1/4 Cups Olive Oil
2 Tablespoons Balsamic Vinegar
2 Tablespoons Blueberry Preserves
1 Tablespoon Stone Ground Mustard
Salt/Pepper - to taste
16 ounces Baby Spinach
6 ounces Blueberries
1 Cup Pecan Halves
1/4 Cup Sunflower Seeds
1/2 Cup Blue Cheese Crumbles

Steps:

  • Mix olive oil, balsamic vinegar, blueberry preserves, mustard, salt and pepper. Whisk until fully combined and emulsified.
  • Mix spinach, blueberries, pecans, sunflower seeds and blue cheese. Toss with vinaigrette until evenly coated.

6 cups fresh spinach, rinsed and dried
½ cup dried cranberries
½ cup walnut halves
1 tomato, sliced
1 pound top round steak, thinly sliced
1 pinch salt
1 pinch ground black pepper

Steps:

  • Arrange spinach on a large plate. Sprinkle with cranberries and walnuts, and arrange tomato slices on top. Set aside.
  • In a non-stick skillet (or a regular skillet coated with non-stick spray) cook steak over medium heat until no pink remains and steak is thoroughly cooked.
  • Arrange cooked steak over salad. Sprinkle salt and pepper on top, and drizzle with your favorite dressing. Note: I suggest using a light flavored dressing. Citrus dressings taste especially good on this salad!

1 pound(s) sirloin steak
1 teaspoon(s) brown sugar
1 tablespoon(s) balsamic vinegar
1 teaspoon(s) worcestershire sauce
1 clove(s) fresh grated garlic
2 tablespoon(s) grated onion or 1 tsp onion powder
5 tablespoon(s) evoo ( 2 reserved)
1 teaspoon(s) white wine vinegar
2 ounce(s) gorgonzola cheese
1/2 teaspoon(s) black pepper
3 cup(s) fresh spinach
3 tablespoon(s) pecans or pine nuts
1/2 cup(s) fresh blueberries
1/2 large onion slivered

Steps:

  • Place the steak in a bowl large enough to marinade it. In a small bowl add the brown sugar,balsamic,worcestershire,garlic and onion and massage it in with your hands on both sides of the steak. I marinade overnight but 1 hour will suffice.
  • In a medium bowl add the evoo,white wine vinegar,gorgonzola,garlic and onion and whisk until emulsified. and set aside.
  • Place the spinach, blueberries and pecans in a large salad bow . Pour over dressing and toss by hand until thoroughly mixed. Place in refrigerator.
  • In a separate saute pan add 2 TBS of olive oil and on a medium heat saute onions until caramelized and crispy. Grill your steak until desired doneness and allow to rest 5 minutes. Place salad mixture on a platter and place steak in the center. Garnish onions on top of steak.

1/2 cup sugar
1 cup chopped pecans
1 package (6 ounces) fresh baby spinach
2 cups sliced fresh strawberries
1 cup fresh blueberries
DRESSING:
1/4 cup balsamic vinegar
2/3 cup fresh strawberries
1 teaspoon sugar
3/4 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
2/3 cup olive oil

Steps:

  • In a small heavy skillet over medium-low heat, cook sugar until it begins to melt. Gently drag melted sugar to the center of pan so sugar melts evenly. Cook, without stirring, until sugar is dark reddish brown, about 15 minutes., Remove from the heat; stir in pecans. Pour onto a foil-lined baking sheet; cool completely. Break pecans apart if necessary., In a salad bowl, combine the spinach, strawberries and blueberries. Place the first six dressing ingredients in a blender; cover and process until pureed. While processing, gradually add oil in a steady stream., Just before serving, drizzle salad with dressing; toss to coat. Top with sugared pecans.
