2 tablespoons canola oil, divided
3 tablespoons garlic, chopped
2 sweet onions, like Vidalia, chopped
2 cups mushrooms, thinly sliced
½ tablespoon kosher salt
½ tablespoon freshly ground black pepper
2 lb flank steak
4 oz fresh baby spinach, 1 package
9 slices provolone cheese

Steps:

  • Preheat oven to 350°F (175°C).
  • Heat one tablespoon of the oil in a pan over medium-high heat. Combine the garlic, onions, mushrooms, salt, and pepper in the pan and cook until almost all of the moisture has evaporated and the onions are caramelizing, 15-20 minutes. Remove from heat and set aside.
  • Lay the flank steak on a cutting board. Add salt and pepper on both sides, to taste.
  • Spoon the mushroom and onion mixture on top, spreading it evenly across the steak. Sprinkle the spinach on top, followed by the slices of provolone. Press down lightly to compress the spinach.
  • Starting at the bottom of the flank steak, roll it up tightly, making sure the grain of the meat is running horizontally. Use six toothpicks to secure the steak roll. Slice the steak roll into six equal rolls.
  • Heat the remaining oil in a pan over high heat. Sear the steak rolls on one side for one to two minutes, then flip. Sear the second side for about one minute, then bake for 10-15 minutes, until medium rare.
  • Remove the toothpicks, then serve!
  • Enjoy!

2 eggs
2 tablespoons milk
2 tablespoons olive oil
1 small red onion, thinly sliced
1 small red bell pepper, thinly sliced
1 small green bell pepper, thinly sliced
1 pound roast beef, thinly sliced
16 ounces pepper jack cheese, shredded
8 egg roll skins

Steps:

  • Preheat oil to 350 degrees F in medium saucepan. Fill with enough oil that egg rolls will not rest on the bottom of pan. Mix egg and milk together, in a small bowl, for egg wash.
  • In medium saute pan over medium heat add olive oil, onion, and peppers. Sweat vegetables until slightly softened, about 2 minutes. Add roast beef and saute until onions are translucent, about 5 minutes more. Add cheese and mix thoroughly, until cheese begins to melt. Remove from heat, strain in a fine mesh sieve to remove excess moisture, and let cool.
  • Divide cooled mixture into 8 equal parts. Place mixture in center of each egg roll skin. Fold in side corners and roll, sealing edges with egg wash. Submerge egg rolls in oil and fry, making sure the rolls do not touch the sides or the bottom of the pan. Fry in batches, to avoid over-crowding. until golden brown. Remove egg rolls to paper towels to blot excess oil. Cut egg rolls on bias, place on a serving platter and serve hot

6 slices American cheese
1 green bell pepper, chopped

  • Cook and stir half of the shaved steak in a large skillet over medium heat until browned, 3 to 5 minutes. Transfer to a plate. Repeat with remaining steak. Drain juices from the steak; cut into small pieces.

One 8-ounce boneless rib eye
1 teaspoon ground black pepper
1 1/4 teaspoons kosher salt
2 tablespoons olive oil
1 cup panko breadcrumbs
1 teaspoon black sesame seeds
1/2 cup mayonnaise
2 tablespoons sriracha
6 to 8 square 10-inch soy sushi wrappers
1 avocado, sliced
1 yellow bell pepper, julienned or very thinly sliced

Steps:

  • Preheat a cast-iron skillet over medium-high heat.
  • Sprinkle the steak with pepper and 1 teaspoon salt. Add the oil to the skillet, then the steak, and cook to medium or until the internal temperature is 135 to 140 degrees F on an instant-read thermometer, about 5 minutes per side. Transfer the steak to a cutting board and let rest for about 7 minutes.
  • Meanwhile, add the panko, sesame seeds and remaining 1/4 teaspoon salt to a small skillet over medium heat. Cook, stirring frequently, until the panko is golden brown. Transfer to a bowl and set aside to cool. Slice the steak into thin strips.
  • Add mayonnaise and sriracha to a medium squeeze bottle and shake until combined (see Cook's Note).
  • Place a soy wrapper on a clean workspace in front of you. On the edge of the wrapper closest to you, squeeze a line of spicy mayo. Lay down 2 avocado slices, lengthwise, touching each other. Stack a few pepper slices so that the entire edge is covered in a layer of peppers. Squeeze a line of the spicy mayonnaise on the peppers, then sprinkle about 2 tablespoons of the panko mixture over them. Add a few slices of steak on top of the panko. Carefully roll the whole mixture away from you, creating a thin tube. Add another thin line of mayonnaise to the outer edge of the wrapper to help you seal the roll. Set the tube aside and repeat with the remaining wrappers and ingredients.
  • Cut each into about 1 1/2-inch slices or rolls. Place the rolls on a serving plate.

