1 pound skinless steelhead trout fillets
¼ cup dry white wine
2 ½ tablespoons Dijon mustard
2 cloves garlic, pressed
1 tablespoon lemon juice
1 teaspoon dried dill weed
1 teaspoon lemon-pepper seasoning

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Arrange trout fillets in the baking dish. Mix white wine, Dijon mustard, garlic, lemon juice, dill, and lemon-pepper seasoning in a bowl; spread over the fillets, letting some run underneath the fish.
  • Bake in the preheated oven until the fish is opaque and flakes easily, 10 to 15 minutes.

1/4 cup butter
2 garlic cloves
2 TBSP honey or maple syrup
2 TBSP brown sugar
2 TBSP rice vinegar (feel free to experiment with other types like cider)
2 TBSP Dijon mustard
2 TBSP Soy sauce

Steps:

  • Melt the butter in a small sauce pan over low heat. Whisk in the ingredients. Place the fish in the center of a rectangle of foil. Pour the glaze over the fish and fold the packet around the fish. Preheat the oven to 400°F. (This essentially allows the fish to marinate). If you're in a big hurry, start the oven before you make the glaze and just pop it in. Bake for 10 minutes + 10 minutes for each inch of thickness. So, a one inch thick fillet would bake for twenty minutes. 1.5″ would be 25 minutes. Got it? The recipe makes enough glaze for a little over two pounds of fish. It is easily halved or doubled. This recipe could be done on the grill, but remember to not cook the fish over direct heat, unless you enjoy rubbery, dried out fish. On the grill it can be done in a foil packet as described or you may skip it. If you choose to grill, place it skin side up, first. Once the fish has cooked, it falls apart, the skin sort of holds it together, making transfer a little bit easier.

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
  • Place trout, skin-side down, onto the prepared baking sheet. Cover trout with honey and sprinkle mesquite seasoning, black pepper, and seasoned salt over honey. Press honey and seasonings into trout using a fork.
  • Bake in the preheated oven until fish flakes easily with a fork, 15 to 20 minutes.

1 lemon, sliced into thin rounds with the ends reserved
3 tablespoons olive oil
1 ½ teaspoons minced garlic
1 ½ teaspoons minced onion
salt and ground black pepper to taste
1 filet steelhead trout

Steps:

  • Lightly oil the grate of your grill. Arrange lemon slices on the grate so they overlap slightly and form a shape slightly larger than your trout fillet.
  • Preheat grill for medium heat to 350 degrees F (175 degrees C).
  • Heat olive oil in a small skillet over medium-high heat.
  • Saute garlic and onion in the hot oil until the garlic browns slightly, 2 to 3 minutes; season with salt and pepper. Squeeze the reserved lemon ends over the garlic mixture.
  • Gently lay the trout fillet onto the lemons with the skin side down. Brush the garlic mixture over the top of the fish.
  • Cook trout on hot grill until the fish flesh flakes easily with a fork, about 10 minutes.

1 clove garlic, chopped fine
1 1/2 tablespoons coarsely chopped fresh rosemary
1 lemon, zest of
1/2 lemon, juice of
1/4 teaspoon salt
1/2 teaspoon fresh ground pepper
1 tablespoon olive oil, plus
additional oil, for greasing baking pan

Steps:

  • Prepare a baking or roasting pan by lining it with foil and brushing it with olive oil.
  • Preheat broiler.
  • Mix together all remaining ingredients except fish into a well-blended paste.
  • Place fish skin-side down (if it has skin) on baking sheet, then spread seasoning over flesh.
  • Broil fish at second rack away from heat for 5 minutes or less, just enough to sear flesh but not burn herbs.
  • Lower fish to 3rd or 4th rack and lower oven heat to 325°F Bake for 10 additional minutes, or until fish is cooked through in the thickest portion.

2 pounds steelhead trout fillets
2 tablespoons olive oil
4 cloves garlic, chopped
1 ½ tablespoons dried rosemary, crushed
1 cup sugar-based curing mixture (such as Morton® Tender Quick®)
1 quart water
ground black pepper to taste
1 pound alder wood chips, soaked in water or wine

Steps:

  • Rinse the fish fillets and place them in a shallow glass baking dish. Drizzle olive oil over the fish and season with garlic and rosemary. Rub the seasonings into the fish. Cover and refrigerate overnight.
  • Dissolve the curing salt in the water and pour into the dish with the fish. Let it marinate for 15 minutes per half inch of thickness.
  • Meanwhile, prepare your smoker for a four hour slow burn using charcoal. The temperature should be at 150 degrees F (65 degrees C) before you get started.
  • Remove the fish from the brine and discard leftover liquid. Place each piece of fish onto a small piece of aluminum foil - just big enough to hold the fillet, and season with pepper to taste. Place them on the rack in the smoker. Sprinkle a handful of the soaked wood chips over the coals or place in a heat box. Cover and allow fish to smoke for 2 hours, adding more wood chips as needed.
  • Increase the heat in the smoker (add more charcoal) to 200 degrees F (95 degrees C) and let the fish smoke until the internal temperature of the fillets reaches 165 degrees F (72 degrees C). Remove from the smoker and let rest for 20 minutes before serving.

