1 batch Best Pizza Dough
1 pound bulk Italian sausage
1 cup pizza sauce
4 cups shredded part-skim mozzarella cheese
1 medium red onion, sliced
1 medium green pepper, chopped
2 cups sliced fresh mushrooms
Optional: Grated Parmesan cheese, crushed red pepper flakes and fresh oregano leaves

Steps:

  • Divide dough in half. With greased fingers, pat each half onto an ungreased 12-in. pizza pan. Prick dough thoroughly with a fork. Bake at 400° until lightly browned, 10-12 minutes. Meanwhile, in a large skillet, cook the sausage over medium heat until no longer pink; drain., Spread pizza sauce over crusts. Top with cheese, onion, green pepper, mushrooms and sausage. Bake at 400° until golden brown and cheese is bubbling, 12-15 minutes. If desired, top with grated Parmesan cheese, crushed red pepper flakes and fresh oregano leaves. , Freeze option: Wrap unbaked pizzas and freeze for up to 2 months. To use, unwrap and place on pizza pans; thaw in the refrigerator. Bake at 400° until crust is golden brown, 18-22 minutes.

A yeast free pizza dough topped with mozzarella, cherry tomatoes, Italian sausage and caramelized onions.

For the dough:
½ cup (118 ml) warm water warmed to 100- 115 °F (38 - 46°C)
1 ½ teaspoons honey
1 teaspoon olive oil
1 ½ cups (192 grams) all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
For the toppings:
4 ounces (113 grams) mozzarella
5 ounces (142 grams) cherry tomatoes, halved
3 sweet or spicy Italian sausages, removed from casing
Caramelized onions
Fresh basil, chopped

Steps:

  • For the dough:
  • To a bowl add the warm water, honey and olive oil. Mix until the honey is dissolved.
  • Add the flour, baking powder and salt to a large mixing bowl. While drizzling in the water, mix with a fork until the dough comes together. If it is too dry, add a little more water until it holds together to form a ball. You can switch to using your hands.
  • Flour your counter and turn out the dough. Knead, sprinkling lightly with flour so it doesn't stick to your hands. Knead for 3-4 minutes until the dough is no longer sticky.
  • Coat the mixing bowl with a little oil and put the dough back in the bowl and cover with a towel. Place in a warm place. This can be the microwave or oven (both turned off) for 30 minutes to allow the dough to rest after kneading and make it easier to roll and keep the dough tender. Remove from the oven after 30 minutes.
  • Position the oven rack on the top ¾ portion of the oven and preheat to 450°F/230°C.
  • Place the dough onto a 12-inch (31 cm) round pizza pan or large baking sheet. Use your hands to press into a pizza shape.
  • For the toppings:
  • Spread the mozzarella all over, top with the cherry tomatoes, crumble the Italian sausage all over and finish with an even layer of caramelized onions.
  • Bake for 20 until the crust is golden brown and the sausage is cooked.

I found this in my collection of family favorites. This is served on toasted French bread. You can also use mushrooms, pepperoni and chopped green or red bell peppers.

1 pound sweet Italian sausage
5 tablespoons olive oil, divided
2 large onions, sliced
1 clove garlic, pressed
1 (8 ounce) can tomato sauce
salt and pepper to taste
crushed red pepper to taste
¼ cup sliced stuffed green olives
1 (1 pound) loaf French bread, sliced horizontally
6 ounces mozzarella cheese, shredded

Steps:

  • Remove sausage from casings and saute sausage in 2 tablespoons olive oil until browned. Drain to remove excess oil. Remove from skillet and set aside. In skillet, heat 3 tablespoons olive oil, add onions, garlic and saute stirring until onions wilt down. Add tomato sauce, salt, pepper and red pepper to taste. Simmer about 5 minutes on low.
  • Stir together the sausage and onion and chopped olives. Toast bread lightly under broiler. Top with sausage mix and sprinkle grated mozzarella over all. Broil about 3 minutes under broiler until cheese melts. Watch carefully with oven door open. Remove from broiler, slice and serve.