These sandwiches are best made by grilling the steak outside, but you can still make this recipe if you don't have an outdoor grill. Just cook the steak in a ripping-hot cast-iron pan (turn on your exhaust fan and open your windows!). Look for Portuguese rolls at your local grocery store (they're usually near the kaiser rolls), and if you can't find them, a soft bread roll like a ciabatta roll or other flour-dusted roll will work well. It's hard to go a day in Mozambique without eating something that's touched with piri piri sauce (sometimes written as peri peri). The sauce, made with chiles, citrus, and oil, is Portuguese in origin, but peri is actually the Swahili word for "chile" and refers to a specific type of chile pepper that is said to have been first cultivated in Africa.

1 cup Piri Piri Sauce, recipe follows
4 tablespoons unsalted butter, melted
4 garlic cloves, minced

4 Portuguese rolls, halved horizontally
10 red Fresno chiles, stemmed, seeded, and coarsely chopped
2 garlic cloves, minced
One 2-inch knob ginger, peeled and cut into coins

Steps:

  • Place the steak and 1/2 cup of the Piri Piri Sauce in a large resealable plastic bag. Using your hands, rub the sauce all over the steak and then seal the bag. Allow the steak to marinate for as little as 15 minutes at room temperature or put it in the refrigerator and let it marinate for up to 24 hours.
  • When you're ready to grill the steak, prepare a cast-iron pan, grill pan, or outdoor grill (charcoal or gas, whatever you've got) for medium heat. remove the steak from the marinade (let any excess drip back in the bag and then discard the bag) and place it on the grill. Grill the steak, turning it every so often, until charred in spots and cooked to your liking (about 3 minutes per side for medium-rare). Transfer the steak to a cutting board and allow it to rest for 10 minutes. Keep your grill on for your rolls.
  • While the steak is resting, mix the melted butter, garlic, and salt together in a small bowl. Spoon the garlic butter over the cut sides of the rolls and grill them on their cut sides until golden brown, about 1 minute. Transfer the rolls to a serving platter, cut-sides up.
  • Thinly slice the rested steak and divide it among the bottom halves of the rolls. Drizzle each portion with 2 tablespoons of the Piri Piri Sauce (use up the remaining 1/2 cup) as well as some leftover butter, if you have any. Close the sandwiches with the top halves of the rolls. Serve immediately.
  • In the jar of a blender, combine the chiles, garlic, ginger, lime juice, oil, sugar, and salt and puree until smooth. Season to taste with more salt or sugar if you'd like. Transfer to a jar and store, covered, in the refrigerator for up to 2 weeks.

1/4 cup sliced onion
1 teaspoon salt
1 egg

Steps:

  • In a frying pan, cook the steak-umm and onion in two tablesspoons of vegetable oil.

  • Marinate steaks with A1 Steak Sauce, vinegar and salt for at least 15 minutes.
  • While steak is marinating, combine carrots, cucumbers, vinegar, salt and sugar in a medium bowl to make a slaw.
  • Once steak is marinated, cook on high heat for about 2 to 3 minutes on each side.
  • After resting steaks, slice about 1/4 inch thick across short end to make at least 12 slices.
  • Place warm water in a 8" pie pan and dip 1 rice paper to completely wet both sides.
  • Lay rice paper flat on work surface and place two piece of steak about 2 inches from the top.
  • Follow with 2 slices of avocado on top of the steak.

1 onion, sliced

½ cup green bell pepper, sliced

⅛ teaspoon cayenne powder
½ teaspoon cumin

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Heat a large ovenproof skillet over medium heat and add the oil. Sauté the onion, garlic, and bell peppers until soft, about 5 minutes.
  • Combine the chili powder, paprika, cayenne, cumin, garlic powder, oregano, salt, and pepper in a dish, and use the mixture to season the flank steak with on both sides. Lay the steak flat on a cutting board with the grain running up and down. Place the sautéed onions and peppers in the middle of the steak, leaving an inch or so on both ends. Cover the onions and peppers with a layer of cheese.
  • Tightly roll up the meat from left to right; this will ensure that you cut against the grain when you slice the meat. Stick toothpicks through the sides of the roll to help it hold its shape and use a sharp knife to cut in between the toothpicks.
  • Return the skillet to high heat, add the steak, and sear until a nice crust has developed, about 3 minutes. Flip and repeat with the other side. Transfer the skillet to the oven and bake for 10 minutes, or until cooked to your preference.

