8 ounces ground lean pork
1 teaspoon rice wine or dry Sherry
3 teaspoons light soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon cornstarch
1 1/2 pounds soybean sprouts or mung-bean sprouts
2 tablespoons, plus 1 teaspoon, peanut oil
2 thin, quarter-sized slices peeled fresh ginger, crushed
1 teaspoon shrimp paste

Steps:

  • Chop the pork into small coarse bits. In a small bowl, combine it with the rice wine, 1 teaspoon of the soy sauce, sesame oil and cornstarch.
  • Wash the sprouts in cold running water, picking out any wilted pieces or darkened sprouts. Drain well.
  • Heat a wok or large saute pan until it is hot. Add 2 tablespoons of the oil and the ginger pieces. When the ginger has browned, remove it with a slotted spoon. Put in the pork and stir-fry for 2 minutes. Remove the pork with a slotted spoon.
  • Reheat the wok and add the remaining oil. When the oil is very hot, add the shrimp paste and stir-fry it for 10 seconds. Then add the sprouts and the remaining 2 teaspoons of soy sauce. Continue to stir-fry for 4 minutes. Return the pork to the wok and mix very well with the sauce, continuously stir-frying for another minute. Give the mixture several good stirs, turn onto a platter and serve.

Peanut oil to cook
1/2 cup thinly sliced scallions
1 tablespoon minced ginger
1 tablespoon sliced garlic
1 pound bean sprouts, hair removed
Salt and black pepper to taste

Steps:

  • In a very hot wok, coat well with oil and add scallions, ginger and garlic. Season and stir. Quickly add the bean sprouts and stir-fry, flipping the sprouts around quickly. Check for seasoning. Serve immediately. May serve with rice.

Walter Kei of Hong Kong taught me this simple peppery Shanghainese-style stir-fry. Many traditional cooks prefer the "head and tail" of the bean sprout to be removed. This is very labor-intensive, but in Hong Kong, produce vendors sell trimmed sprouts, called "silver sprouts," for a slightly higher price.

8 ounces lean pork butt
2 teaspoons grated garlic
4 teaspoons Shao Hsing rice wine or dry sherry
1 1/2 teaspoons cornstarch
1/2 teaspoon soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon sugar
1 teaspoon salt
1/2 teaspoon ground white pepper
2 tablespoons golden olive oil
1 pound mung bean sprouts

Steps:

  • Slice the pork into 1/4-inch-thick slices, then stack the slices and cut into 2-inch-long matchsticks. Put the matchsticks in a shallow bowl and add the garlic, 2 teaspoons of the rice wine, the cornstarch, soy sauce, sesame oil, sugar, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper. Stir to combine.
  • Heat 14-inch flat-bottomed wok over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Swirl in the olive oil and add the pork, spread it around it in the wok. Cook undisturbed 20 seconds, letting the pork begin to brown. Then, using a metal spatula, stir-fry the pork until it is no longer pink, about 1 minute. Add the bean sprouts, then remaining 2 teaspoons rice wine, 1/2 teaspoon of salt, and 1/4 teaspoon pepper and stir-fry 1 to 2 minutes or until the pork and bean sprouts are just cooked through.

1 tablespoon oil
2 garlic cloves, minced
12 ounces pork, thinly sliced
2 tablespoons sake
2 teaspoons sugar
1 tablespoon soy sauce
1/2 medium carrot, finely sliced
1 bunch garlic chives, cut in 1-inch slices (nira)
4 cups bean sprouts
salt, to taste
pepper, to taste
3 tablespoons sesame seeds, ground

Steps:

  • Blanch the bean sprouts for 20 seconds in lightly salted, boiling water. Drain and set aside.
  • In a large stir fry pan, saute the garlic in a small amount of oil over medium heat for 1 to 1-1/2 minutes (don't brown). Add the pork and stir fry. As the pork is cooking, add a small splash of sake to coat the pork lightly and a small heaping spoonful of sugar. Cook until the pork is mostly done.
  • Add the garlic chives (nira) and carrots and a small amount of soy sauce. Continue to stir fry at a slow to medium sizzle (medium heat) until combined.
  • Add the bean sprouts and continue to cook stirring occasionally for 5-10 minutes until the bean sprouts are done (they should be just a little crisp). Season with salt and pepper (to taste) and a little more soy sauce if desired.
  • Just before serving, add the ground sesame seeds (you can use whole sesame seeds if you want to be lazy). Serve with white rice.
