1 pound small red potatoes
2 tablespoons olive oil
2 garlic cloves, minced
1/4 cup shredded Parmesan cheese
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cut scrubbed potatoes into wedges; place in a large saucepan. Add water to cover; bring to a boil. Cook, covered, until tender, 10-15 minutes; drain. In the same pan, heat oil over medium-high heat. Add potatoes; cook until browned, 4-6 minutes. Add garlic; cook 1 minute longer. Remove from heat. Stir in remaining ingredients.

This is a good, easy recipe for lemony potatoes. If you don't have garlic olive oil on hand just use plain olive oil and add a little minced garlic.

2 tablespoons lemon juice
1 tablespoon garlic-flavored olive oil
1 teaspoon Dijon mustard
1/8 teaspoon salt
fresh ground black pepper
3 tablespoons fresh parsley, minced for garnish (optional)

Steps:

  • Steam the halved potatoes.
  • Meanwhile, in a medium bowl, blend the remaining ingredients (except the parsley) with a whisk or a fork.
  • Add the hot potatoes to the sauce and toss. Garnish with the parsley if desired.

  • Place the potatoes in a steamer basket, and set in a pan over an inch of boiling water. Cover, and steam for about 10 minutes, until potatoes are tender but not mushy.

1 1/2 pounds medium red bliss or other waxy-style potatoes, skin-on and scrubbed
2 tablespoons unsalted butter, melted
1 teaspoon kosher salt, plus more
1 tablespoon finely minced garlic
1 tablespoon finely chopped flat-leaf parsley
Freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Half the potatoes lengthwise and cut them into 1-inch-wide wedges. In a medium bowl, toss the potatoes with the butter and 1 teaspoon of salt. Spread the potatoes out on a roasting pan large enough to hold them in a single layer. (Arrange the potatoes cut-side down, to ensure crisply browned edges.)
  • Roast the potatoes until golden brown, about 45 minute. Add the garlic and stir to coat the potatoes evenly. Continue to roast until the potatoes and garlic are evenly browned, about 15 minutes more. (Take care that the garlic doesn't burn.) Remove from the oven and mix with the parsley. Season with salt and pepper to taste. Serve.

1 1/2 pounds small potatoes (new potatoes or baby potatoes*)
2 tablespoons butter, cut into pieces (or vegan butter or olive oil)
1 small garlic clove (optional)
1 tablespoon minced fresh parsley
1/2 teaspoon kosher salt
Fresh ground black pepper

Steps:

  • Wash the baby potatoes. Cut any larger potatoes in half to match the size of the smaller potatoes.
  • Add 1 inch of water and a large pinch of salt to a large pot. Add the steamer basket to the pot and bring the water to a boil.
  • Once boiling, reduce the heat slightly, add the potatoes and cover the pot. Steam the potatoes for 10 to 15 minutes*, until tender when pierced with a fork.
  • Place the warm steamed potatoes in a bowl and mix with the butter, minced garlic, minced parsley, kosher salt, and fresh ground pepper. Serve warm. Leftovers last up to 5 days refrigerated.

Steps:

  • Peel a wide strip from around the middle of each potato. In a kettle combine potatoes and garlic with enough salted water to cover by 2 inches and boil until potatoes are just tender, about 15 minutes. Drain mixture. Transfer potatoes to a bowl and transfer garlic to a blender. Add to blender lemon juice, oil, and salt and pepper to taste and purée dressing. In the bowl toss potatoes with dressing and parsley. Potatoes may be prepared 4 hours ahead and kept covered.
  • Serve potatoes warm or at room temperature.

1/3 cup freshly squeezed lemon juice
2-3 tablespoons chopped fresh oregano

Steps:

  • Preheat oven to 400°F.
  • Place the potatoes in a single layer in a 13-x-9-inch baking dish and pour the oil over them. Add the garlic, dried oregano, salt and pepper to taste and toss well to coat with the oil.
  • Bake the potatoes for 15 minutes. Add the stock, toss and bake for 10 minutes more. Add the lemon juice, toss and bake for 10 to 15 minutes more, or until the potatoes are cooked through. If you like, preheat the broiler and broil the potatoes for 2 to 3 minutes, or until golden brown.
  • Sprinkle with the fresh oregano and serve at once.
  • Variation:
  • Dissolve 1 tablespoon tomato paste in the stock, and reduce the amount of lemon juice to taste. Substitute Aleppo pepper or crushed red pepper flakes for the black pepper.