1 1/2 lb beef flank steak, or round steak or london broil
1/2 c italian seasoned bread crumbs (i use progresso)
3 clove garlic, minced
2/3 c freshly grated pecorino romano cheese
1 c grated provolone cheese
2 Tbsp freshly chopped flat leaf parsley
2 Tbsp olive oil, extra virgin
hard boiled eggs, chopped (optional)

Steps:

  • 1. When you go to the grocer ask your butcher to cut the steaks to 1/4 inch thickness.
  • 2. Stir the first 5 ingredients in a medium bowl to blend. Stir in 2 tablespoons of the oil. Season mixture with salt and pepper and set aside.
  • 3. Pound the meat to a 1/8 of an inch thickness between 2 pieces of wax paper. You'll want to have a rectangular pieces of 7"x4". Cut the steak accordingly.
  • 4. If using chopped up hard broiled egg, add right before you roll the steaks.
  • 5. Sprinkle the bread crumb mixture evenly over the steak to cover the top evenly. Starting at 1 short end, roll up the steak as for a jelly roll to enclose the filling completely. Using butcher's twine, tie the steak roll to secure. Sprinkle the braciole with salt and pepper.
  • 6. In a skillet pan, heat 2 tablespoons of olive oil. Seer (brown) the rolls on all sides, this will take about 8-10 minutes. Put rolls into your sauce, and from this point on when stirring your sauce be gentle. Cook sauce with Braciole for at least 40-60 minutes for even cooking in the meat.
  • 7. Serve as a second course after pasta or along your pasta with sauce.

ALL STAKE ORANGE ROLLS:
1 oz yeast cake ( = 1 envelope yeast or 2 1/4 teaspoonful)
1 1/3 c warm water, (105 - 115 degrees f)
1/4 c white sugar
1/4 c melted solid vegetable shortening
1 large egg, room temperature
1 tsp salt
3 1/4 c all purpose flour

  • 2. MIX UP FILLING: 2 sticks unsalted, room temperature butter, 1 cup sugar and the Tbs grated orange peel. Beat Butter and sugar, blend well.Stir in orange peel; set aside.
  • 3. FOR ORANGE ROLLS:Combine shortening,egg, salt and flour. Slowly add yeast mixture. Pour on to a floured surface and kneed until dough holds well together and feels good in your hands, but not too stiff. Roll out to 3/16th inch thickness. Spread the filling over the dough. Roll up into a cylinder, as for a jelly roll. Cut into 1/2 inch thick slices. Set each slice in a paper muffin liner. Arrange on a backing sheet. Cover with a towel and let rise in a warm, draft free area for 30 minutes. Pre heat the oven to 400 degrees F and bake rolls until lightly browned on top, about 12 minutes.SERVE HOT. These are so crazy good!!! If you do not want to mess with making your own bread rolls you can buy your favorite at your local grocery store to use instead. The flavor in this sandwich is amazing... served with a side of homemade steak fries you cant go wrong :)

FOR BREAD
3 1/4 c flour
1 tsp sugar
1 tsp kosher salt
1 1/2 tsp active dry yeast
1 1/2 c warm water
1 Tbsp olive oil
FILLING
1/2 medium onion sliced
1 green bell pepper julienned
1 Tbsp olive oil
2 thin sliced blade steaks
1 tsp kosher salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp caraway seeds
1/4 tsp italian seasoning
1/4 tsp black pepper
1 Tbsp butter
mozzarella cheese, shredded or slices

Steps:

  • 1. Mix flour, salt, sugar and yeast... add water and olive oil, mix well and knead for about 5 minutes
  • 2. Let dough rise 1 hour (I use the microwave its warm and cozy in there)
  • 3. fold dough and knead after first rise, let rise another hour... turn out dough and separate into 4 sub size rolls.
  • 4. Bake at 450 for about 20 minutes or until golden brown, brush with melted butter immediately.
  • 5. saute onions, bell peppers in olive oil
  • 6. when translucent and slightly browned remove and set aside
  • 7. slice steak into strips across the grain... it works well if you roll up the meat to slice
  • 8. add seasonings to meat and brown in the same pan that was used for the onions and peppers until all of the liquid cooks down, toss with the butter, onion and pepper mixture and set aside
  • 9. slice ciabotta rolls, butter top and bottoms and use same pan again to toast the bread
  • 10. load bread with meat mixture
  • 11. top with mozzarella cheese
  • 12. broil in oven until the cheese starts to brown and gets all bubbly, melty and happy. put on sandwich top and ENJOY!!! :)