Cornmeal, for dusting
3 tablespoons extra-virgin olive oil, plus extra for drizzling
1 tablespoon unsalted butter, at room temperature
2 onions (about 1 1/2 pounds), thinly sliced
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 pound spicy turkey or pork sausage, casings removed, crumbled
All-purpose flour, for dusting
1 (13 to 16-ounce) ball pizza dough
3/4 cup (3 ounces) crumbled Gorgonzola or blue cheese
1/4 cup chopped fresh basil leaves

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 475 degrees F. Sprinkle a heavy baking sheet (without sides) with cornmeal and set aside.
  • In a large skillet, melt 3 tablespoons of olive oil and the butter over medium-low heat. Add the onions, salt and pepper. Cook, stirring occasionally, until golden and caramelized, about 20 minutes. Increase the heat to medium-high and add the sausage. Using a wooden spoon, break up the sausage and cook, stirring constantly, until cooked through, about 8 minutes. Set aside to cool slightly.
  • On a lightly floured work surface, roll out the dough into a 13-inch diameter circle, about 1/4-inch thick. Transfer the dough to the prepared baking sheet and drizzle with olive oil. Spread the onion mixture evenly over the dough, leaving a 1-inch border. Sprinkle the cheese on top. Bake until the crust is golden and the cheese has melted, about 15 to 17 minutes. Remove from the oven and sprinkle with chopped basil. Cut the pizza into wedges and serve.

SAUSAGE, PEPPERS AND ONION DEEP DISH PIZZA



Sausage, Peppers and Onion Deep Dish Pizza image

4 cups all-purpose flour, plus more as needed
1 tablespoon sugar
2 1/4 teaspoons instant yeast
Kosher salt
1 1/2 cups warm water
1/4 cup corn oil, plus more for the bowl
4 tablespoons unsalted butter, softened
One 28-ounce can chopped San Marzano tomatoes
12 ounces sliced mozzarella
12 ounces ground pork sausage
1/2 green bell pepper, chopped
1/2 small yellow onion, chopped
1/4 cup grated Pecorino-Romano, plus more for serving
2 pinches dried oregano
Crushed red pepper, for serving, optional

Steps:

  • In a stand mixer fitted with a dough hook, combine the flour, sugar, yeast and 1 1/2 teaspoons salt. Add the water and oil and mix to combine (you may have to get in there with a spatula to help everything incorporate). Turn the mixer to medium-high and knead the dough until it is smooth and pulls away from the sides of the bowl without sticking, adding more flour 1 tablespoon at a time if needed, 7 to 10 minutes.
  • Coat a large bowl with oil and transfer the dough to the bowl. Toss a few times to coat the dough. Cover and let sit at room temperature until it has doubled in size, 1 to 2 hours.
  • Once the dough is ready, preheat the oven to 500 degrees F.
  • Liberally coat two 10-inch cake pans with the softened butter. Divide the dough into two balls and place each one in a pan. Cover loosely and let sit for about 20 minutes while the oven preheats and you prepare the other toppings.
  • Place the tomatoes in a strainer and sprinkle on a couple good pinches of salt; let drain for 10 minutes. Flatten out the dough all over the bottoms of the pans and about 1 1/2 inches up the sides. Top with cheese slices, overlapping them. Tear the sausage into golf ball-size pieces, then press on top of the cheese and flatten, leaving little holes for the cheese to poke through. Top with the tomatoes, peppers and onions. Sprinkle over the Pecorino-Romano and oregano.
  • Bake until the crust is a deep golden brown, the cheese on top is turning golden and the sauce has begun to bubble, 30 to 40 minutes. Let cool slightly before slicing. Sprinkle with crushed red pepper, if desired.

8 ounces Italian turkey sausage links
2 cups whole fresh mushrooms
2 cups cherry tomatoes
1 medium onion, cut into 1-inch pieces
1 large green pepper, cut into 1-inch pieces
30 slices turkey pepperoni (2 ounces)
1 tube (13.8 ounces) refrigerated pizza crust
1-1/2 cups shredded part-skim mozzarella cheese
1-1/4 cups pizza sauce, warmed

Steps:

  • Preheat oven to 400°. In a large nonstick skillet, cook sausage over medium heat until no longer pink; drain. When cool enough to handle, cut sausage into 20 pieces. On 10 metal or wooden skewers, alternately thread sausage, vegetables and pepperoni., Unroll pizza dough onto a lightly floured surface; cut widthwise into 1-in.-wide strips. Starting at the pointed end of a prepared skewer, pierce skewer through one end of dough strip. Spiral-wrap dough strip around skewer, allowing vegetables and meats to peek through. Wrap the remaining end of dough strip around skewer above the first ingredient. Repeat with remaining dough strips and prepared skewers., Arrange kabobs on a baking sheet coated with cooking spray. Bake 10-12 minutes or until vegetables are tender and pizza crust is golden. Immediately sprinkle with cheese. Serve with pizza sauce.
