1 lb ground turkey breast
1/3 cup quick-cooking oats
1/4 cup nonfat milk
1 egg, beaten
1/3 cup chili sauce
1 small onion, finely chopped
1 small red pepper, finely chopped
1 tablespoon Worcestershire sauce
salt and pepper
ketchup

Steps:

  • In small bowl combine oats and milk--let absorb about 10 minutes.
  • Combine absorbed oats and all ingredients--except for ketchup-- in a large bowl.
  • Mix with large fork.
  • Spray a 9x13 baking pan with cooking spray.
  • Shape meat mixture into loaf.
  • Brush with ketchup.
  • Bake at 350 for 50 minutes.
  • Enjoy.

After looking at many different turkey meatloaf recipes and not liking any one in particular, I decided to create my own! Add Dijon mustard to sauce for an added flavor.

1 pound lean ground turkey
1 cup oats
½ onion, chopped
3 tablespoons pear applesauce
3 tablespoons chili powder
1 egg, beaten
1 teaspoon minced garlic
1 teaspoon Italian seasoning
1 teaspoon salt
1 teaspoon ground black pepper
2 teaspoons olive oil
2 tablespoons chopped onion
¼ cup brown sugar
½ cup barbeque sauce (such as Sweet Baby Ray's®)
1 teaspoon chili powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix ground turkey, oats, 1/2 chopped onion, pear applesauce, 3 tablespoons chili powder, egg, garlic, Italian seasoning, salt, and black pepper together in a bowl; press into an 8-inch square baking dish.
  • Heat olive oil in a small saucepan over medium heat; cook and stir 2 tablespoons onion until softened and lightly browned, 5 to 10 minutes. Stir brown sugar, barbeque sauce, and 1 teaspoon chili powder into onion; cook over low heat until sauce is warm, about 5 minutes.
  • Bake meatloaf in the preheated oven, occasionally brushing sauce over the top, until cooked through, about 50 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

2 pounds ground turkey (preferably dark meat only)
2 eggs
3 ounces tomato paste (1/2 of 1 small can, reserving rest for the sauce)
1 teaspoon salt
1/8 to 1/4 teaspoon cayenne pepper
1/2 cup plain bread crumbs
1 small onion, finely chopped
2 cloves garlic, pressed
3 ounces tomato paste (from reserved 1/2 can)
1 small onion, roughly chopped
1 clove garlic, peeled
1 small red pepper, seeded, cored, and roughly chopped
1 cup water
1/2 teaspoon salt
15 grinds black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, mix together all the ingredients for the meatloaf and work together completely by hand until all ingredients are evenly distributed and the mixture is uniform. Place meat mixture into a 9 by 13-inch baking dish and shape into a loaf about 11 inches long and 4 inches wide. It is important to form it like this so that it cooks evenly throughout. The loaf should be in the middle of the pan with room on both sides for the sauce to pool.
  • Place all ingredients in a blender or food processor and puree until smooth. Cover the meatloaf with the sauce and allow excess sauce to pool around the meatloaf. Cover pan with aluminum foil but avoid contact with meat loaf by leaving at least a couple inches of space between the top of the meatloaf and the foil. Bake for 45 minutes, then uncover and bake 45 minutes longer. Let rest for 15 minutes before cutting and serving.

2 lbs ground turkey
8 slices bacon
1 egg
1/2 medium green pepper
1/2 medium sweet pepper (Red, Yellow, Or orange)
1/2 medium onion
1 large carrot
1/2 cup A.1. Original Sauce
1 cup breadcrumbs (add gradually as needed, you may need less depending on consistency)
3 teaspoons onion powder
3 teaspoons garlic powder
1 1/2 teaspoons poultry seasoning
2 teaspoons salt
2 teaspoons pepper
2 teaspoons paprika
1/2 cup A.1. Original Sauce
1 spray cooking spray

Steps:

  • Chop onion, sweet pepper, and carrot. I leave them fairly large but you can finely dice if you choose.
  • Cut bacon into cubes, about the same size as your cut vegetables.
  • In large bowl,.
  • Add meat, bacon, vegetables, egg, spices, and 1/2 cup A1 sauce. Mix these ingredients together then add breadcrumbs until meatloaf will hold together when shaped.
  • Spray large loaf pan (can use 9x13 if you don't have a loaf pan). Form meatloaf and cover. Cook covered 45 minutes at 350*.
  • Take cover off meatloaf, drain excess juice (lots of juice will be made from bacon and vegetables). Cook uncovered an additional 30 minutes.
  • Brush remaining A.1. on meatloaf and finish cooking last 15 minutes. Allow to sit for 10 minutes after removing from the oven before cooking so juices can set.
  • Cut and serve.
