2 large New York strip steaks (0r 4 small)
8 ounces shrimp, peeled and deveined
salt and pepper
olive oil
1-2 tablespoons cold butter
2 whole cloves of garlic
4 tablespoons softened butter
1 tablespoon garlic, pressed or minced
2 teaspoons chopped thyme (or rosemary, or tarragon)
1 tablespoon chopped flat leaf parsley
a big pinch of maldon sea salt + coarse black pepper

Steps:

  • MAKE THE BUTTER: Combine the butter, garlic, chopped parsley, and chopped thyme with a generous pinch of salt and pepper in a small bowl. Cover and refrigerate until you're ready to use it.
  • PREP THE STEAKS: Make sure to remove the steaks from the refrigerator at least 20 minutes before cooking. Pat down the steaks with a paper towel, brush with just a little bit of olive oil on both sides and generously season your steaks with salt and pepper on both sides, really rub it in and make sure it sticks.
  • COOK: Heat a large cast iron skillet over high heat. Add 1 tablespoon of butter along with roughly 1 tablespoon of olive oil and allow the oil to heat through. Add the steaks to the pan along with the two whole cloves of garlic and cook the steaks for roughly 3-7 minutes on each side depending on the thickness of the steak and your preference of doneness. Check the temperature using a meat thermometer and when it reaches your desired doneness, remove the steaks to a plate and let rest for 5-7 minutes.
  • SHRIMP: If you have a ton of grease leftover from the steak, discard most of it, leaving just 1 tablespoon to cook the shrimp in. While the steak is resting, add the remaining tablespoon of butter to the pan (if you didn't have much oil left) over medium heat and add the shrimp. Move them around and season them with salt and pepper. Cook just long enough for them to curl up into a 'c' shape, about 1 - 1½ minutes.
  • SERVE: when ready to serve, top the shrimp and steak with a generous dollop of the prepared garlic butter and serve warm with your favorite sides!

6 tablespoons unsalted butter, (divided)
4 cloves garlic, ((or 1 tablespoon minced garlic))
1 tablespoon fresh parsley, (chopped)
1 tablespoon olive oil
4 New York Steak strip steaks ((Porterhouse steaks))
Salt and pepper
8 ounces (250 g) shrimp (deveined, tails on or off)

Steps:

  • Mix together butter, garlic and fresh chopped parsley. Refrigerate until ready to use.
  • Heat a large grill over high heat. Lightly grease grill plates with oil. Pat steaks dry with paper towel. Brush lightly with oil and generously season with salt and pepper.
  • Grill steaks for 4-5 minutes each side until browned and cooked to desired doneness. Spread half of the butter all over of steaks. Transfer steaks to a warm plate and let rest for 5 minutes.
  • While steaks are resting, melt remaining butter. Season shrimp with salt and pepper.
  • Reduce heat to medium and grill your shrimp for 5-6 minutes, depending not the size and thickness of your shrimp. Flip each one halfway through cook time and continue cooking until they turn nice and pink in colour while white and opaque on the inside.
  • Toss remaining butter through shrimp and serve with steak!

4 (8-ounce) New York strip sirloin steaks
Steak seasoning
8 ounces clarified butter
12 raw shrimp, skewered (3 on each skewer)
16 ounces raw French fries
Salt
4 lemon wedges, for garnish

Steps:

  • Preheat a grill to high. Alternatively, preheat a broiler to high. Season the steaks liberally with the steak seasoning on both sides. Cook the steaks over high heat to order: about 2 minutes on each side for rare, 2 1/2 minutes on each side for medium-rare, 3 1/2 minutes on each side for medium, and 4 1/2 minutes on each side for medium well. Halfway through the cooking time on each side, turn each steak 45 degrees to make grill marks.
  • Add half the clarified butter to a large skillet and heat over high heat. Add the shrimp skewers and cook the shrimp on both sides until they are opaque throughout, about 1 to 2 minutes per side.
  • Fill a deep fryer with oil and heat it to 350 degrees F. Alternatively, heat oil in a large, heavy Dutch oven to 350 degrees F; do not fill pan more than halfway full with oil. Drop the fries into the fryer and cook until they are golden brown, about 5 minutes. Remove to a paper towel lined plate to drain and season the fries with salt.
  • To serve, place 1 steak on a plate, top the steak with skewered shrimp, and add some French fries. Garnish with a lemon wedge and serve with a small dish of clarified butter on the side. Serve immediately.

