Spinach Salad with Ham and Egg image

With the addition of ham and hard-cooked eggs, this simple spinach salad becomes a hearty and delicious full meal.

6 tablespoons olive oil
1 onion, thinly sliced
2 tablespoons white-wine vinegar
2 teaspoons grainy mustard
Coarse salt and ground pepper
2 bunches spinach (about 1 pound), trimmed and cut into bite-size pieces
8 ounces ham, sliced 1/4 inch thick, and cut into small sticks
6 radishes, thinly sliced
6 hard-cooked eggs, quartered

Steps:

  • In a medium-size saucepan, heat olive oil over medium-high. Add onion. Remove from heat, and stir in vinegar, mustard, 3/4 teaspoon salt, and 1/4 teaspoon pepper.
  • In a large bowl, combine spinach, ham, and radishes. Drizzle onion mixture over salad, and toss to coat evenly. Garnish with hard-cooked eggs, and serve.

16 cups torn fresh spinach
1 teaspoon sugar
1 teaspoon pepper
1/4 teaspoon salt
6 hard-boiled large eggs, chopped
1-1/2 cups cubed fully cooked ham
1 medium red onion, sliced
1 envelope ranch salad dressing mix
1-1/2 cups mayonnaise
1 cup sour cream
2 cups shredded Swiss cheese
1/2 pound sliced bacon, cooked and crumbled

Steps:

  • Place two-thirds of the spinach in a 4-qt. salad bowl. Sprinkle with half of the sugar, pepper and salt. Top with eggs, ham and remaining spinach. Sprinkle with remaining sugar, pepper and salt. Arrange onion slices on top., In a large bowl, combine the dressing mix, mayonnaise and sour cream. Spread over onions. Sprinkle with cheese and bacon. Refrigerate until serving.

3 hard-boiled eggs, chopped
4 ounces cut up ham
1 small onion, thinly sliced
10 ounces frozen peas, thawed
3/4 cup mayonnaise
1/3 cup sour cream
1 1/2 cups cubed swiss cheese
5 slices bacon

Steps:

  • Layer, in order, in a large bowl: 1/2 of spinach, all of eggs& ham, remaining spinach, onions& peas.
  • Combine mayo and sour cream then spread over top, sealing to sides of bowl.
  • Sprinkle w/ cheese, cover and refrigerate up to 24 hours.
  • Before serving, cook& crumble bacon and sprinkle over salad.

2 tablespoons extra-virgin olive oil
1 teaspoon Dijon mustard
1/4 cup onion, minced
1/2 teaspoon ground black pepper
1 (9-10 ounce) package fresh spinach
2 cups lean ham, diced
1 red bell pepper, cored and sliced
2 hard-boiled eggs, sliced
1 tablespoon fresh parsley, chopped

Steps:

  • In a large bowl, combine lemon juice, olive oil, mustard, onion and black pepper. Add spinach and toss to combine. Divide spinach among 4 plates and arrange ham, bell pepper and eggs on top. Sprinkle with fresh parsley.

2 eggs
4 slices bacon
5 cups fresh spinach, rinsed and torn into bite-size pieces
½ cup sliced fresh mushrooms
1 cup sliced fresh strawberries
½ cup thinly sliced onion
1 kiwi, sliced
½ mandarin orange, peeled and segmented
¼ cup ketchup
¼ cup water
¼ cup olive oil
¼ cup brown sugar
2 tablespoons cider vinegar
½ teaspoon spicy brown mustard
1 dash garlic powder
salt and pepper to taste
1 cup seasoned croutons

Steps:

  • Place the eggs in a saucepan with enough cold water to cover. Bring to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 12 to 15 minutes. Remove from hot water and cool. Peel, chop, and set aside.
  • Cook the bacon in a skillet over medium high heat until crisp and evenly brown. Drain, crumble and set aside.
  • In a large bowl, toss together the eggs, bacon, spinach, mushrooms, strawberries, onion, kiwi, and orange.
  • In a separate bowl, mix the ketchup, water, olive oil, brown sugar, cider vinegar, and brown mustard. Season with garlic powder, salt, and pepper. Pour over the salad mixture, and top the salad with croutons.

1/2 cup vegetable oil
2 to 3 tablespoons cider or white wine vinegar
2 to 3 tablespoons sugar
1 tablespoon lemon juice

2 cups sliced fresh strawberries
1 cup chopped pecans, toasted

  • Cook potatoes and carrots in large pot of boiling salted water until almost tender, about 7 minutes. Add asparagus and peas; cook until vegetables are just tender, about 3 minutes longer. Drain. Rinse with cold water; drain. Transfer to large bowl. (Can be prepared 1 day ahead. Cover; chill.)
  • Add ham to vegetables. Add Shallot Vinaigrette to salad and toss to coat. Season to taste with salt and pepper.
  • Line bowl with spinach. Top with salad and serve.
