Steps:
- 1. Preheat oven to 475 degrees.
- 2. Purchase large Prawns/Shrimp like a nice size Tiger Prawn.
- 3. Clean and devein Prawns if they are not purchased that way.
- 4. Gather all ingredients.
- 5. Pour flour, lightly beaten egg whites, Panko Breadcrumbs and Olive Oil in 4 shallow bowls and add 1/2 tsp. salt to flour and 1 tsp. salt to breadcrumbs.
- 6. Dredge shrimp in flour, shaking off excess. I use a spoon to help cover shrimp with flour.
- 7. Dip shrimp in egg whites and let excess drip of.
- 8. Cover shrimp with breadcrumbs. Use spoon to help cover shrimp with the crumbs.
- 9. Press shrimp in oil on both sides. Add more oil as needed to coat all shrimp.
- 10. Set slightly apart in baking pan.
- 11. Bake shrimp until browned on bottom, about 8 minutes; then turn over and bake for an additional 8 minutes until golden brown and opaque but still moist-looking in center of thickest part.

- 13. Make Ahead Hint: Bread Shrimp early in day and chill uncovered in refrigerator for 3 to 4 hours (the coating dries out and the Shrimp gets crisper). I highly recommend doing this!
