1 tablespoon olive oil
1 tablespoon butter
6 ounce mushrooms (sliced)
3 garlic cloves (minced)
1 teaspoon thyme (chopped)
1 teaspoon rosemary (chopped)
1 teaspoon oregano (chopped)
2 lean New York Steak strip steaks
salt and pepper
¼ cup softened butter
3 garlic cloves (minced)
1 teaspoon thyme (chopped)
1 teaspoon rosemary (chopped)
1 teaspoon oregano (chopped)

Steps:

  • In a large cast iron skillet over medium-high heat, add olive oil and butter, mushrooms, garlic, thyme, rosemary, and oregano. Cook for about 3 minutes or until tender. Remove and set aside on a plate.
  • Turn the skillet to high heat. Add the steaks. Cook on each side for 3 minutes or until outside is browned. Reduce heat to medium-high. Cook the steaks to the desired doneness. Mine took about 10 minutes flipping 3 times to get a medium well.
  • Right before the steaks are done, make the garlic butter compound. Mix the butter, garlic and fresh chopped herbs. Slather on top of steaks. Add the mushrooms back to the pan and heat through and let the butter melt into the steaks.

1 (12 ounce) sirloin steak
salt and freshly ground black pepper to taste
2 tablespoons oil, or as needed
⅓ cup shiitake mushrooms, stems discarded, caps thickly sliced
½ shallot, sliced
1 clove garlic, peeled
⅓ cup dry white wine
⅓ cup beef broth
¼ cup butter, cubed
2 tablespoons chopped fresh tarragon

Steps:

  • Season steak with salt and pepper on both sides.
  • Heat a heavy skillet over high heat until a drop of water immediately sizzles and evaporates when flicked onto the skillet's surface. Pour in oil. Add steak and cook until it is beginning to firm and is hot and slightly pink in the center, about 4 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
  • Remove steak from skillet and set aside. Tent with foil to keep warm. Discard oil remaining in the skillet.
  • Reduce heat to medium-low and cook mushrooms, shallot, and garlic, stirring frequently, until softened, about 5 minutes. Pour in white wine and cook until slightly reduced. Pour in beef broth. Reduce heat to low and stir in butter, 1 cube at a time, stirring well after each addition. Stir in tarragon. Season with salt and pepper. Serve mushroom sauce over the steak.

2 lbs top round steaks
1/2 cup all-purpose flour
salt and pepper
3 tablespoons olive oil
3 garlic cloves, minced
2 teaspoons oregano
1 teaspoon rosemary
1 teaspoon garlic salt
1/2 teaspoon onion powder
1/2 teaspoon thyme
1 cup water
1/2 cup red wine
1 cup mushroom, sliced

Steps:

  • Preheat frying pan to high heat or 420 if using an electric skillet.
  • Cut Round steak into 2 inch strips.
  • Roll the strips in flour, salt and pepper.
  • Add Olive oil to pan.
  • Brown Meat on both sides. Reduce heat to low or 220 on electic skillet, add herbs, 1/2°C Water and steam for about 20 mins, covered.
  • Add remaining water,wine and mushrooms and cook for an additional 20 minutes. Check occasionally adding more water if needed.
  • Remove meat from pan and add 1-2 T. Flour if necessary to thicken gravy.
  • Serve with rice.

2 plantains, sliced 3/4-inch thick
2 -3 teaspoons beef broth
2 teaspoons garlic oil, plus more for drizzling
fried pork skin (Chicharrones) (optional)
1 lb skirt steak
salt
creole sauce for drizzling on steak
sliced avocado, for serving

Steps:

  • Special equipment: wood pilon, for mashing plantains.
  • Heat vegetable oil until hot, and then fry the plantains for 10 to 15 minutes. Transfer to a pilon with the beef broth and garlic oil and mash together until combined. Mix in some chicharrones, if using. Mold the plantain mixture into an 8-ounce bowl, then plate the mofongo.
  • Cook the skirt steak on a flat skillet over high heat on one side. Sprinkle the top with salt, flip the steak and drizzle the top with garlic oil. Cook until desired doneness, then flip once more, spread with garlic oil and season with salt. Cut into pieces and drizzle with Creole sauce. Place into the plated mofongo and serve with avocado.
