No egg or milk in this because this is how they were made while "on the trail". I got this from a recipe book from a museum we visited recently. Made them and they were pretty good! A little thick, definitely not fluffy!

Number Of Ingredients 7

3 1/2 cups water
2 cups cornmeal
1 tablespoon sugar
1 1/2 teaspoons salt
1 teaspoon baking powder
1/4 cup soft butter
vegetable oil, for frying

Steps:

  • Boil water, add mix of cornmeal, baking powder, sugar, salt and baking powder slowly, stirring constantly until smooth.
  • Remove from heat, add butter and cool 10 minutes. Shape batter into 3X1 inch rolls.
  • Deep fry in hot oil (375 degrees). Fry only a few at a time until golden brown.
  • Drain well on paper towels.

When Bubba and I lived in Huntsville, Texas we would frequent the Stagecoach Inn supper. Bubba loved their Hush Puppies and asked me to try and get their recipe. So I became friends with the manager and after having her over for countless weekend catfish fries. I hinted that Hush Puppies would be really good with the fish and how much Bubba loved the Inn's recipe for them. Long story short the next weekend she came with the recipe.

Number Of Ingredients 7

2 cup(s) corn meal
1 teaspoon(s) baking powder
3 tablespoon(s) sugar
1/4 cup(s) butter
1 tablespoon(s) salt
1/2 cup(s) finely chopped jalapenos
3 1/2 cup(s) water

Steps:

  • Combine meal, baking powder, sugar, and salt. Put water in a medium sized saucepan and bring to a boil.
  • Add slowly to boiling water, stirring briskly.
  • As soon as mixture is smooth remove from heat.
  • Stir in butter and chopped jalapenos, cool.
  • Form into finger shaped rolls.
  • Fry in 2-inches hot fat, 375 degrees, until golden brown. Drain on absorbent paper or paper grocery bags.