So I thought I was following another recipe, doing it from memory (and obviously my memory failed me) and voila - a new recipe was created! Good mistake this time! SO wonderful. If you like to hide the fishy taste of salmon/steelhead then this recipe is definitely for you! If you prefer yours more natural tasting, I recommend decreasing the marinating time to only 2 hours. Prep time listed does not include marinating time.

1 large salmon fillet (may sub steelhead trout)
1/4 cup fresh squeezed orange juice (blood orange works well too)
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons maple-flavored syrup (I used light butter flavored pancake syrup)
1/4 cup margarine (I used light margarine with no issues)
1/4 cup firmly packed brown sugar
3 tablespoons maple-flavor syrup
1/4 cup coarsely chopped walnuts (may sub pecans)

Steps:

  • Place fish filet in a gallon resealable plastic bag.
  • Wisk together the OJ, soy sauce, honey and syrup.
  • Pour marinade over the fish, seal the bag, place it in a container (in case the bag has a small leak - you never know) and put it in the fridge to marinate.
  • I like mine VERY marinated, so I let mine marinate for 6 hours. 4 hours is probably a great starting point for the first time you make this recipe and then go up or down from there in the future based upon your taste buds.
  • Line a baking sheet with foil and preheat the oven to 350 degrees.
  • NOTE: If you fish has skin, then do not grease the foil. If your fish has had the skin removed, you MUST grease your foil.
  • Cut filet into 4-6 pieces (depending on the size of your filet), place fish on the baking sheet with the smaller pieces (such as the tail part) in the middle - and putting skin side down on the foil. Discard the marinade.
  • Cook fish at 350 degrees (uncovered) for approximately 20-30 minutes depending on how you prefer your fish cooked (20 minutes will be more medium while 30 minutes will be pretty well done).
  • About 5 minutes before the fish is done, you can warm up the sauce ingredients in a sauce pan over medium heat just until the sugar is melted - then turn the heat to low.
  • Remove the fish from the oven, then remove each filet from the foil with a spatula (leaving the skin stuck to the foil), plate up the fish and pour the sauce over the top.
  • Enjoy!

1 (16 ounce) can apricots
4 -5 green onions (chopped)
1 (8 ounce) can diced pineapple
1 red bell peppers or 1 yellow bell pepper (chopped or sliced small)
1 1/2 tablespoons lime juice
1 1/2 teaspoons dried cilantro (or 1/4 cup chopped fresh)
fresh ground pepper

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, combine apricots (reserve juice), pineapple, green onions, and bell pepper.
  • Sprinkle with lime juice and cilantro.

  • Preparation:
  • 1. In a small bowl, whisk together all the ingredients for the sauce. Set aside.
  • 2. Place the trout in a plastic bag. Cover the fish with sauce and place in the refrigerator for at least one hour and up to 4 hours.
  • 3. Preheat the oven to 450*
  • 4, Transfer the trout, with the sauce into a foil boat, place on a baking sheet and bake at 450*F for about 15-20 minutes.
  • 5. Do not overcook. If you start seeing albumin coming out, that's a good indication that the fish has entered into over-cooked territory and needs to be pulled out immediately.
  • 6. For better browning, place the rack in the second position from the top. You can also turn on the broiler on high about 12 minutes into baking. If the fish is browning too much before it is done, turn off the broiler and move the baking sheet down a couple of positions.
  • 7. Serve with roasted vegetables, salad or rice.

2 large filet's of steelhead trout or salmon to serve 5 or 6 people.
1 lemon
2 tablespoons fresh dill or less of dried.
2 tablespoon butter and olive oil
salt and pepper, optional crushed red pepper

Steps:

  • 1. Season skin side. Place skin side down on pan. Squeeze lemon and sprinkle dill, salt and pepper over fish. Drizzle olive oil or put several pats of butter evenly on the fish Bake in 425 degree oven for about 20 minutes until it's nice and brown and flakes.. but do not cook till it's dried out.

1/2 cup Hellmann's mayonnaise
1/4 cup creole mustard
3 -4 tablespoons tarragon, minced
1 -2 tablespoon fresh lemon juice
fresh ground black pepper
canola oil

  • Preheat the oven to 450 degrees.
  • Place a large broiler pan in the oven and let that heat.
  • Lightly oil the skin of the trout.
  • Mix the Mayo, mustard, tarragon, lemon juice and season with pepper.
  • Taste the sauce, I thought it was salty enough and did not add any but you may want a saltier taste.
  • Spread on the meat of the trout.
  • Place the trout on the hot pan and bake for about 10 minutes, or until you like your fish cooked.