2 lbs round steaks, cut in 4 to 6 serving size pieces
1 (6 ounce) box Stove Top stuffing mix or 1 (6 ounce) box other seasoned stuffing mix
4 slices bacon, diced
1 (14 ounce) can low-fat cream of celery soup
1/4-1/2 cup water
1 medium onion, coarsely chopped
1 (14 -16 ounce) can sliced stewed tomatoes
1 celery rib, diced (optional)
1 bunch green onion, diced (optional)

Steps:

  • Pound each steak until thinned to about 1/4-inch. Saute bacon,( celery, and green onion if using); drain off fat. Combine sauteed bacon and vegetables with DRY stuffing mix (including seasoning with the mix, if any).
  • Stir in half the cream of celery soup and enough water to moisten.
  • Place sliced onions in the bottom of the slow cooker.
  • Spread stuffing mixture on each flattened steak; roll up and secure with toothpicks; place on top of onions.
  • Spoon remaining cream of celery soup over the rolls, then pour the tomatoes over all.
  • Cover and cook 8 to 10 hours on low, or 4 to 6 hours on high.

12 ounce flank (or hanger) steak
1 large onion, sliced
6 cloves garlic, chopped
1 tablespoon chopped ginger
1/2 cup low-sodium soy sauce
1/4 cup apple juice
2 tablespoons lemon juice
2 teaspoons dark (toasted) sesame oil
4 1/2 teaspoons sugar
1 large bunch scallions, finely chopped
2 red chiles, seeded and thinly sliced
3 tablespoons rice vinegar
2 tablespoons low-sodium soy sauce
1 teaspoons dark (toasted) sesame oil
Vegetable oil cooking spray
1 1/2 cups cooked brown rice
3 tablespoons soybean paste (preferably Ssämjang)
1 1/2 heads Bibb lettuce, leaves separated

Steps:

  • Place steak in a 6" x 9" baking dish. Combine marinade ingredients; pour over meat. Cover with plastic; refrigerate 1/2 to 2 hours. Combine salad ingredients in a bowl; chill until ready to serve. Remove meat from marinade; pat dry. Coat grill or broiler pan with cooking spray. Heat grill on high. Grill or broil steak 3 minutes on each side for medium-rare. Transfer to a platter and let rest 10 minutes. Remove onion from marinade. Coat a nonstick skillet with cooking spray. Cook onion over medium-high heat until tender, 5 minutes. Move to a bowl. Cut meat thinly. 2 large carrots, peeled and cut into 3x1/8-inch matchstick strips
½ daikon radish, peeled and cut into 3x1/8-inch matchstick strips
3 tablespoons low-sodium soy sauce
1 tablespoon white sugar
2 teaspoons minced garlic
1 pound flat iron steaks
2 tablespoons vegetable oil, or as needed
6 (8 1/2-inch) rice paper wrappers
6 large soft-leaf lettuce leaves (such as Bibb or Boston)
3 cups loosely packed fresh cilantro sprigs
¼ cup peanut butter
1 teaspoon Sriracha hot sauce

Steps:

  • Combine vinegar, water, 2 tablespoons sugar, fish sauce, and red pepper flakes in a glass, ceramic, or stainless steel bowl; stir until sugar is dissolved. Add carrots and daikon radish. Put a plate on top to weigh down vegetables and refrigerate for 4 hours or overnight.
  • Combine soy sauce, 1 tablespoon sugar, and garlic in a shallow baking dish; stir until sugar is dissolved. Add steak, pressing down until steak is covered in marinade, and refrigerate for 4 hours or overnight.
  • Heat a ridged grill pan over high heat; add oil. Remove steak from marinade and discard marinade. Grill steak until desired doneness is reached, 6 to 10 minutes per side. Transfer steak to a cutting board and cool. Slice across grain into 24 thin slices.
  • Drain carrot and daikon radishes, reserving 1/2 cup pickling liquid.
  • Fill a shallow bowl with warm water. Dip 1 rice paper sheet into water to soften, about 5 seconds. Transfer sheet to a work surface. Arrange 2 pieces of lettuce over the half of wrapper closest to you. Top each lettuce leaf half with 2 slices of steak. Add about 1/4 cup carrot and daikon pickles and a few cilantro sprigs. Starting with bottom edge, begin to roll up rice paper sheet tightly around filling. After 1 roll, fold in ends of rice paper like a burrito, then finish rolling. Repeat with remaining wrappers and filling. Diagonally cut rolls in half crosswise and arrange on a serving platter.
  • Whisk peanut butter, reserved pickling liquid, and sriracha hot sauce together in a bowl; serve on the side with rolls.

