boil in the bottom of a steamer, and place the bok choy or greens in the steamer basket. Steam 1 minute, remove from the heat and rinse with cold water. Squeeze out excess water and drain on a kitchen towel.
  • Combine the broth or water, rice wine or sherry, soy sauce and cornstarch in a small bowl and place within arm's reach of your pan. Have the remaining ingredients measured out and near the pan.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan, then add the garlic and ginger and stir-fry for 10 seconds, until fragrant. Add the bok choy or greens, sprinkle with salt and the sugar, and stir-fry for about 30 seconds. Stir the cornstarch mixture and swirl into the wok, then stir-fry 1 minute, or until the greens are just tender. Sprinkle on the sesame seeds. Remove from the heat and serve.
