1 tablespoon olive oil
2 shallots, finely chopped
4 cloves garlic, finely chopped
1 bulb fennel - trimmed, cored and thinly sliced
1 large tomato, cubed
½ cup white wine
¼ cup ouzo
½ cup heavy cream
4 pounds mussels, cleaned and debearded
⅓ cup fresh basil leaves, torn
salt to taste

Steps:

  • Heat olive oil in a medium saucepan over medium heat. Stir in shallots and garlic, and cook until tender. Stir in fennel and tomato, and continue cooking about 5 minutes.
  • Mix white wine, ouzo, and heavy cream into the saucepan, and bring to a boil. Gradually stir in mussels, 1/2 the basil, and salt.
  • Cover saucepan, and continue cooking about 5 minutes, until the mussels have opened. Garnish with remaining basil to serve.

Make it a Romantic dish or serve to your party guests. It is sure to please! I got this recipe from a 2006 Canadian Living magazine, and I forgot all about it, until I went through my cookbooks. This can be served as a appetizer as well. Please enjoy :)

2 tablespoons extra virgin olive oil
1 1/2 cups chorizo sausage (cut lengthwise and thinly sliced )
1 white onion, thinly sliced
1/4 teaspoon salt
1/4 teaspoon black pepper
2 garlic cloves, minced
2 lbs tomatoes, chopped
1 tablespoon sherry wine vinegar or 1 tablespoon wine vinegar
4 lbs clams (scrubbed)
1/2 cup chopped fresh basil

Steps:

  • In a dutch oven heat olive oil over medium heat.
  • fry chorizo, onion, garlic, salt and pepper stirring until onion are golden.
  • stir in tomatoes and vinegar.
  • cook over medium heat until tomatoes are tender (about 15 minutes).
  • add clams, cover and bring to a boil.
  • cook just until clams open wide (8 to 10 minutes).
  • discard any clams that do not open.
  • Remove from heat, stir in basil and serve.
  • served with crusty bread to sop up sauce.

Steps:

  • Heat olive oil in heavy medium pot over medium heat. Add 2 tablespoons garlic and sauté 1 minute. Add tomatoes with their juices, whole onion, basil and 1 tablespoon oregano to pot. Reduce heat to medium-low and simmer sauce until reduced to 1 3/4 cups, about 1 hour. Remove onion and discard. Season sauce to taste with salt and pepper. Set aside.
  • Melt butter in heavy large pot over medium-high heat. Add parsley, bay leaf, crushed red pepper, remaining 1 tablespoon garlic and 2 tablespoons oregano. Sauté until garlic is tender, about 1 minute. Stir in Sherry and tomato sauce. Add mussels and stir to coat. Cover and simmer until mussels open, about 5 minutes; discard any mussels that do not open. Using tongs, transfer mussels to large serving bowl. Season sauce to taste with salt and pepper. Ladle sauce over mussels and serve.

6 dehydrated sun-dried tomatoes
2 cups boiling water
6 small zucchini, sliced
6 small yellow squash, sliced
1 sweet onion, chopped
2 tablespoons butter
1 teaspoon white sugar
¼ teaspoon freshly ground black pepper
salt to taste

Steps:

  • Place the sun-dried tomatoes in a bowl with the boiling water, and allow to sit 10 minutes. Remove tomatoes with a slotted spoon, and coarsely chop. Reserve the water.
  • Transfer the reserved sun-dried tomato water to a saucepan, and bring to a boil. Place the chopped sun-dried tomatoes, zucchini, squash, and onion in a steamer basket, and set over the boiling water. Reduce heat to low, cover, and simmer 15 minutes, or until vegetables are tender. Discard water.
  • Transfer the steamed vegetables to a bowl, and mix with butter, sugar, pepper, and salt to serve.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix tomatoes, garlic cloves, salt, pepper, and olive oil in a large bowl; spread into a 9x13-inch baking dish.
  • Roast tomatoes in the preheated oven until they are lightly flecked with brown spots and the garlic cloves are tender, about 45 minutes; remove from oven after 20 minutes and mash lightly with a spatula.
  • About 5 minutes before tomatoes are done, place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Lentils and salmon are a classic combination, a popular French bistro dish. The black "beluga" lentils are a nice choice because they stay intact and the color contrasts nicely with the salmon. In the classic dish the lentils might be cooked with bacon or a little sausage. In this recipe, sun-dried tomatoes add a savory layer of flavor to the lentils.

2 tablespoons extra virgin olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
1/2 pound beluga lentils (1 1/8 cup), rinsed
2 ounces sun-dried tomatoes
1 bay leaf
Salt, preferably kosher salt
freshly ground pepper
1 1/2 pounds salmon fillets, either in 1 piece or cut up
Chopped fresh herbs, such as parsley, chervil, thyme for garnish

Steps:

  • Heat the oil in a heavy saucepan or soup pot over medium heat and add the onion. Cook, stirring, until tender, about 5 minutes, and add 1/2 teaspoon salt and the garlic. Stir together for a minute, until fragrant, and add the lentils, sun-dried tomatoes, bay leaf, and enough water to cover by an inch. Bring to a simmer, cover and simmer 25 minutes. Add salt and pepper to taste and simmer another 5 to 10 minutes, until the lentils are tender and aromatic. Taste and adjust seasoning. Remove the bay leaf and the sun-dried tomatoes. Keep warm while you cook the salmon.
  • While the lentils are cooking, preheat the oven to 300ºF. Cover a baking sheet with foil and lightly oil the foil. Place the salmon on top. Season with salt and pepper. Fill a roasting pan with boiling water and place it on the oven floor.
  • Place the salmon in the oven and bake until the fish flakes and white bubbles of protein appear on the surface, 10 to 20 minutes, depending on the size of the fillets. Remove from the heat.
  • Using a slotted spoon, spoon the lentils onto 4 dinner plates and place a serving of salmon on top. Sprinkle with herbs, and serve.