  • Heat oven to 450°F
  • Season steaks, place a few basil leaves on each and split the mozzarella between them.
  • Bring the sides of the steaks together to make an open parcel, securing the edges with a toothpick. If making up to a day ahead, cover and chill.
  • Heat a heavy-based roasting tin on a high heat, add the oil and brown the beef on all sides - this should take about 1 min in total and the meat will still be rare in the middle.
  • Add the peppers, their oil and the olives to the tin, pour over the vinegar, then roast for 2-3 mins for medium rare, longer for well done.

2 large bunches scallions, trimmed and halved crosswise
1 head broccoli, trimmed and sliced lengthwise into spears
2 1/2 tablespoons vegetable oil, plus more for the grill
3 tablespoons salted peanuts, chopped
1 teaspoon grated peeled fresh ginger
2 cloves garlic, finely grated
1 1/2 pounds thinly sliced beef for braciole (8 pieces)
Kosher salt and freshly ground pepper
1 bunch asparagus, trimmed
1/4 cup hoisin sauce
1 tablespoon low-sodium soy sauce

Steps:

  • Preheat a grill to medium high. Bring a medium saucepan of water to a boil; add the scallions and cook until wilted, about 45 seconds. Remove with tongs to a colander to cool, then pat dry. Add the broccoli to the boiling water and cook until just beginning to soften, about 3 minutes. Drain and transfer to a large bowl.
  • Heat 1/2 tablespoon vegetable oil in a small nonstick skillet over medium heat. Add the peanuts and half each of the ginger and garlic; cook, stirring, until toasted, 2 to 3 minutes.
  • Pound the beef until 1/8 inch thick. Lay 2 pieces next to each other, overlapping slightly; season with salt and pepper. Top with a quarter of the scallions, laying them crosswise. Roll up the meat around the scallions; secure with toothpicks. Repeat to make 3 more rolls.
  • Add the asparagus, any remaining scallions and the remaining 2 tablespoons vegetable oil to the broccoli; season with salt and pepper and toss. Mix the hoisin sauce, soy sauce and remaining ginger and garlic in a bowl.
  • Oil the grill grates. Brush the steak rolls with half the sauce. Cover and grill, turning and brushing with the remaining sauce halfway through, until charred, 7 to 8 minutes. Grill the vegetables until tender, 3 to 5 minutes. Halve the steak rolls, remove the toothpicks and serve with the vegetables. Top with the peanut mixture.

8 thin slices sirloin or flank steak (length and width according to personal preference)
Extra virgin olive oil
Salt and freshly ground black pepper
Fresh rosemary, chopped
1 red bell pepper, sliced into thin strips
1 green bell pepper, sliced into thin strips
1 medium zucchini, sliced into thin strips
1 medium yellow onion, halved and then thinly sliced
A few white button or cremini mushrooms, cut into thin strips
For the Rosemary Balsamic Glaze:
1 teaspoon extra virgin olive oil
1 large clove garlic, minced
1/4 cup dark balsamic vinegar
2 tablespoons dry red wine
2 teaspoons brown sugar
2 sprigs fresh rosemary
1/4 cup Progresso beef broth

Steps:

  • Rub each side of the steak slices with a little extra virgin olive oil. Sprinkle with salt, freshly ground black pepper and some chopped fresh rosemary. 2. Heat one tablespoon of extra virgin olive oil in a skillet over medium-high heat and cook the vegetables until crisp-tender, seasoning with salt and pepper. 3. Place a few of the vegetable strips vertically on one end of each steak cutlet so that once rolled up the end of the vegetables are sticking out of each end of the steak roll. Roll it up, and secure it with a toothpick. Repeat for each steak roll. 4. For the rosemary balsamic glaze: Heat the olive oil in a small saucepan over medium-high heat. Add the garlic and cook for one minute, until fragrant. Add the balsamic vinegar, red wine, brown sugar and the rosemary sprigs and bring to a rapid boil. Reduce the heat and simmer uncovered for 5 minutes. Add the broth, return to a boil, reduce the heat to low and simmer for another 15 minutes. Discard the rosemary sprigs. 5. Prepare the grill and grill on each side for about 2 minutes or according to desired doneness. Do the same if cooking them in a skillet, frying over medium-high heat until done. Serve immediately drizzled with the rosemary balsamic glaze.