6 tbsp Unsalted butter ((salted, or add salt to taste; softened))
2 cloves Garlic ((minced))
1/2 tsp Fresh parsley ((chopped))
1/2 tbsp Fresh rosemary ((chopped))
1/2 tbsp Fresh thyme
4 6-oz Sirloin steaks ((about 1/2 to 1 inch thick))
1 tbsp Olive oil
1/2 tbsp Sea salt
1/2 tsp Black pepper
12 oz Medium shrimp ((fresh, or frozen and thawed, peeled and deveined))

Steps:

  • In a small bowl, mash together the butter, garlic rosemary, thyme and parsley. Store in the fridge until ready to use.
  • If possible, take the steaks out of the fridge 30 minutes before cooking, to let them come to room temperature.
  • Brush steaks on both sides with olive oil. Season both sides generously with salt and pepper, patting to help the seasonings stick.
  • Heat a cast iron grill pan over medium-high heat for 2-3 minutes, until very hot.
  • Add the steaks and cook for 4-5 minutes, until browned on the bottom. Flip and cook for 2-7 minutes, until done to your liking.* Rare: 120 degrees (49 degrees C), 1-2 minutes* Medium Rare: 130 degrees (54 degrees C), 2-4 minutes* Medium: 140 degrees (60 degrees C), 4-6 minutes* Medium Well: 150 degrees (66 degrees C), 6-8 minutes* Well Done: 160 degrees (71 degrees C), 8-10 minutes
  • Remove the steaks from the pan. Cover to let them rest and keep them warm.
  • Turn off heat. Wait for the pan to stop smoking, then lightly wipe down the pan if it has any pieces left.
  • With the heat off but while the pan is still hot, add 2 tablespoons of garlic butter in smaller chunks. (Reserve the rest of the garlic butter for the steaks later.) Move the butter pieces around as they melt, so that the melted butter coats the pan evenly.
  • Once butter melts, turn on heat to medium. Quickly add the shrimp in a single layer. Cook for 1-3 minutes per side, until opaque and golden.
  • Serve steaks with a pat (1 tablespoon) of garlic butter on top. Serve shrimp alongside the steaks, with garlic butter from the pan poured over them, and a squeeze of lemon, if desired.

Fajitas are a crowd favorite, so we created this recipe to feed a crowd. Tender chicken breasts, juicy skirt steak, briny shrimp and colorful peppers all get tossed in a chipotle-lime marinade to really amp up the flavor. Everything is prepared ahead of time then goes on a super-hot Blackstone® flat-top style griddle to sizzle away and cook in a matter of minutes. Your guests or family are then free to customize their own fajitas with an array of toppings.

1/2 cup lime juice, from about 6 limes
1/4 cup vegetable oil, plus more for the griddle
4 cloves garlic, grated
2 tablespoons chipotle chile powder
2 teaspoons dried oregano, preferably Mexican
1 teaspoon ground cumin
Kosher salt
1 1/2 pounds boneless skinless chicken breasts, each cut in half parallel to the cutting board then sliced crosswise into 1/4-inch-thick strips 1 skirt steak (about 1 1/4 pounds), sliced against the grain into 1/4-inch-thick strips
1 pound peeled and deveined shrimp, tails removed
2 white onions, thinly sliced
2 orange bell peppers, stemmed, seeded and slice
2 red bell peppers, stemmed, seeded and sliced
2 yellow bell peppers, stemmed, seeded and sliced
2 poblano peppers, stemmed, seeded and sliced
2 jalapeños, stemmed, seeded (optional) and sliced into rounds
20 fajita-size flour tortillas
Lime wedges, cilantro leaves, salsa, guacamole, sour cream and shredded cheese for serving

Steps:

  • Whisk together the lime juice, oil, garlic, chile powder, oregano, cumin and 3 tablespoons salt in a medium bowl. Combine all the onions and peppers in a large bowl. Put the chicken, steak and shrimp in 3 individual bowls and evenly divide the marinade between the vegetables and proteins (about 3 tablespoons each). Toss each to coat and set aside to marinate for 30 minutes.
  • Set all 4 burners to high on a 36-inch Blackstone® Griddle Cooking Station and preheat for 10 minutes.
  • Spread a tablespoon of oil on the griddle and add the onions and peppers in a single layer. Cook, tossing with a large metal spatula occasionally, until starting to soften and brown in spots, about 3 minutes. Push the pepper mixture to one half of the griddle then add the chicken in a single layer to the empty half of the griddle; cook until browned on one side, 2 to 3 minutes, then flip and push closer to the peppers. Add the steak in a single layer and cook until browned on one side and the chicken is cooked through, 2 to 3 minutes. Place the chicken on top of the peppers and flip the steak so it is closer to the peppers. Add the shrimp in a single layer and cook until browned on one side and the steak is cooked through, 2 to 3 minutes. Toss everything together and spread in a single layer. The shrimp will continue to cook through. Cook, tossing occasionally until the peppers are soft and everything is well combined, about 3 minutes. Transfer to a large serving platter.
  • Scrape the griddle clean with your spatula and cook the tortillas until hot and pliable, about 30 seconds per side.
  • Serve the fajitas immediately with lime wedges, cilantro leaves, salsa, guacamole, sour cream and shredded cheese.