1/3 cup brown sugar
1 teaspoon ground cumin
1/2 teaspoon ground coriander

broccoli
sugar snap pea
1 small green beans
bamboo shoot
bok choy (I just used the green part, not a fan of the white part! ( -)

  • THE RUB:.
  • Blend well together and rub into both sides of fish. Let sit in the fridge for at least an hour before baking or grilling. Store extra rub blend in an airtight container and save for another day. This is also nice rubbed on large scallops or prawns!
  • THE MAIN DISH:.
  • Rub salmon with sugar & spice mix and set aside in fridge for at least an hour. Cut up broccoli into bite sized pieces and trim up peas and beans. Slice up bok choy. In a baking dish, grease lightly with olive oil and place fish in dish. Bake at 400F for 10 minutes -- this will depend on thickness. Mix equal parts soy sauce and brown sugar to make a sweet "slurry", adding a pinch or two of cornstarch. While fish bakes, heat up a teaspoon of sesame oil in a large frying pan or wok, add ginger and garlic and fry 30 seconds, then add broccoli. Stirfry for 1 minute, then add snap peas, beans, and bamboo shoots. Stirfry another couple minutes until veggies are still "al dente". Add bok choy and soya sauce mix and stirfry one more minute. Serve the fish on top of the veggies, with a little of the sauce from the veggies drizzled on the fish. Enjoy!

Exotic sounding, isn't? It tastes just good as it sounds. I made this for a date one time and it was a wonderful hit. I got this from "Pacific Passions Cookbook". Steelhead trout looks like Salmon and is a sweet cross between salmon and trout. You can use Salmon if you like it instead of trout

3 tablespoons apple cider vinegar
1/4 teaspoon salt
1 tablespoon shallot, finely chopped
1 cup unsalted butter, cut into 1/2-inch cubes
1 tablespoon lavender leaves, finely chopped
36 ounces steelhead trout
salt and pepper
flour (for dredging)
vegetable oil

Steps:

  • To make the sauce, combine the vinegar, salt and shallots in a small, non corrodible saucepan.
  • Cook over high heat until the mixture is reduced by half.
  • Reduce the heat to very low and remove the pan from the heat.
  • Whisk in the butter cubes one at a time, making sure each cube is absorbed before adding another. Do not let the sauce boil or it will separate.
  • Regulate the heat by moving the pan on and off the burner.
  • The sauce will gradually thicken to the consistency of heavy cream.
  • Remove from the heat.
  • Stir in the lavender leaves.
  • Preheat the barbecue to high.
  • Salt and pepper the fish.
  • Dip both sides in the flour, then into the oil.
  • Grill 2-3 minutes on each side until done to your liking.
  • Remove from the grill and place on heated plates or a large platter.
  • Pour the sauce over the filets and serve immediately.

1-6lb salmon/steelhead/trout fillets
1 gallon warm water (filtered)
1/2 cup kosher salt
1/2 cup iodized salt
2 cups light brown sugar
1 1/2 cups karo corn syrup
1/2 cup onion powder (1 2.5oz bottle)
1/2 cup garlic powder (1 2.5oz bottle. POWDER, not garlic salt. Important!!)
2oz mapeline (imitation maple, next to imitation vanilla in the store)
1 full bag applewood, alder, or hickory chips

Steps:

  • Scale and fillet (if freshly caught) or clean store bought fillets, set aside. Filter water into large kettle or pot. Start on medium heat to warm and add all ingredients. Everybody into the pool except the fish. Section the fillets into about 2" parts, cutting to, but not through, the skin. Warm the brine through until mixed (if it simmers, just take it off and let sit a while). Cover fish in baking pans and cover with plastic (or just dump it in the pot and put a lid on it if you have a lot) and refrigerate over night. Drain fish, rinse under cold water and place on cooling/drying racks to air dry for 1-2 hrs in a cool place (refrigeration makes this take longer). Smoking is done with your favorite hardwood, low temp for 5-12 hrs depending on temperature and thickness of fillets, and personal preference. May be finished in the oven at 200-225 if required (I've never done it, but if you have to, worth it).

12-16 oz steelhead trout or salmon fillet, skinned and deboned, thinly sliced
1 medium fennel bulb, thinly sliced
2 celery stalks, thinly sliced
MARINADE
1/4 c evoo
1 Tbsp fennel fronds
1 large lemon juice & zest
2 Tbsp italian parsley
course sea salt
fresh ground pepper

Steps:

  • 1. gather ingredients
  • 2. slice steelhead trout and veggies
  • 3. in a small mixing bowl, combine marinade ingredients. whisp thoroughly. on a large plate arrange steelhead trout slices topped with celery and fennel. pour marinade over fish and veggies. refrigerate for 3 hours. SERVE
