8 medium yellow squash, shredded
1 onion, shredded
1 ½ tablespoons salt
1 cup all-purpose flour
½ cup cornmeal
1 egg, lightly beaten
1 cup shredded Cheddar cheese
ground black pepper to taste
1 tablespoon vegetable oil

Steps:

  • Place the squash and onion in a colander, sprinkle with salt, and drain about 30 minutes, until no longer moist.
  • In a bowl, mix the squash and onion, flour, cornmeal, egg, and cheese. Season with pepper.
  • Heat the oil in a skillet over medium heat. Drop squash mixture by heaping tablespoonfuls into the skillet, and cook 3 minutes on each side, or until golden brown.

Miniature, savory, yellow squash pancakes

1 pound yellow squash (sliced)
1/4 cup yellow onions (chopped)
1/4 red peppers (chopped (yellow, orange, or green peppers, optional))
1 egg (large)
1/4 cup flour (unbleached, all-purpose)
1/4 cup yellow cornmeal
1 teaspoon sugar (granulated)
1 teaspoon baking powder
1/2 teaspoon salt (table or sea salt)
Freshly ground pepper
A sprinkle of fresh thyme ((optional))
2-3 tablespoons vegetable oil (for the skillet)

Steps:

  • Finely chop yellow squash and place into a microwave-safe glass bowl along with onions and peppers.
  • Microwave on HIGH for 9-10 minutes or until squash is thoroughly cooked and soft. Drain. Mash. Drain again. (I place cooked veggie mixture in a sieve and press on it with a big spoon.)
  • Add remaining ingredients to cooked squash and stir to combine.
  • Heat a large skillet on medium. Add oil and heat until it glistens. Drop batter by spoonfuls into your skillet without crowding. Flatten with the back of a spoon to make a patty.
  • Cook until golden brown on one side, then flip to fry the other side (similar to making pancakes). Serve immediately.

A great way to use that summer excess of zucchini or yellow squash. Everyone loves these fritters, even kids. In the summer we have these at least once a week. They go well as a side with almost anything.

2 cups seeded, grated summer squash
½ cup all-purpose baking mix (such as Bisquick®)
⅓ cup milk
1 egg
¼ cup grated Parmesan cheese
1 tablespoon butter, melted
salt and ground black pepper to taste
1 pinch garlic and herb seasoning, or more to taste
⅓ cup oil for frying, or as needed

Steps:

  • Mix grated squash, baking mix, milk, egg, Parmesan cheese, butter, salt, pepper, and garlic-herb seasoning together in a large bowl.
  • Heat oil in a large skillet over medium heat. Drop tablespoonfuls of the batter into the hot oil about 1 inch apart. Cook for 1 1/2 to 2 minutes; flip and continue cooking until lightly browned on the second side. Drain on a paper towel-lined plate. Repeat with remaining batter, adding oil to the skillet as needed.

3/4 lb yellow squash
1 tsp baking powder
1 egg, beaten
1/2 tsp salt
1 medium onion\, grated
1/3 c flour
1/3 c cornmeal
oil for frying

Steps:

  • 1. Cook squash, covered, in boiling water 10 to 15 minutes or until tender. Drain. Mash enough squash to measure 1 cup; reserve any remaining squash for use in other recipes
  • 2. Combine 1 cup mashed squash and egg; stir well.
  • 3. Combine flour, cornmeal, baking powder and salt; Add squash mixture stir well.
  • 4. Heat oil to medium high. Drop by level tablespoons into hot oil. Cook until golden brown, turning once.
  • 5. Drain well on paper towels. Yields 2 dozen.
  • 6. You can use zucchini also. I use grated squash, not cooked, 3 tbsp flour, 3 tbsp cornmeal, 1 egg, about 1/2 onion, Pinch of salt, a dash or two pepper. Just wantged to give you the more, or less, original recipe with my former mother-in-law's modification last.

This is a fast and easy snack or lunch idea. These summer squash fritters are so delicious it's hard to believe how good they are for you. It only takes a few minutes to make, and they are so crispy they're addictive. This is a great way to use the abundance of squash at the end of the season. There are so many vitamins in this, but the kids will only know how good they are.

5 yellow squash, grated
3 tablespoons grated onion
3 tablespoons all-purpose flour
1 egg, beaten
⅛ teaspoon baking powder
⅛ teaspoon salt
2 tablespoons butter, or more as needed
¼ cup shredded Cheddar cheese, or to taste
¼ cup chopped onion, or to taste
¼ cup sour cream, or to taste

Steps:

  • Place grated squash in a colander and squeeze out all excess water; you should have about 1 cup grated squash. Transfer squash to a bowl. Add onion, flour, egg, baking powder, and salt and stir batter together.
  • Melt butter in a large skillet over medium-high heat. Drop batter into the hot pan and use the back of a large spoon to flatten fritters to 3 to 4 inches in diameter and to 1/4- to 1/8-inch thickness. Cook until edges are deep brown, about 1 minute. Flip over and cook 30 seconds more. Transfer fritters to a plate lined with a paper towel and sprinkle lightly with salt. Repeat with remaining batter, melting more butter in the pan as needed.
  • Serve warm topped with Cheddar cheese, onion, and sour cream.

This is a lovely twist on squash. It is a tasty dish to have with chicken, pork, or just about any type of meat.

5 -6 squash (yellow or green, or mix)
1 cup shredded cheddar cheese
1/2 chopped onion
1/4 cup flour
2 eggs
1 teaspoon salt
2 teaspoons oil

Steps:

  • Grate the squash with a cheese grater into mixing bowl.
  • Add the cheese, onion and egg.
  • Mix together and then add flour until it is almost a dry mix.
  • Heat oil in skillet and drop spoon size amounts of mixture into hot grease and take spoon and flatten them to make into shape of pancake.

As we grow our own squash, don't we always have a surplus and wonder how it can be used. Well, I found this recipe, tweaked it a bit and it is wonderful - crispy on the outside, moist on the inside and full of flavorful goodness. My husband loved these and what a great way to add vegetables to the menu!

oil (for frying)
2 eggs
1/2 cup milk
2 cups shredded pattypan squash
1/2 cup onion (preferably vidalia or some other sweet onion)
1 teaspoon vegetable oil
1 cup flour
1 teaspoon baking powder
1 teaspoon white pepper (or to taste)

Steps:

  • Before shredding, cut out the stem of the squash, but there's no need to peel it. Remove any large seeds, especially if using a large squash.
  • Preheat about 1/2 inch oil (I prefer olive oil) over medium-high heat in a deep skillet.
  • Place the squash and onions into a large bowl.
  • Beat the eggs, milk and oil into the squash/onion mixture. Then add the flour, baking powder, salt and pepper and mix all until combined.
  • Scoop batter using a 1/4 cup measure and drop batter into hot oil. Do not crowd.
  • Cook until brown, turn with a spatula and cook the other side until brown.
  • Drain on paper toweling.
  • Add oil to pan when necessary.
  • Keep warm until served.
  • Serve with horseradish sauce, ketchup or whatever you like. They are great as is!
