I have recently been trying to not waste food so I am using up items I find in my pantry and freezer. I used left over rib eye steaks which I had chopped into small bite size pieces and either canned or frozen vegetables. Very hearty and tasty. I served this with cornbread.

1 1/2 cups chopped left over steak
1 1/2 cups frozen mixed vegetables
1 (14 ounce) can whole potatoes, chopped
1 (14 ounce) can large butter beans
46 ounces beef broth
1 (14 ounce) can chopped tomatoes
1/4 cup minced onion

Steps:

  • Dump all ingredients into crock pot. Cook on low for 6-8 hours.

I found this recipe in Southern Living and made it the other night for dinner. I don't know why it is called a soup there is really no broth. This to me is more like a stick to your ribs stew. I used carne asada cubed. This was so good. Try it with a good garlic bread. Awesome!

Number Of Ingredients 13

1 (2 lb) package top round steaks, cubed
1/3 cup flour
3 tablespoons vegetable oil
4 cups water
5 baking potatoes, cubed
3 carrots, sliced
2 small onions, chopped
1 celery rib, chopped
1 cup frozen sweet peas
1 (16 ounce) can whole kernel corn, drained
1 (6 ounce) can tomato paste
2 tablespoons beef bouillon granules
1 -2 teaspoon pepper

Steps:

  • Toss together steak and flour.
  • Brown steak in hot oil in a large skillet over medium-high heat 5 to 6 minutes.
  • Stir together browned steak, 4 cups water, and remaining ingredients in a 5 quart slow cooker.
  • Cook, covered, on high 8 hours or until vegetables are tender.

Threw this together last weekend. My hubby loves all my soups. He said I should open a soup cafe. I have tons of soup recipes that I have dreamed up. Most are easy and freeze well. Hope you enjoy the ones I post.

2 sirloin steaks
1 can(s) beef broth
1 can(s) water
1 can(s) tomatoes (large can)
3 carrots, chopped
1 can(s) corn
1 can(s) mixed vegatables
1 can(s) potatoes
2 Tbsp beef bouillon
1 pkg dry onion soup mix
salt and pepper

Steps:

  • 1. Pour the beef broth and can of water in the crock pot. Add the can of tomatoes,carrots, beef bouillon and dried onion soup mix. Stir well.
  • 2. Salt and pepper the steaks and put them in the crock pot on high for about 4 hours. Take them out and cut them to the size pieces you want. Return the pieces to the crock pot.
  • 3. Add the all the veggies and let cook until you are ready to eat. I do not drain the corn or mixed veggies. It makes the soup tastier. I usually cut up the potatoes to bite size pieces.
  • 4. As most soups, this is even better the next day. Freezes well too.

This is an adaptation of a recipe from Betty Crocker. My family really loved this recipe, including my very picky son. We had ours with Italian bread for dipping.

1 lb boneless steak (I used a cheap braising steak)
1 lb small red potato, cut into 1/4 inch slices
1 cup chopped celery
1 cup of chopped carrot
1/2 cup chopped onion
2 garlic cloves, finely chopped
1 tablespoon beef bouillon granules
1/2 teaspoon pepper
4 (14 1/2 ounce) cans beef broth
1/2 cup water
1/2 cup flour

Steps:

  • Turn on crock pot, cut beef into bite size pieces.
  • Mix beef, potatoes, celery, carrots, onion, garlic, bouillon, pepper, and broth in the crock pot (all ingredients except water and flour).
  • Cover and cook on low setting for 8-9 hours.
  • Turn crock pot on high, mix flour and water.
  • Gradually stir in the flour mixture to the crock pot.
  • Cover and cook an additional 25 minutes or until thickened.
