3 lemons, cut in 1/2
1 head garlic, split in 1/2
3 pounds Alaskan king crab legs, split
Drawn butter, for serving

Steps:

  • To a large stockpot with a steamer insert, add beer, lemons and garlic and bring to a boil. Add crab legs and cover. Steam for 5 minutes or until crab is cooked through. Serve with drawn butter.

OLD BAY KING CRAB LEGS

The classic seafood seasoning and lemon bring heat and brightness to sweet crab meat. The only way to improve it is with a dunk in drawn butter.

3 pounds frozen cooked king crab legs
One 6-ounce box seafood seasoning, such as Old Bay, plus additional as needed
2 lemons
1 stick (8 tablespoons) unsalted butter

Steps:

  • Put the crab legs in the bottom of a large stockpot, then cover with 4 quarts of water and stir in the seafood seasoning (see Cook's Note). Halve the lemons and squeeze the juice into the pot, then add the rinds. Cover and bring to a boil, then cook over medium-high heat until the crab legs are warmed through, about 5 minutes. Remove the crab legs to a large serving bowl or platter.
  • Meanwhile, melt the butter in a small saucepan over medium-low heat. Cook until the butter foams and simmers, about 1 minute. Remove from the heat and let stand 5 minutes. Using a spoon, remove any milk solids from the surface of the butter, then slowly pour the melted butter into a small serving bowl, leaving any watery, white whey behind in the saucepan. Serve alongside the crab legs.

2 pounds frozen king crab legs
juice of one lemon
⅓ cup butter, melted

Steps:

  • Place a trivet in the multi-functional pressure cooker (such as Instant Pot®) and add water. Place crab legs on top of the trivet; you may need to let them thaw for a few minutes so they will fit.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 3 minutes. Allow 10 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Using tongs, transfer crab legs to a serving dish. Squeeze lemon juice on top and serve with melted butter.

2 cups apple cider vinegar
1 tablespoon whole coriander
1 tablespoon mustard seed
3 dried chiles
1 tablespoon whole black peppercorns
1 tablespoon salt
12 king crab legs
1 1/2 cups fresh orange juice
1/4 cup low-sodium soy sauce
1/4 cup teriyaki sauce
1 tablespoon rice vinegar
1 tablespoon tomato paste
1 chile pepper, stem and seeds removed and minced (use gloves when handling)
1 tablespoon fresh ginger root (from about a 1 1/2-inch piece), peeled and minced
1/4 cup honey
1 1/2 cups all-purpose flour
3/4 cup cornstarch
4 1/2 teaspoons baking powder
12 ounces cold seltzer
Salt and freshly ground black pepper
1 liter canola oil (approximately, as needed for deep-frying)

Steps:

  • Fill a pot (which will be large enough to submerge all the crab legs) with water, bring to a boil, and add vinegar, coriander, mustard seed, chiles, peppercorns and salt. Cook the crab legs until they turn bright pinkish orange, about 15 to 20 minutes. Remove and let cool until easy to handle.
  • While the crab is cooling, make the sauce. Combine orange juice, soy sauce, teriyaki sauce, rice vinegar, tomato paste, chile, and ginger root in a small saucepan over medium heat and let reduce by half. Remove from heat and whisk in honey.
  • Break crab meat from the shell.
  • To make tempura, mix flour, cornstarch, and baking powder in a bowl. Dredge the crab pieces in this dry mix, shaking any excess back into the bowl. Then add seltzer to the flour mixture in a stream while whisking constantly to make it into batter. Season with salt and pepper.
  • Heat canola oil to 375 degrees F in a deep fryer, or according to the manufacturer's instructions for similar foods. Dip each piece of crab in the batter, and add the to deep-fryer basket. Fry until golden brown. Drain on paper toweling and serve warm.

STEAMED ALASKA KING CRAB WITH CHARDONNAY-LEMON-HERB SPLASH

3 pounds Alaska King Crab legs, thawed or frozen
1 cup Chardonnay
1 cup water
1 lemon, cut into 8 slices
Chardonnay-Lemon-Herb Splash (recipe follows)
Chardonnay-Lemon-Herb Splash:
6 Tablespoons extra-virgin olive oil
2 Tablespoons fresh lemon juice
2 Tablespoons Chardonnay
2 teaspoons minced lemon zest
2 teaspoons minced fresh rosemary
1 Tablespoon minced fresh basil
1 Tablespoon minced parsley
1/8 teaspoon dried red pepper flakes
1 teaspoon minced garlic
1/4 teaspoon salt

Steps:

  • Make the Chardonnay-Lemon-Herb Splash ahead and keep refrigerated. Bring it to room temperature and stir it well before serving.
  • Rinse frozen Alaska Crab legs under cold running water to remove any ice glaze; pat dry with paper towels. Discard towels. Cut crab legs into smaller sections with a large knife or clean kitchen scissors, if desired.
  • In the bottom of a large steamer pot with an insert and a tight-fitting lid, combine the wine, water and lemon slices. Cover and bring to a boil over high heat. Place crab legs in steamer insert and place over boiling mixture. Cover pan tightly and cook for 6 to 8 minutes for frozen crab or 3 to 4 minutes for thawed crab, cooking just until crab is heated-through.
  • Serve crab drizzled with the Chardonnay-Lemon-Herb Splash; pass the remaining splash on the side.
  • Mix all the ingredients well.
  • Makes 3/4 cup

6 tablespoons butter
1 tablespoon seafood seasoning (such as Old Bay®), or to taste
1 teaspoon lemon juice
1 clove garlic, minced
¼ cup olive oil

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Place crab legs in a shallow baking pan.
  • Heat butter in a small saucepan over medium heat until melted, about 3 minutes. Whisk in seafood seasoning, lemon juice, garlic, and olive oil. Brush crab legs with butter mixture and pour any remaining mixture over crab legs.
  • Bake in the preheated oven until opaque and flaky, basting regularly with the butter mixture in the pan, 25 to 35 minutes.