  • In a pot large enough to hold the clams, heat the olive oil over medium heat. Add the garlic and pancetta. When they begin to sizzle, add the vinegar, wine and saffron. Remove from the heat and let stand until the saffron begins to release its color. Add the tomatoes, pepper, parsley and clams. Cover with a lid and cook over high heat, shaking the pot occasionally, until the clams open. Divide the clams among 4 bowls and serve immediately.

Steps:

  • Preheat oven to 375°F. Arrange bread on baking sheet. Combine 4 tablespoons oil and 2 tablespoons garlic in bowl. Using fork, mash to course paste. Spread over bread. Bake until crisp, about 10 minutes.

2 pounds mussels (see Note)
1/2 cup water
1 large tomato (about 8 ounces), cored, seeded, and cut into small dice (about 1 1/2 cups)
1 small red onion, cut into tiny dice (about 1/2 cup)
1/2 yellow bell pepper, cored, seeded and cut into small dice (about 1/2 cup)
1/4 cup chopped cilantro leaves
2 tablespoons olive oil
2 large cloves garlic, minced
1/2 serrano pepper, minced
1 lime, juiced
Kosher or fine sea salt and freshly ground black pepper

Steps:

  • Remove as much of the corn silk as possible. Trim off the stalk ends from the cob. Stand the ears up on a cutting board and, using a short sharp knife, shave off the kernels. Get as much of the kernels as possible without cutting into the cob and be careful, the kernels have a tendency to fly all over the kitchen.
  • Put the corn kernels, mussels, and 1/2 cup water in a wide deep skillet or Dutch oven. Cover and bring to a boil over medium-high heat. Steam, shaking the pan occasionally, just until the mussels open up, 3 to 5 minutes.
  • While the mussels are steaming, toss the tomato, red onion, yellow pepper, cilantro, olive oil, garlic, chile, and lime juice together in a bowl. Season with salt and pepper, to taste.
  • When the mussels are open, scoop them out with a skimmer and put them in a serving bowl large enough to hold them comfortably. Add the tomato mixture to the mussel steaming liquid, give it a quick stir and pour everything in the pan over the mussels. Serve hot, warm or at room temperature.

1 pound angel hair pasta

  • 1. Wash the mussels and remove the "beard." Place the mussels, with just the water that clings to them, in a covered pot over high heat until they just open, about 2 to 3 minutes. Remove from the heat and set aside. 2. Meanwhile, bring a gallon of well-salted water to a boil. 3. Remove the mussels from their shells. Discard the shells, reserve the mussels in a bowl and reserve the juice in the pot. 4. Heat the juices over medium-high heat and reduce the quantity by half. 5. Add the pasta to the boiling water. 6. Add the tomatoes to the mussel juice and simmer. Season with salt and pepper. Add the parsley. 7. Cook the pasta until it is al dente, about 6 to 8 minutes. 8. Vietnamese Steamed Chicken With Tomatoes image

Easy dish and a family favourite I like this method of cooking it quick and simple. Make sure the dish is heat proof and deep. I haven't included nuoc cham recipe as there is quite a few listed on Zaar.

750 g chicken thighs
3 tomatoes, ripe cut into thin edges
3 spring onions
1 cm ginger, sliced thin
2 tablespoons fish sauce
1/2 teaspoon salt
1/2 teaspoon sugar
2 teaspoons sesame oil

Steps:

  • Place a large steamer on the stove and bring to the boil.
  • Cut the meat into bite size pieces. Slice the ginger slices into thin strips and cut each tomatoe into 10 wedges - so very thin. Slice spring onions into slices.
  • Place the meat in a heat proof dish and all the other ingredients. Mix this well. Cover with cling wrap or a lid.
  • Place the dish in the steamer and cook for 25-35 minutes.
  • Serve with rice and nuoc cham.

1 pint grape or cherry tomatoes
2 tablespoons extra-virgin olive oil
salt
6 basil leaves, stacked and cut into narrow strips

Steps:

  • 1 Rinse the tomatoes and pat dry. Cut them in half through the stem end. In a small saucepan, combine the tomatoes, oil, and salt. Cover the pan and place on low heat. STEAMED RABE WITH TOMATOES



Steamed Rabe With Tomatoes image

Number Of Ingredients 6

1 pound tender fresh unblemished broccoli rabe
2 tablespoons olive oil
1 tablespoon finely chopped garlic
1/2 teaspoon hot red pepper flakes
4 small plum tomatoes, about 1 pound, cut into 1/2-inch cubes
Salt and freshly ground pepper to taste

Steps:

  • Using a small paring knife cut off and discard the bottom stalks of the rabe. The tender leaves and stems plus the buds of the vegetable should be left intact. Rinse the rabe well in a colander. Drain, but allow the water that clings to the leaves to remain.
  • Heat the oil in a heavy skillet or casserole with a tight-fitting lid. Add the garlic and pepper flakes and cook briefly. Do not brown. Add the rabe and stir. Add the tomatoes, salt and pepper and cook, stirring, until wilted. Cover closely and let cook for about 5 minutes, turning the vegetable occasionally so it cooks evenly. Serve immediately.
