cooking spray
½ cup peanut butter
½ cup corn syrup
½ cup brown sugar
1 tablespoon butter
2 cups crispy rice cereal
1 cup peanuts
1 cup chocolate chips

Steps:

  • Prepare an 8-inch square baking dish with cooking spray.
  • Cook and stir peanut butter, corn syrup, brown sugar, and butter together in a large saucepan over medium-low heat until boiling. Fold crispy rice cereal and peanuts into the peanut butter mixture; press into the prepared baking dish. Sprinkle chocolate chips evenly over the top of the hot mixture. Let chocolate chips melt; spread chocolate over the top in an even layer.
  • Refrigerate until the mixture hardens, about 1 hour.

3/4 cup butter, softened
3/4 cup creamy peanut butter
3/4 cup sugar
3/4 cup packed brown sugar
2 large eggs
2 teaspoons water
1-1/2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
1-1/2 cups quick-cooking oats
3/4 teaspoon baking soda
1/2 teaspoon salt
GLAZE:
1-1/4 cups milk chocolate chips
1/2 cup butterscotch chips
1/2 cup creamy peanut butter

Steps:

  • In a large bowl, cream the butter, peanut butter and sugars until light and fluffy, about 4 minutes. Beat in the eggs, water and vanilla. Combine the flour, oats, baking soda and salt; gradually add to creamed mixture and mix well. , Spread into a greased 15x10x1-in. baking pan. Bake at 325° for 18-22 minutes or until lightly browned. , For glaze, in a microwave, melt chips and peanut butter; stir until smooth. Pour over warm bars; spread evenly. Cool completely on a wire rack before cutting.

My mom attended St. Mary's Catholic school growing up, and these were served on the lunch line. My mom would often whip up a batch for us to enjoy as I grew up, soooo good!

1/2 cup sugar
2 cups flour
1/2 cup brown sugar
1/4 teaspoon salt
1 teaspoon baking soda
1/4 cup peanut butter
1 cup butter (softened)
1 cup oatmeal
1 cup sugar
1/3 cup milk
5 tablespoons butter
1 cup chocolate chips

Steps:

  • Preheat oven to 350°F.
  • Mix all base ingredients together until well combined.
  • Press mixture into a long edged cookie pan and bake for 20 minutes.
  • While bars are cooling, mix sugar, milk, and butter together for the topping on the stove. Bring to a boil and boil for 5 minutes.
  • Remove from heat and add chocolate chips, stirring until smooth and thickened (about 2-3 minutes).
  • Spread over bars, let cool, then enjoy!
